Happy Wednesday!
I have good news to share with you today, but first…a quick recipe! Sometimes after I finish a run, I want something filling, refreshing, and healthy. Cucumbers are my favorite post workout vegetable. They’re full of water and quickly rehydrate me. Watermelon is also great for a post workout hydration.
In the bowl above, I mixed together 1 cup of baked kale chips, 1 large cucumber, garlic croutons, and one tablespoon of Italian dressing. I usually add almonds and cranberries to the mix but I was out. It seems like a weird combination, but it’s delicious!

You should try it with massaged kale instead to prevent them from getting wilty!
