This morning, I sat in front of my computer contemplating which recipe to post. I was sad about finishing off the last white chocolate macadamia nut muffin last night, and I was also dreaming of these tasty Sunday morning pancakes. I couldn’t possibly decide, so thank goodness for the Instagram polls. And as you probably already guessed, the pancakes won!
A couple of weekends ago, Kyle and I treated ourselves to delicious pancake stacks before the gym. Not only were these stacks delicious, but they were also healthy! They’re gluten free and dairy free.
When I was in high school, my mom used to make blueberry & lemon ricotta pancakes that were fluffed up with beaten egg whites. They were my favorite. I decided to use her recipe but spin it around without the ricotta, substitute the sugar and flour, and add in some special ingredients. Whipped Egg-White Pancakes
Ingredients
- 2 Large Extra Ripe Bananas (mashed)
- 1 Tablespoon Cream of Tartar
- 1 Tsp Ground Cinnamon
- 1/2 Tsp Cloves
- 1 Cup Egg Whites
- 1/2 Cup All-Purpose Gluten Free Flour
- 1 Tsp Vanilla
Instructions
- In an electric mixer, mix the egg whites and cream of tartar together on high speed for about three minutes.
- Slowly mix in the mashed banana, vanilla, flour, cloves and ground cinnamon. *if you need to add more flour, do it by the tablespoon.
- Heat a greased pan to medium-high.
- Add 1/3 cup-sized portions onto the pan. Add your choice of toppings (blueberries, chocolate chips, bananas)
- Cook about 1 minute on each side.
I love making pancakes for breakfast because they are so customizable. I am a blueberry-lemon girl! I filled my pancakes with lemon zest and giant blueberries. Kyle is all about peanut butter and chocolate chips.
And I don’t understand people who can eat pancakes without syrup. It’s the best part! I usually top my pancakes with scrambled eggs and mix it all together. It’s much sloppier after the photos.
We also love pancakes before a good workout because they provide lots of energy, extra protein, and keep you full all workout long. What I love about this recipe is that the pancakes are incredibly fluffy and airy inside, but the top layer is slightly crispy like a waffle.

I LOVE anything pumpkin! I like to find pumpkin pancakes on Pinterest or Google and put my own healthier spin on them. I love topping them with almond butter and syrup… speaking of which…
I also LOVE maple syrup!! Who doesn’t love that stuff?? It’s liquid gold. My family and I always make the reference to Buddy the Elf when we eat syrup. Haha!

1. My favorite pancake flavor is cinnamon with chocolate chips!
2. Because I usually make banana pancakes (one banana, two eggs, scoop of protein powder, splash of almond milk, a tablespoon or two of oats and a healthy amount of cinnamon), I find maple syrup to be too sweet, so I’ll sub it for some unsweetened applesauce instead!
PS, would love a good vanilla protein recommendation as I recently ran out and am hoping to try a new brand! 🙂
Yum! Cinnamon pancakes are great! Still trying to get used to chocolate in my pancakes. I LOVE chocolate, just not in my pancakes (or muffins.) However, go crazy when adding them to my cookies!

I’d have to try it! The recipe is meant for fluffy pancakes, but it would certainly work in a waffle maker!
I just made pumpkin chocolate chips this past weekend after running my Avengers 10k! I do love maple syrup, I love using it as a substitute for sugar when I make muffins or breads, but honey is my main obsession!

Holy YUM! I am a pancake addict. I love them in all shapes, sizes, and flavors! I’m also a Food Network addict and I always see them folding eggs whites into things to make them light and fluffy. That’s such a good idea for this! Since I love pancakes so much, it’s pretty much a necessity to have some healthy versions on hand since I want them all the time. This is perfect!
I think my favorite pancake flavor is one from this incredible place in Boulder called Snooze and it’s a blueberry coffee cake pancake. It’s INSANE. And definitely not healthy haha. But so worth it!

I love blueberry pancakes! But the most common pancakes in my house are oatmeal pancakes made with applesauce and bananas and spiced with some nutmeg and cinnamon.
Can’t eat pancakes without syrup! But I also cannot stand syrup on my eggs. I have to keep my eggs on a separate plate so no syrup gets on them. 😂
