Hey Guys!
FINALLY! A recap post. & it’s a long one.
I have a ton to fill you guys in on (if you haven’t already noticed from social media.) This post will be filled with eats, workouts, and all the details on our new four-legged friend…SAY WHAT? yup. I hope you can get through this post before it turns dark outside. It took me almost eight hours to go through all the photos, upload and organize! I’m hoping it only takes a few hours to write and remember it all! I’m apologizing for for the amount of dog photos. Here goes nothing…I landed in Charlotte at midnight last Friday. I was so tired, but I promised Kyle I’d ride to Tennessee with him to pick up his new puppy. I always love an adventure or anything that involves a road trip.
Before spending five hours in the car, I wanted to get out and exercise. I went for a three mile run on the greenway and then stopped at Chopt to pick up a salad for the drive. I also stopped at Fresh Market for some snacks. Kyle and I are snackers.
I ordered the Kebab Cobb (per usual) with falafel on top. I must be on a falafel kick because I also bought falafel chips to go with our supremely spicy hummus. That is my FAVE flavor right now and I can’t get enough. I like it on my eggs and in my salads. We drove about five hours and decided to stay at a hotel an hour away from our destination. The town we were going to was in the middle of nowhere with no hotels or gas stations close by. I love driving through Tennessee because it’s so beautiful. I used to make the drive all the time when my parents were living in Iowa. We woke up at 6:45 on Sunday morning so we could drive the last hour and pick up his new puppy.
My go-to hotel breakfast is always oatmeal! I added raisins, cinnamon and walnuts to a bowl of plain oatmeal.
I love early morning drives because the skies are always so beautiful. I always miss Iowa when I drive through the country. It makes me want to buy a country home and have coffee on the porch every morning while the sun comes up (we all can dream.)
Savannah from Love n’ Bones sent me some treats for Grumples and Leo! I brought Leo’s with me. She makes all-natural, homemade dog treats for your four-legged friends! Grumples LOVES his treats and they are great for his weight loss journey! Kyle and his new pup Leo! ♥
Don’t let that troublemakers face fool you. He’s a nut! Leo was so good in the car on the way home. It was a six hour drive back and he slept the entire time.
We stopped at Starbucks so I could grab a coffee and a snack. I love that Starbucks sells Siggis! I topped it with some creme brûlée almonds (soooooooo good.)
It felt so good to be home! I had an omelet, falafel chips and spicy hummus for dinner & yes, coffee too!I was so shocked at Grumples reaction to Leo. I thought he was going to get upset, growl or act out…but he loves him.
Leo made himself right at home. We couldn’t believe it. LEO SLEPT THROUGH THE NIGHT. That’s a dream puppy…
We headed out around 7am to take Grumples on a long walk around Charlotte. Leo had his first vet appointment on Monday morning and he was as healthy as an apple.
I had to throwback to 5 1/2 years ago when I brought Grumples home! I caught up on some work while having a bowl of oats! I love my oatmeal in the fall because it’s warm and filling.
Kyle and I headed to the gym together Monday afternoon. I did three miles on the treadmill and a circuit from the Fitness Challenge.I made my homemade sauce and a delicious pasta dish Monday night! I’ll blog the recipe this weekend. If you want to try out my sauce recipe, you can find it here! It’s to die for.
We went three miles on Tuesday morning at 6:45 am with Grumples! It is getting super chilly in the morning and I love it!
The pups spent the morning with me while I worked. I’ve been spending time at Kyles this week to help him with the puppy while he’s at work. It’s kind of fun being uptown! I love that I can work from home with them. I made a delicious apple pie Tuesday & you can find the recipe here! Not going to lie, I was so ready to escape the dogs on Tuesday night. Puppies are a lot of work and they are constantly getting into things and need bathroom breaks every 45 minutes.
I headed out for a seven mile run and it turned into a nine mile run! You can read more about my run here + an awesome salad recipe! Kyle and I took a late night walk with Grumples when I got back. I love the city at night. Wednesday morning breakfast: Oatmeal, chopped pecans, peanut butter and cinnamon!
My work buddies. I had a delicious salad on Wednesday afternoon! Here is the recipe 🙂 I headed out for a light three mile run after lunch and the fall weather felt amazing. Cinnamon vanilla protein shake: Vanilla Protein Powder, 1 cup ice, 1 cup unsweetened almond milk, 1 small banana, and 1 tsp cinnamon.
Late night with Grumps! This blue cargo jacket was in my Stitch Fix fix! 🙂 I met up with Becca for breakfast on Thursday morning at Flipside Cafe in Fort Mill. I had the Greek yogurt with honey, granola, fresh fruit, and a side of eggs. This place was super cute and the food was really good! I took the pups to my parents house so they could run around in the backyard before the rainy weekend. Lunch salad: kale, cucumber, sweet potato, blueberries, goat cheese, strawberries, pecans and a balsamic vinaigrette. Afternoon snack: apples, strawberries & peanut butter! My mom and I took Grumples on an evening walk and we sat out on the driveway with the pups. They love watching people walk by.
Leo had his first rainy day experience.
The dogs LOVED running around in the rain and getting all muddy. I’d be lying if I said I din’t have just as much fun.
Lunch: cucumber, blueberries, spinach, goat cheese, and a balsamic vinaigrette with a side of eggs! I was craving sushi for dinner so I had a spicy tuna roll from Harris Teeter!
Kyle and I headed to my parents house for dinner on Saturday. My mom made chicken and steak fajitas! They were so good.
We tried to take our first photo together, but we are going to need to practice. I promise we didn’t plan on matching, it just sort of happened.
My mom surprised me with a healthy pumpkin pie! You can find the recipe here🙂
Larabar sent me their seasonal flavors and I’m so excited! The gingerbread one is my fave!
Larabar Seasonal Flavors (gingerbread, snickerdoodle, pumpkin)The backyard tired them out (thank goodness.) We made a late night Target run to pick up some snacks. If you haven’t checked out their fall section…you’re missing out. It’s fall flavored heaven! We ended up getting the extra cheesy whole grain gold fish…they were so good! We are kids.
We went on our walk Sunday mooring with Grumples and then relaxed for a bit. Pre-run snack: rice cake + peanut butter + 1 date. I met up with my friend, Meighan, to do six miles at the Greenway! It was GORGEOUS out. We kept an easy 9:30-10min pace per mile.
We decided to make our FAVORITE meal…homemade chicken nuggets! We love these so much♥We also made french fries in the Air Fryer. I cannot believe how crunch they were! Making chicken wings in the air fryer is amazing too. It would be cool if restaurants started using the air fryer.
We spent the night watching the debates. What a train wreck. Breakfast Monday morning: Oats & peanut butter! Cinnamon vanilla protein shake: Vanilla Protein Powder, 1 cup ice, 1 cup unsweetened almond milk, 1 small banana, and 1 tsp cinnamon.

Kyle and I went on a late night walk Monday. It was fun watching all the people tailgate and get all crazy for the Panthers!Caesar salad and leftover chicken nuggets for dinner!
Grumples and I headed out for a long walk on Tuesday morning. I love seeing all the leaves change! Grumples got a new Ruffwear Front Range Harness for the fall!
Pre workout smoothie! BACK AWAY FROM MY RICE CAKE!
I met up with a friend to go on a walk and we ended up doing twelve miles! It was not planned, it just happened! It was so nice out and the perfect way to end the evening. We left at 4:30 and got back around 8:30!
We stopped at Coco & The Director for coffee after our walk. I had leftovers for dinner (because they’re the best) I had spanish rice with fajita chicken and chicken nuggets.
I also had peanut butter and popcorn for desert! Wednesday morning oats & coffee! Cute little Leo!! Someone hated the vacuum cleaner. I will be doing a closet clean out on Saturday! I’ll be posting some clothes up in my shop that will be for sale 🙂 It’s going to be super fun because it’ll basically be a live sale! I’ll have more details on that later! I just have way too many clothes in my closet and it’s time to make some space.

NEVER apologize for dog pictures! Too.stinking.cute. You may have the two most precious pups ever on your hands! Also- have you ever tried hard boiled egg whites with hummus? I feel like you would like it. I just hard boil a bunch of eggs and then take out the yolk and use them like scoops for the hummus with salt and pepper. It sounds kinda gross, but I promise it’s delicious.
– Favorite leftover: Anything sauuuccy (like Thai or Indian). I think the flavors just marinade over night and then add a little rice, a little naan- gimme!
– Favorite road trip stop: Our our big road trip cross country this past summer we stopped at a place called Faidley’s Seafood Market in Baltimore. They are known for having the best crab cakes, and they did not disappoint!
– This weekend: Family halloween party! My husband and I are being “a play on words”= I’m going to be Holy Guacamole and He’s the 2nd amendment (He’s actually wearing costume bear arms). Then I’m studying away for my nursing boards I take next week (insert scared face)
Sounds like life has been busy but so good for you! Can’t wait to see the clothes go up in the shop!

They are VERY precious and definitely a handful. & YES! I actually accidentally tried that in one of my salads and I absolutely love it. I’ll have to try it out your way! I actually thought about making a potato salad with hummus for an upcoming recipe.
Saucy leftovers are they best because they marinate!
I wish I would have tried that place out last time I was in Baltimore. I’ll take note next time I’m there!

I love when I have leftover chicken so it’s easy to make salads or casseroles from during the week, that’s my practical one, but my favorite leftovers to take nibbles of are tomato sauced baked pasta dishes, especially lasanga!
I think the best road trip stops are when you find a cute local place on the way, those rarely come up during the highway drive part, when you turn off of it and start making your way to your destination.
I work this weekend, so I’m going to get some pho for dinner Friday night to fortify myself.
PS- Leo and Grumples are adorable together, they look like a Christmas card.

Yes. Leftover chicken is the best and you can do so much with it. Lasagna is always better leftover!
I agree. I think they need to come up with an app (if they don’t already have one) that is connected to instagram/locations that give you suggestions on cute little stops on road trips! As you drive you can flip through local places provide by people instagram accounts!

Leo is SO CUTE! Obviously Kyle saw how great goldendoodles are and had to have one of his own 🙂
1. Oooh this is hard. Do baked goods count? 😛 I really love this dish my mom makes with orzo tomatoes and peas in a light sauce – and it heats up really well afterwards!
2. My boyfriend and I drive to Avalon, NJ almost every weekend of the summer and we almost ALWAYS stop at this tiny small town ice cream place called Carole’s on the way home to split a black & white milkshake!
3. An Oktoberfest party tomorrow night and Halloween costume crafting on Saturday!

Unfortunately Lasanga, my favorite road trip stops are of stuff that you hardly see any where else, and gas stations to buy jerky and smoke house almonds. My weekend plans are the gym, work, church and to catch up on some stuff around the house.
Your new puppy is so cute and grumbles looks like he’s enjoying him, I loved all the photos. I have yet to try a falafel I am going to.

Oh my god, I can’t get over how cute Leo is! Also, puppy parenting is not for the faint of heart. They are so cute when they sleep, but those sharp teeth are the worst! 🙂

Oh man, I think either lasagna or thai curry. They are almost better the next day, and I don’t know why!

I love stopping at coffee shops on road trips. Especially in small towns, the local cafe is usually a community hub and always such a friendly place. Plus I always need coffee on trips. <3
3. What are you weekend plans?
I have family visiting this weekend, which is going to be super fun. It's supposed to rain a bunch, but we will find fun stuff to do indoors.

You nailed it. I LOVE when he’s sleeping or off chewing his bone, but that is rare! He’s usually chewing my arm or toes instead. Puppy teeth are terrifying! I’ve been putting apple bitter spray on all the shoes, plants, and even my own arms. I try giving him his toys while he’s going for my arm, but he’s more interested in skin. I know he’s teething and he’ll grow out of it. Grumples did it too!
Lasagna is always better the next day!
Coffee is essential for road trips!
That sounds so fun! It’ll be nice having some one on one time with your family.

I totally understand where you are coming from. We definitely talked about it and discussed the option, but Kyle had his heart set on Leo as soon as he saw him and so he made the decision. Leo makes him very happy and that is all that matters.

Rice is actually one of my favorite leftovers! My blue apron a couple weeks ago had jasmine rice with zucchini in it. SO FLIPPIN GOOD.
That’s a hard one. It’s usually just a gas station! A friend and I took a 13 hr roadtrip to TX last December. Had Chik-fil-a before we left, then only stopped at gas stations when we needed to. Drove straight through the night!
Well I’m job hunting until I can find a new job! I got laid off so I really have no choice haha but I’m trying to stay positive about it and am crossing my fingers that I can find something soon! Also… I want to try a new spin class this week(end) sometime too.
P.s. I want to get a goldendoodle so bad! One day. Leo is so cute, and it looks like him and Grumps will be good friends! 🙂 Have a great weekend!

My favorite leftovers are definitely fajitas! I love Mexican food!
Fave road trip stop is Buckeyee’s. They are huge gas stations in Texas that have giftshops, home decor, outdoor gear, and everybody has to get the “beaver nuts” to snack on which is basically a puffed caramel corn tasting snack.
We are heading to the pumpkin patch today, decorating pumpkins and making chicken and dumplings tomorrow, and having a Halloween movie marathon this weekend!

My favorite leftover food is probably lasagna as others mentioned. I have a weird feeling about leftovers and have never been a fan of them as a kid but now that I’m an adult (and pay for my groceries haha) I’ve learned to love leftovers. Oh and also, taco leftovers! Definitely tacos

I love lasagna too! I love leftovers because I don’t have to do anything. When I cook, I love making HUGE batches so I can eat them all week long. That is why we made so many chicken nuggets.

Leo is adorable!!! I’m not sure if you’ve answered this in another post but what brand air fryer do you use? I’ve never used one before but the concept sounds pretty cool. Maybe I could actually get my sweet potato fries crispy for once….
1) My favorite leftover is taco meat for taco salads
2) Any rest stop that has a Cinnabon. I literally only crave it when I’m driving a long distance, otherwise I never even think of it.
3) My boyfriend and I are going for a hike at Hawk Mountain in PA to check out the fall foliage and be extra basic haha then we’re going to try out a new brewery that has a BBQ food truck and music on Saturday nights. Sunday will just be house cleaning and meal prep as usual 🙂

I love puppy pictures so much! My husband and I just got an Australian shepherd Beagle mix. She’s unique looking I couldn’t take enough pictures of her. I decided to start he own Instagram account ( @tacoboutcute ) so I didn’t bombard people on mine.
1. My favorite leftover food is brown rice. We make a huge batch every week and make tuna cakes with it almost every week.
2. My favorite road trip was to Nashville from where we live in Minneapolis this summer. It was about a 13 hour drive but it went so fast.
3. We like to do a donut run on Saturday morning to our favorite donut shop in uptown. I’m going to a wedding fair with my best friend who was my Maid of Honor this summer.
Your posts have inspired me so much over the last 3 years. I learned to become a happy healthier version of myself. I met my husband last summer after really getting my life where I knew I was happy and now we couldn’t be happier together. You’re amazing and I’m so happy I came across your blog so many years ago.

I was wondering what app do you use to keep track of your runs? I am in love with Grumples and Leo. My neighbor has a goldendoodle named Macadoodle, who I dog sit for every now and then. They are very smart dogs. Also, for your oatmeal do you use plain oatmeal and then just put whatever you want in it? Can’t wait for more blogs!

In-n-Out cheeseburger and fries. Sounds weird I know, but I’ve realized I love it even more leftover compared to when it’s fresh the first time!
-Favorite road trip stop?
Definitely coffee shops or chain restaurants that I don’t have in my area. When in Texas anything fast food chain that I don’t have available in California now.
-What are you weekend plans?
Unpacking and organizing still from when we moved at the beginning of the month. Many trips to Target for organizing pieces will be happening. I’ve been waiting for this recap as soon as I saw Leo on SnapChat! He is absolutely adorable! I’m so glad that Grumples likes him and puts up with crazy puppy antics! Kyle is lucky to have you to help with Leo when he as at work! I love the baby grumples pictures! Made me go back to baby pictures of my Moose! I can’t believe how fast they grow up!
As for your questions…
I love leftover chili, the flavors seem to get better and better! And leftover chicken because there are about 1,000 different things you can do with it!
My favorite road trip stop is always the first stop for coffee! And I love stopping at small town places that give you a feel for wherever you are!
I’m excited for this weekend because my best friend in flying into town! It may be crazy but I’m excited to get up super early (O’dark thirty) and grab her from the airport and have breakfast tomorrow! The rest of our weekend will be full of fall things like pumpkin coffee, dog walks to play in crunch leaves, and planning a halloween costume for Moose!

My favorite leftovers are chilli and jambalaya…it seems like they get more spicy the next day. And I hate leftover pasta! Too mushy for me!
I am a gas station junky! Twizzlers and jerky are my go-to road trip snacks but I love all the snacks at gas stations. Especially when they have multiple types of coffee and flavorings.
I am catching up on housework after a long week of running kids around to their events and games!
Question for you….That oatmeal looks yummy! Is it instant or do you make it home made? How do you make it? Mine never seems to turn out right.

My mom is obsessed with Tizzlers. That used to be our go-to as kids! They’re my favorite movie theater snack.
Weekends are perfect for catching up on housework!
I do instant! I buy the plan 100 calorie oatmeal packets and add water and microwave! 🙂

I loved this post! Leo and Grumples are so cute together! That one pic of you and Kyle kissing Leo is obvious he’s thrilled with his new family.
I get heat for buying instead of adopting my own dog, but at the time my kids were younger and the shelters often told us that most rescue dogs are not good around younger kids. We love our dog, which is really all that matters.
Fave leftovers? Anything really except salads. No soggy salads for me!
Fave road trip stop? Coffee of course!
Weekend plans? Our pumpkin patch plans are shot due to rain in the Bay Area so we will just catch up on work around the house. I know, so exciting. ?

I understand the frustration that people have. I get it! I do feel sad that dogs are in shelters, but at the same time, Leo is Kyle’s dog and 100% his decision. I love him regardless.
I can’t do soggy salads either! That is why I always get that dressing on the side!

Leo is a goldendoodle (like Grumples) I got Grumples from a farm in Iowa but the lady wasn’t a breeder. He’s the best! 🙂

Leo is so cute! I recently adopted a puppy too , and they are hard work! But oh so loving and my life is so much better with him in it!
My favorite leftover meal is definitely spaghetti. I feel like when it sits in the sauce for a while it just gets more tasty.
I love the road stops that are right on the side of the road, mainly just for bathroom breaks and coffee. I like that they don’t take me too far off course but gives me a chance to stretch my legs!
This weekend my friend from home is visiting me in Connecticut! I am so excited to take her to Vermont to see the beautiful fall colors.
