I hope you all had a great day. I won’t have time to blog in the morning, so I figured I’d do a recap post tonight while watching David Muir. I have some important stuff to catch up with you on and kind of explain what I’ve been going through this week.
This morning, I woke up at 4:30 to make it to a spin class at 5 am. I’ve been trying to do all kinds of other workouts to make sure I don’t get injured while running. Plus, it’s good for the body to change up the workouts! When I got back, I took Grumples for a nice two mile walk while having coffee. The weather was weird this morning and I couldn’t decide whether it was hot or cold.
When I got back, I headed to my desk and started working.
I forgot that I told Rachel I’d go hiking with her, so when I got the text, I had to rush my work and meet up with her. I was excited to get out there though! My legs were already jello, so why not add more jello?
We killed the hike and didn’t have to stop once. I had fun trying out my new TomTom Multi-Sport GPS watch and I can’t wait to share that post with you tomorrow. I get to run with it in the morning and try it out again.
Oh, and the water bottle is from Ankit!
The only crappy thing is we totally got stuck in crappy traffic on the way back. When I got home, I stopped at the grocery store and picked up tons of healthy food. I also bought a giant gallon of water to sip on because I’m definitely drinking enough water. Keeping a gallon next to me always helps. I planned on making baked chicken, sweet potato fries and a tossed salad, but I can’t find the energy to do anything. As soon as I sat on the couch, I changed my mind. I had Amy’s organic tomato soup with Parmesan. I haven’t had an appetite at all today. I’ve had a banana, a granola bar, and this soup. I might be coming down with something becuase I never lose my appetite. At least the fridge is stocked for the week.
On Monday, my friend Becca and I headed to the lake for a mid-day glass of wine and an appetizer. It was so hot outside! We sat under the sun and watched all the birds and people on the lake. It was so peaceful and a much needed little afternoon getaway. We ordered veggies and pita chips with hummus.
There was a bird sitting two feet away from me. I couldn’t stop staring at him and he would do little head tilts that reminded me of my dog. His eyes were deep yellow and I just found him beautiful.
We walked around the water after our wine.
The lake was filled with all kinds of birds and animals.
We decided to make a delicious tofu vegetable stir fry with udon noodles for Bachelor Monday dinner! It was so easy to cook up and it was absolutley outstanding!
I chopped up one yellow onion, one cup of baby carrots, one red bell pepper, two green bell peppers, and two cups of broccoli.
I added it to my stir fry pan on high heat with a couple tablespoons of olive oil. I kept the veggies cooking and added a couple tablespoons of classic stir-fry sauce every two minutes. During the two minutes, I left the veggies covered.
Once the veggies were completely sautéed and perfectly flavored, I added the Udon noodles.
These cook up really fast.
While the udon noodles were cooking with the vegetables, I chopped up some tofu and cooked them in olive oil with a couple tablespoons of classic stir fry sauce.
I was shocked at how delicious the tofu was! Tofu is high protein, low carb, and a great source of iron.
This meal was prepared in under 25 minutes!
The Bachelor was boring, but I’m glad that Caila went home. I want him to be with Lauren so she isn’t the next Bachelorette, but I also think he has better chemistry with Jojo. The episode was extremely awkward too. At least the stir fry was good!
This is the sexy man I woke up to Tuesday morning…
I felt bad about ruining his morning routine of laying on the couch and doing nothing until he wants to get up for a walk. I was blessed with a dog that wants nothing to do with anyone in the morning, unless you’re rubbing his belly! I love him so much.
I had a quick cup of coffee with a banana and headed to his new training course! He did so well:)
He was exhausted after that two hour camp, so he cuddled up on my bed and just watched people out the window.
I was so proud at him for not barking at anyone! That is definitely new 🙂
I left for my afternoon run and decided to head to the park. I always like running new paths, otherwise it gets so boring!
I should have worn shorts and a tank top becuase it was HOT!! My freckles were out and about from the sun. Good thing I wore sunscreen.
This was such a great park and great for race training. It had tons of hills and different obstacles. After my run, I did a fifteen minute stretch under a shade tree.
I’m doing a 5k in a couple of weeks and I’m hoping I can turn this into 25 minutes on race day.
I grabbed a matcha green smoothie and a wheatgrass shot for a post run lunch! It was so refreshing.
I couldn’t get enough of the outdoors. I headed out for nine holes with my dad.
The skies were gorgeous out on the course and it was so therapeutic.
My golf game has definitely improved this year!
I love that my dad is retired because I get someone to golf with whenever I want.
The drive home reminded me so much of my hometown in Iowa. Miss that place!
I was too tired to drive home, so I ended up having dinner with my parents and staying the night over there. We watched super Tuesday results and we all came to the realization the Leonardo DiCaprio would made a great president. My dad made a vegetable stew with carrots, black beans, peppers, broccoli, potatoes, and roast. It tasted great!
I ended up passing out around 9:30 on Tuesday night and waking up pretty early for spin class!
