The bottom is soft, buttery, and almost cookie-like, while the maple pecan topping gets gooey, chewy, and caramelized as it bakes. I actually think I prefer these to traditional pecan pie!

Fall Pecan Pie Bars

When I originally created these pecan pie bars, we were getting ready to travel down to Florida for Thanksgiving. It was the first year I wasn’t jumping to host, but I was very pregnant at the time and knew I wasn’t going to put on the same kind of show I had the year before! I was still excited to help my mother-in-law with desserts, though, because that’s where I LOVE to shine. These pecan pie bars were at the top of my list for the end of the night while we sat around playing games or inevitably put on a Dateline episode that everyone fell asleep to within the first five minutes.

The best part about these bars is how easy they are to prep. You only need one large mixing bowl, a few simple ingredients, and a couple of spoons. Even better, you can make the crust and pecan topping in the same bowl, so cleanup is minimal. And we all know cleanup is the worst part of baking! I always love having my mom around because she cleans up behind me as I go. Clean-as-you-go people are ALWAYS invited into my kitchen. 😂

The Perfect Layers: The bottom layer is a soft and chewy, buttery almond-flour crust with warm spices that tastes almost like a tender sugar cookie, with just a hint of caramelized crunch along the edges. The top layer is a gooey, maple-sweet pecan filling that caramelizes as it bakes, creating a chewy, candy-like finish. Together, the two layers create the perfect balance of soft, crunchy, and irresistibly cozy.

Healthy Pecan Pie Bar Ingredients

For the Almond Flour Crust

  • Fine almond flour: This is the base of the crust and gives the bars their soft, buttery, cookie-like texture. I recommend using fine almond flour rather than almond meal.
  • Coconut sugar: Adds sweetness and a warm caramel-like flavor. Brown sugar can also be used.
  • Cinnamon + allspice: Give the crust that cozy fall flavor.
  • Sea salt: Balances the sweetness.
  • Butter: Melted butter adds richness and helps hold the almond flour crust together. Coconut oil works for a dairy-free option.
  • Vanilla extract: Adds extra warmth and flavor.
  • Pure maple syrup: Sweetens the crust and helps everything bind together.

For the Maple Pecan Topping

  • Pecans: The star of the recipe! I like them whole or lightly chopped. Chopped pecans make the finished bars a little easier to slice.
  • Pure maple syrup: Gives the filling its gooey texture and maple flavor without using corn syrup.
  • Coconut sugar: Adds sweetness and helps create that caramelized pecan topping.
  • Butter: Adds richness to the filling. Coconut oil can be substituted.
  • Eggs: Help the pecan filling set as it bakes.
  • Vanilla extract: Adds flavor to the maple pecan filling.
  • Cinnamon + allspice: For those warm pecan-pie flavors.
  • Sea salt: Balances all the sweetness.

Making these for Christmas? Add a pinch of ground ginger and cloves to the crust for even more warm holiday spice!

How to Make Healthy Pecan Pie Bars

Make the almond flour crust. Preheat the oven to 350°F and line your baking dish with parchment paper. In a large mixing bowl, combine the almond flour, coconut sugar, cinnamon, allspice, and sea salt. Add the melted butter, vanilla, and maple syrup and mix until crumbly. When you press the mixture between your fingers, it should hold together. If it doesn’t, add an extra tablespoon of melted butter.

Bake the crust. Press the almond flour mixture firmly and evenly into the prepared baking dish. Bake for 17–19 minutes, or until the edges are lightly golden.

Make the maple pecan filling. While the crust bakes, use the same mixing bowl, no need to wash it! Combine the melted butter, maple syrup, coconut sugar, vanilla, and eggs. Mix well, then stir in the cinnamon, allspice, and sea salt. Add the pecans and toss until they’re completely coated.

Add the pecan topping. Pour the filling over the warm baked crust and spread the pecans into an even layer. I like to lightly chop my pecans because it makes the finished bars easier to slice, but you can leave them whole if you prefer a chunkier pecan topping.

Bake again. Return the pan to the oven and bake for 25–27 minutes, or until the pecan topping looks caramelized and set. If you gently tilt the pan and the filling still looks very runny, give it a few more minutes.

Cool completely before slicing. This is important! Let the bars cool completely in the pan so the maple pecan filling has time to set. For extra-clean slices, you can chill them before cutting.

Optional: Finish with flaky sea salt if you love that sweet-and-salty combination.

Once you remove the bars from the oven, the topping will continue to set and cook slightly from the leftover heat. Let the bars cool completely in the hot pan before slicing. This step is key for clean, perfect cuts!

If you love sweet and salty, add a few sea salt flakes over the top!

Once the bars come out of the oven, let them cool completely before slicing. I know it’s tempting to dig in right away, but they need that cooling time for the gooey pecan filling to fully set. Once cooled, the almond flour crust has the perfect soft, crumbly cookie texture paired with toasted pecans, warm spices, and that gooey maple filling. It seriously tastes like fall heaven! I had a few taste testers try this recipe, and it was a hit with zero notes. The only way to make them even better? Serve them with a scoop of vanilla ice cream or homemade vanilla whipped cream!

Can I substitute gluten-free all-purpose flour for almond flour?
No, I don’t recommend it. This recipe was specifically developed using fine almond flour. Gluten-free all-purpose flour absorbs and bakes very differently and can make the crust hard. Stick with almond flour for the best texture.

Do I need to use corn syrup for pecan pie bars?
Nope! This recipe uses pure maple syrup and coconut sugar to create that sweet, gooey pecan filling without corn syrup.

Should I use whole or chopped pecans?
Either works! I love the look and texture of whole pecans, but lightly chopped pecans make the bars much easier to slice cleanly.

Why are my pecan pie bars falling apart?

  • 2 1/2 Cups Fine Almond Flour
  • 3/4 Cup Coconut Sugar
  • 2 1/2 Teaspoons Ground Cinnamon

  • 2 Teaspoons Vanilla Extract

Pecan Topping
  • 4 Tablespoons Melted Butter
  • 1/3 Cup Maple Syrup
  • 3/4 Cup Coconut Sugar
  • 2 Teaspoons Vanilla Extract
  • 2 Large Eggs
  • 2 Teaspoons Ground Cinnamon
  • 1 Teaspoon Allspice
  • 1/2 Teaspoon Sea Salt
  • 2 1/2 Cups Pecans (whole or lightly chopped)

Instructions
 

Crust

  • Preheat the oven to 350°F and line a 9×9 or 7×13 baking dish with parchment paper.
  • Make the crust (one bowl!) Sift together the almond flour, coconut sugar, cinnamon, allspice, and sea salt. Pour in the melted butter, vanilla, and maple syrup. Mix until crumbly. If the mixture doesn’t hold together when pressed, add an extra tablespoon of melted butter.
  • Press the crust into the pan. Transfer the crust mixture to the baking dish and press down firmly until tightly packed. Bake for 17–19 minutes, or until the edges are lightly golden.

Pecan Topping

  • In the same bowl (no need to wash it), mix together the melted butter, maple syrup, coconut sugar, vanilla, and eggs. Fold in the cinnamon, allspice, and sea salt. Add the pecans and toss until evenly coated.
  • Assemble the bars. Pour the pecan topping over the baked crust. Spread the pecans into an even layer.
  • Bake. Return the pan to the oven and bake for 25–27 minutes. If the filling still looks runny when you tilt the pan, bake a few minutes longer. The topping should be caramelized and sticking to the pecans.
  • Cool completely. Let the bars cool in the pan so the topping can finish setting. For the cleanest slices, allow them to cool to room temperature or chill them before cutting.
    Slice into 8 giant bars, 10 medium bars, or 12 smaller bars—whatever fits your crowd. Or do what my family does and just grab a fork and dive right in!

    I made these for Friendsgiving last Friday. The filling was SO delicious! I was disappointed with the crust. I used regular gluten free flour instead of almond flour, so maybe that’s what made it not good? The crust turned out hard as a rock
