Honey Mustard Chicken & Bacon Avocado Sandwiches
This is a sandwich recipe I’ve been eating on repeat lately. I am a sandwich LOVER! I am going to do a big sandwich spread for Superbowl this year, too. This one is a flavorful sandwich with marinated honey mustard chicken, crispy bacon, and a creamy avocado-jalapeño spread. It’s perfect for a quick lunch or dinner! You can even prep these sandwiches in advance, wrap them, and store them in the fridge for lunch. If you want this recipe to be even better, make it with my homemade sourdough bread!
A few weeks ago, I was heading to the Polar Express with the family. It was going to be a late one, and a little out in the middle of nowhere, so I made these sandwiches to pack for the hour drive. Oh gosh, did they come in handy after that train ride. We were all so hungry and ate them on the way home with some yummy jalapeño deviled eggs (that recipe coming soon!)
The extras were delicious the next day, too!
It’s freezing here in the 20s today, in South Carolina! I am so ready for garden season, fresh produce from the farmers market, and warm summer days by the pool. I’m always like that in January, after all the holiday celebrations. I need my walking weather back! I mean, if we got snow, I’d love the winter, but we just get ugly cold weather with yellow grass and no leaves.
I’m going to have to start walking around 5:30 am when it’s lighter in the mornings since my amazing walking toddler no longer wants to go on walks anymore. It’s tough to find that time, but I’ll have to go extra early now before he wakes up!
Ingredients for Honey Mustard Chicken Sandwiches
- Chicken Breast (4 large sliced in half)
- Dijon Mustard
- Honey
- Black Pepper
- Bacon
- Bread (I used gluten-free, or you can use homemade sourdough bread)
- Avocado
- Cream Cheese
- Sweet & Spicy Jalapeños
- Bacon
- Tomatoes
- Lettuce

How to Make Honey Mustard Chicken & Bacon Avocado Sandwiches
Marinate the Chicken:
Mix sliced chicken breast with Dijon mustard, honey, salt, and black pepper.
Cover and let marinate for at least 3 hours (overnight for best flavor).
Prepare the Bacon:
Preheat oven to 400°F.
Lay bacon strips on a baking sheet lined with tin foil.
Bake for 15-20 minutes until crispy. Drain on paper towels.
Cook the Chicken:
Preheat an air fryer to 425°F.
Lightly coat tin foil with avocado oil and place marinated chicken on top.
Bake for 16 minutes, flipping halfway, until chicken is cooked and slightly charred.
(Alternatively, grill the chicken if preferred.)

Prepare the Avocado Mix:
Smash the avocado in a bowl.
Stir in 1 tsp jalapeño juice and 1 tbsp sliced jalapeños for a spicy kick.
Toast the Bread:
Lightly toast the bread slices for added crunch.
Assemble the Sandwiches:
Spread cream cheese and avocado mix on each slice of bread.
Layer with the bacon, cooked chicken, tomatoes, and lettuce.

- 6 Slices Bacon
- 1/4 Cup Cream Cheese
- 1 Large Avocado
- 1 Tsp Sweet N Spicy Jalapeño Juice
- 1 Tbsp Chopped Jalapeños
- 1 Large Tomato
- 12 Slices Gluten-Free (or sourdough) Bread
