Happy Friday everyone! Well, we made it to November. I thought I’d make a cookie with Thanksgiving’s most popular fruit, cranberries. They were a hit in my house today. These would also be great cookies to have around the house for healthy snacks. I love guilt free recipes, and I think you’ll love this one too!
Bring 4 cups of water to a boil.
Add 4 cups of fresh cranberries and 1 cup of baking Truvia to the boiling water. Boil on high, until berries start to pop and foam.
Remove berries from boiling water. Let them cool for 30 minutes in a refrigerator.
In an electric mixer add :
1 extra large ripe banana
4 cups whole grain oats
2 tbsp ground flax seeds
1/2 tbsp ground cinnamon
1 tsp baking soda
1 tsp baking powder
1 tbsp vanilla extract
3 tbsp honey
1 packet Truvia
Preheat oven to 350 degrees.
The dough will look crumbly, but you should be able to form it together with your hands.
Squeeze the remaining juice from the cranberries back into the bowl.
Add cranberries to the dough. Lightly mix them in, using your hands.
Next add in 1/4 cup dark chocolate chips, using your hands.
Grease a baking sheet with cooking spray.
Scoop tablespoon sized balls onto the baking sheet.
Top each cookie with 1 tsp of honey before baking.
Bake for 13-15 minutes.
This batch will make 35-40 cookies.
