Pumpkin Cottage Cheese Protein Pudding Parfaits

After my chocolate cottage cheese protein pudding was such a hit, I knew I had to make a fall version! I started playing around with pumpkin puree, maple syrup, cashew butter, and plenty of warm pumpkin spice, and this pumpkin cottage cheese protein pudding quickly became a favorite.

It has the thick, creamy texture of pumpkin pie filling, but it’s made with cottage cheese for an easy boost of protein. And if the thought of cottage cheese in pudding makes you skeptical, I promise, you don’t taste the cottage cheese once everything is blended together!

I love layering the pumpkin pudding with whipped topping and crushed graham crackers to turn it into little pumpkin pie protein parfaits. They’re easy to make, require no baking, and are perfect for a fall snack, breakfast, or dessert. This recipe was even another toddler win in our house!

Why You’ll Love This Pumpkin Protein Pudding

After my chocolate cottage cheese protein pudding parfait was such a hit with my family and blog readers, I knew I had to make a fall version!

High in protein. Cottage cheese gives the pudding a creamy texture while adding protein to each serving.

No baking required. Everything comes together in a blender in about 10 minutes, making this an incredibly easy fall treat.

Tastes like pumpkin pie. Pumpkin puree, cinnamon, pumpkin pie spice, maple syrup, and vanilla give it that cozy pumpkin pie filling flavor.

You won’t taste the cottage cheese. Once blended, the cottage cheese becomes completely smooth and creamy without its usual texture.

Naturally sweetened. I use pure maple syrup to sweeten the pudding instead of refined sugar.

Easy to customize. Serve the pudding by itself or layer it with whipped topping and crushed graham crackers for a pumpkin pie inspired parfait.

Kid approved. This was another toddler win in our house!

Ingredients for Pumpkin Cottage Cheese Protein Pudding

You only need a handful of simple ingredients to make this creamy pumpkin protein pudding:

Cottage Cheese: I prefer full fat cottage cheese because it creates an extra rich and creamy pudding once blended.

Pumpkin Puree: Make sure you’re using pure pumpkin puree, not pumpkin pie filling.

Cashew Butter: This makes the pudding extra thick and creamy and adds a subtle nutty flavor. You can also experiment with your favorite nut butter.

Pure Maple Syrup: Adds just the right amount of sweetness and pairs perfectly with the pumpkin and warm spices.

Vanilla Extract: A little vanilla brings all of those pumpkin pie flavors together.

Cinnamon + Pumpkin Pie Spice: The cozy fall flavor! You can always add a little more pumpkin spice if you like a stronger flavor.

Sea Salt: Just a pinch helps balance the sweetness.

Graham Crackers: I use gluten free graham crackers when I want the parfaits to be gluten free. Crumble them between the layers for that pumpkin pie crust flavor.

Whipped Topping: I used TruWhip for the creamy parfait layers.

Optional Add Ins

You can also blend in protein powder, collagen peptides, chia seeds, flaxseeds, or a little espresso powder. Espresso powder is especially fun if you want to give the pudding a pumpkin spice latte flavor!

How to Make Pumpkin Cottage Cheese Protein Pudding

This recipe couldn’t be easier! Everything comes together in the blender in about 10 minutes, and there’s no baking required.

1. Blend the Pumpkin Pudding

Add the cottage cheese, pumpkin puree, cashew butter, maple syrup, vanilla extract, sea salt, cinnamon, and pumpkin pie spice to a high speed blender.

Blend until completely smooth and creamy. You may need to stop and scrape down the sides once or twice to make sure everything is incorporated.

2. Make the Parfaits

You can absolutely eat the pumpkin pudding straight from the blender, but turning it into a parfait makes it extra fun!

Alternate layers of pumpkin pudding with whipped topping and crushed graham crackers in a small glass or jar.

You can also add chopped nuts, granola, an extra sprinkle of cinnamon, or a drizzle of maple syrup between the layers.

3. Chill & Enjoy

You can enjoy the parfaits right away or store them in the refrigerator until you’re ready to serve.

These are SO cute for a fall brunch! You could even add a layer of oats or granola and serve them as an easy fall breakfast.

Can I Make This Pumpkin Pudding Vegan?

Yes! For a vegan version, swap the cottage cheese for silken tofu. It blends into a smooth, creamy consistency and works well with the pumpkin, cashew butter, maple syrup, and warm spices.

You’ll also want to use a dairy free whipped topping and vegan graham crackers if you’re making the parfait layers.

Can I Make Pumpkin Protein Pudding Ahead of Time?

Yes! This is an easy recipe to prep ahead for breakfasts, snacks, or dessert. I like to blend the pumpkin pudding and store it covered in the refrigerator, then assemble the parfaits when I’m ready to serve them.

If you’re making the parfaits ahead of time, I recommend waiting to add the crushed graham crackers until you’re ready to eat so they stay crunchy.
