October 22nd. Can you believe it? Time, where you at!
I hope you all had a fun weekend. It was 34-degrees when I let the dogs outside this morning. I came right in, made coffee, and now we are waiting a bit before heading out on our morning walk. While I sip on my coffee and wait for the sun to rise, I thought it would be the perfect time to fit in my weekly recap post.
Call me crazy, but I love Mondays! Nothing better than a fresh start and clear mind going into the week. I usually spend Sunday night setting my expectations and writing down goals for the week. So when Monday morning hits, I’m super motivated to accomplish them.
Grab a pen and paper. Write down three things you’d like to accomplish this week!
I spent last Wednesday typing up my recap post and a couple other posts for upcoming campaigns. By the time 6 pm rolled around, I was ready to just get out and move my legs. I decided to join Kyle at the gym and power-walked three miles. Walking is my favorite way to move and reflect. I didn’t feel like cooking anything for dinner, so I had a vanilla and spinach protein shake. It had a frozen banana, almond milk, ice, pumpkin seed protein, Garden of Life vanilla protein, spinach, spirulina, ginger, and topped with almond butter, granola, and coconut.
Wednesday afternoon, I met up with my dad to play tennis. We played for a couple hours and then stopped at Earthfare for lunch. My salad had spinach, romaine, mandarins, pineapple, grapes, cantaloupe, sprouts, almonds, cranberries, and I used a balsamic vinegar and olive oil as a dressing. Lately, I’ve been all about adding fruits to my salads. I had a green juice with celery, ginger, kale, spinach, one apple (I always ask for only one apple to reduce sugar), lemon, and lime.
When I got home, I walked the dogs a mile, and then made an oat milk cappuccino and started planning out my Vlogmas schedule! Can you tell I’m excited? I love anything Christmas! I had my butternut squash, kale, & chicken chili for dinner.
I spent about an hour replying back to comments while wearing my facemask. The dogs love keeping me company!
After I shut the computer, I started reading my book. I’ve been dedicating my time before bed to reading. It’s easier on the mind, the eyes, and reading is just a better choice than my usual reality television. I’m trying to find that balance!
I was up bright and early on Thursday. I finished my blog work and then started working on my laundry. For breakfast, I had scrambled eggs, half a mango, and avocado.

I need some recommendations. I want to get new bedside tables with drawers. Do you think I should go with white? a mirror look? or something with color? I was looking at Pinterest, but can’t make up my mind.
After cleaning the house, I made a cappuccino, and tackled more blog work!
So many fall vibes this week! 🍂
For lunch, I had a salad with blueberries, avocado, mango, walnuts, raisins, apple slices, and ginger dressing. I also had a couple of pieces of avocado brown rice sushi to go with it.
Later in the evening, I made gluten-free Applegate chicken nuggets, kale tots, and another salad for dinner!
On Friday morning, I worked around the house, did some fun DIY projects, and then had a smoothie for breakfast before taking Kyle to his PRK surgery.
(smoothie: blackberries, vanilla protein, almond milk, spirulina, ginger, ice, banana)
While Kyle was getting his surgery, I had a few hours to spare. I decided to browse some shops at the mall just to keep moving, stopped at Starbucks for a cappuccino, and then headed into Whole Foods to grab some groceries.
When we got home, I helped Kyle get comfortable in a dark room with a podcast so he could rest his eyes. After that, I decided to clean out the fridge and organize it.
I’ve been living off salads and juices all weekend, and I’ve been feeling great. Sometimes, I’ll do a three-day(ONLY) reset when I feel sluggish, unmotivated or inflamed. My resets include tons of green juice that’s low in sugar, large salads with fruits and vegetables + balsamic/oil, and a simple protein shake at night. I’ve been doing a YouTube video so I’ll share more about that later. Today is my last day, and tomorrow, I can introduce oats, lean protein, roasted veggies, and other normal foods back into my diet.
On Friday night, I headed to food truck Friday in Rock Hill. It was a beautiful fall night, and the perfect excuse to get out of the house.
Leo tagged along with us! I wish I could bring Grumples to events like this, but he doesn’t do well. He gets bad anxiety and doesn’t enjoy large crowds. I think it’s important for me to introduce Leo to new situations as much as possible so he doesn’t get the same anxiety that Grumples has as he gets older. I want him to have great social skills, which he already has. I couldn’t believe how much he loved strangers. Little kids were running up to him and giving him hugs, and he just stood there and let them. I was so proud of him! Grumples really improved on our walks after training, which is great! Overall, I’m proud of my boys!
I did help my dad with his french fries but wanted a real meal when I got home. I had picked up a plate at the Whole Foods hot bar earlier that day that had my name all over it. I turned on a movie and ate my salad with paleo fajita chicken and rosemary sweet potatoes.
I was up bright and early on Saturday morning. I had to walk the dogs, have some coffee, and then take Kyle to his follow-up appointment at 8 am. After all of that, I headed to Target and Hobby Lobby to pick up a few things.
I was exhausted around noon, so I laid in bed for a bit with my pup, a movie, and a green juice!
I felt like doing something fall-ish later in the afternoon, so I headed to the Windy Hill Orchard for the Apple Harvest Festival.
It was raining when we got there, but we made the best of it. I loved this cute little sign made out of a pallet. I want to do something similar for Christmas!
The rain and cold weather really made it feel like Fall. I’m shocked at how cool it’s been down here.

Watching the donut machine was my favorite part. I could have stood there all day long!
The smells were torturous in the good kind of way.
🎃 🍩 Even though I couldn’t eat the donuts, the orchard is known for their donuts, so I had to share! My mom said they were the best donuts she’s ever had!
How about them apples?
I picked up some apple cider donuts and pumpkin-spiced donuts. They both had cinnamon sugar coatings. I felt bad Kyle couldn’t come, so I brought him back some treats, which he loved!
We had to stop at Black’s Peaches to get some photos in the sunflower field!
I had a lot of questions about my outfit on Instagram. I was surprised no one asked me about my rainy hair routine 😂

I bought my boots at Francesca’s six years ago, but the same ones are on Overstock for half the price! They are my favorite bits, which is why I’ve had them so long!

When I got home, I took the dogs for a mile walk, turned on Making a Murder 2, and had my giant salad bowl! The salad had a cup of sliced strawberries, one large cucumber, 1/2 cup blueberries, 1/2 mango, arugula, balsamic vinegar, and one tablespoon of almond oil.
I was up bright and early on Sunday morning. Becca and I headed to Pisgah National Forest to drive around the Blue Ridge Parkway and walk some of the trails. I packed my juices, sparkling water, protein shake, and a salad for dinner!
A beautiful day with gorgeous views!⛰ It was 45-degrees, so we bundled up!
I had my salad on the way home and then headed out on another dog walk before I started my nightly routine before bed.
Tomorrow, I’m making some yummy treats for the blog! I just noticed how bad I’ve been slacking on my recipes lately. I’ll change that soon! xo

I had no idea there were orchards anywhere near North or South Carolina, that is so cool! We had a couple in town where I grew up, but we didn’t really go as kids. It was, however, a really popular place for people to work in high school! I miss apple cider doughnuts; we tried making them ourselves (well, baked ones) a couple weeks ago, but they didn’t work out as the recipe entailed. Guess we’ve just got to try again! 😉
One goal I really want to accomplish this week is getting through my caffeine withdrawal headaches more easily. It’s been a week now, and they’re still going strong. Fingers crossed they hurry on up!!
This weekend was super busy for us– we adopted a 9 month old puppy, and while he’s a handful, he’s a pretty good boy: he doesn’t beg for food or get up in it (when we had dinner last night, you wouldn’t have known there was a dog in the house– it was crazy!), he’s house trained and crate trained, he’s really friendly and just wants to meet people and dogs (he hasn’t yet though), and this morning, he saw the train coming along our walking route and just sat down to watch it go by, super calmly. He’s still a crazy weirdo most of the time, but walking him a few miles a day has seemed to give him enough activity. My husband said yesterday that it just feels surreal to have a dog, because we weren’t sure when that would happen, but here we are 😛
But apple cider, by far! My first job was at an “apple barn” that sold easily 12-15 types of apples at one time in-season, and when it really started getting cold out, we relied heavily on the hot apple cider samples in tiny Styrofoam cups– there was no heat in the store, so we walked around in jackets and gloves until it closed for the season in December!

I had PRK done about a year ago, how is Kyle doing? That recovery is no joke, I tell people I had Lasik done just because more people know about it but PRK is way more intense. That first week was a painful recovery for me and then your vision veryyy slowly gets better and better each day. But overall it’s worth it, just a slower process. I’m sure he appreciates your help!
And for your bedside tables I think maybe something with a little color? I have one of the mirrored tables (I think I got it from Home Goods) and it’s not super well made and I feel like I’m constantly cleaning it. Just any little thing leaves a smudge or mark on it. So keep that in mind if you decide to go with the mirror look!

This week I would like to do a top to bottom cleaning of my apartment and pack up some summer clothes. As well as go through my closet and pack up anything that is too big after losing a few more pounds!
I worked night shifts all weekend so my fall activities will be during the week. After I finish my coffee I’m going to head out to the mountains to take some leaf photos and on Wednesday I’m heading to the pumpkin patch and to see the new Halloween movie!
Oh goodness, apple cider me thinks! I love pumpkin spice but only done right. Sometimes it tastes like dish soap to me! lol

One goal I’d like to accomplish this week is cleaning out my large storage closet. I had it nicely organized about a year ago, but sadly it turned into a catch all again! The most fall-like activity I did this weekend was making 3 different soups to keep in the freezer for the next couple weeks. The farm you went to looks super cute! I’m definitely pumpkin spice all the way. I also just started Making a Murderer 2, I’ve been bingeing it since it came out on Friday haha I live about 30 miles north of Manitowoc so it just makes it all the more interesting. Love all the insight they’ve been giving into Kathleen Zellner’s investigation, it is so cool to see her thought process.

Honestly, I just want to survive this week and have a good attitude doing it! It’s parent teacher conference week, which means two 12 hour days on top of a full week of teaching. It’s pretty brutal! I want to eat well so I stay energized and get my workouts in so I stay sane.
We walked around Pearl Street this weekend and it was wonderful! It was such a perfect fall day and we checked out a new coffee shop.

Loving your recap posts, as usual! Just curious what was the reason Kyle got PRK? I actually never heard of it until i read your post and went to look it up! I wanted to get lasik eventually but I have pretty bad dry eyes and have to frequently put drops in so I’m thinking I wont be a good candidate lol I hope Kyle makes a speedy recovery and isn’t in too much pain!

Kyle went to get a consultation for Lasik and I believe they said that PRK was a better fit for him. I don’t know why that is, but there are a lot of websites that lay out the differences pros/cons of lasik vs PRK. The consultations are always free, so you should look up a surgeon near you and get their opinion. I’m sure they’ll be able to help! 😊

I’m glad you asked that question. I almost explained in the blog but didn’t. I would rather eat the fruit and enjoy it that way. I don’t really care if the juices don’t taste good because I can drink it fast. If I’m going to have my apples or fruits on the salad, I also want to make sure I’m getting the fiber and antioxidants with those fruits. I have them add only one apple because I’ve seen them put four apples into one juice, which is a bit much. I’d rather have them sub the rest of those apples for vegetables I don’t necessarily enjoy eating by themselves. I also find that eating fruit keeps me super full and satisfied vs drinking it, which is most likely because of the high fiber content. Hope that makes sense 😊

They did, but I had a meal at home that I planned on eating and I didn’t want it to go to waste. I had a few of my dad’s fries that were amazing, but the overpriced Whole Foods meal I bought (before I planned on going to Food Truck Friday) was going to go to waste because I had my three-day reset planned out. But, yeah I guess that does take good willpower!

Oh Windy Hill Orchard looks like so much fun! We went to our local pumpkin patch over the weekend, but it was still in the 80s and sunny so it really didn’t feel like Fall. We got to shoot small pumpkins out of cannons tho! So that was exciting!
I WISH we could take our dogs out to fun places. Our boy dog, Henry would be perfectly fine, but our girl dog, Sonora, would be over-stimulated!! She loves people so much that when she’s surrounded, any and all training goes out the window. It’s like a fog comes over her and she can’t hear any commands! We’ve been working on the “Leave It” command which actually seems to work for the most part but I’m not brave enough to take her out to a crowded place just yet….Perhaps if we continue with some baby steps eventually she’ll be OK to take on big crowds. But not yet. haha

1. This week I am really hoping to accomplish a project for school. I cannot believe October is almost over with because that means final exams and final projects are due next month! Ahhhh I am NOT ready. But, next month is also Thanksgiving which I am very ready for. lol
2. I didn't do anything Fall this related this past weekend but this coming weekend I am going to my college homecoming game with my mom and sister. It's supposed to be cool and sunny – nothing like Fall football!

I have the same problem too, Whitney! For me, it’s not so much dirt as it is his dark hair (I have a huge rottweiler)! I try to keep him off the bed, but that pretty much doesn’t work because he just finds his way up there! I don’t have a solution, but at least you’re in good company!

Wow! That price of Apple Cider. I live in NY and got mad when I saw it for 4.99 a gallon. I guess that’s what happens when your whole state is like a giant apple orchard.

I didn’t do any fall activities this weekend because I was in Lake Placid, NY for a work conference and was snowing/sleeting there this weekend and 35 degrees (as a high)!
