I have had banana-egg pancakes for the past 5 days. It was time to switch it up today, mainly because we had no eggs in the house. My parents are into the “Paleo” foods, so I wanted to make a breakfast cookie they would enjoy too. I also made it vegan. The cookie turned out delicious. I froze the extras for my long road trip back to Atlanta tonight.
Ingredients
1 1/2 Bananas
1 Tbsp Orange Zest
1 Tbsp Chia Seeds
1 Tbsp Chopped Walnuts
1 Packet Truvia
2 Tbsp Raw Unsweetened Coconut
1/4 Cup Ground Flax
1/4 Cup Coconut Flour
1/2 Tsp Vanilla
-Add All ingredients into a mixing bowl.
-Mix together until bananas are mashed and a cookie dough texture is formed. You can use an electric mixer or by hand.
-Preheat oven to 325 degrees.
-Spray a baking sheet with cooking spray.
-Place tbsp sized drops onto baking sheet. Press down with a spoon.
-Sprinkle raw coconut on top of cookies.
-Bake 14-16 minutes.

Per Cookie: 52 Calories, 3g Fat, 7g Carbs, 2g Protein, 3g Fiber, 5g Sugar
