Can you believe its already Friday? I had no idea it was Friday until two o clock today! I was chatting with my friend, Anna, and she brought up her Friday night plans. I had to double check the calendar to make sure she was right. If it wasn’t for her, I’d be continuing my three day post vacation cleanse and waking up early tomorrow.
To celebrate the fact that it is Friday, I made some healthy low carb protein brownie bites to enjoy! I didn’t feel like going to the grocery store, per usually, so I used what was in my house. (which isn’t much).
Now that I fit my workout in, its time to sit back and enjoy the weekend. (with my brownies of course!) T.G.I.F!
You will need:
-2 Large Eggs
-2 Tbsp Flax Seeds Ground
-2 Packets Stevia
-1 Tsp Organic Vanilla Extract
-3 Servings Chocolate Whey Protein
-2 Large Zucchinis
-2 Tbsp Unsweetened Shredded Coconut
-Chop up the zucchini, add it to a blender with the eggs and Stevia.
-Scoop protein powder into the blender.
-Add flax.
-Blend on high.
-Add a tsp of organic vanilla extract.
-Chop up another zucchini and add it to the blender.
Mix on high.
-Preheat oven to 315 degrees.
-Grease an oven pan with organic cooing spray.
-Poor brownie batter into the pan
-Sprinkle the coconut over the top.
-Bake 20-23 minutes or until a toothpick comes out clean in the center
-Slice brownies into 42 pieces. (or however big you want them!)

20 Calories, 0.7 g Fat, 1 g Carbs, 0.5 g Fiber,0 .4 g Sugar, 2.1 g Protein
I add a little PB2 on top for an extra kick!

I have these in the oven now. Can’t wait! Nikki, maybe you could try making a chia or flax seed egg? Both can be mixed with 3 parts water to make a nice egg substitute. I have used both for baking! 🙂

Hi! I was wondering if your protein powder has to be whey or can it be something else? I eat vega protein powder with no whey, will it still work?
