Healthy Cottage Cheese Chocolate Pudding Cups

I teased this recipe last night on my Instagram story, and once again, the responses had me rushing to the computer to get this blog post up! This healthy cottage cheese protein pudding was so delicious that I’m inspired to create more variations. With fall coming up, I plan to make an apple spice puddingpumpkin pie puddings’moresblueberry cobbler, and even a chai latte pudding! This cottage cheese pudding recipe started when my husband asked if I could make high-protein snacks or desserts for him to enjoy at night. Unlike me, he inherited a super-fast metabolism. While he does work out a lot, he’s always hungry, loves to eat healthy, and is constantly looking for protein-rich recipes that will keep him full while providing essential nutrients.

One day, he mentioned wanting to try a cottage cheese pudding he saw on Reddit. He came home with a big tub of cottage cheese and cocoa powder, ready to experiment. He told me what he was about to do, and I sat on the kitchen stool, practicing self-control as I watched him mix cottage cheese with unsweetened cocoa powder. Oh, and it got worse! He added ice water to the mix because it wouldn’t blend properly.

Now, I’m not a control freak, unless it involves watching someone struggle in the kitchen while silently screaming, “Don’t do that!” in my mind. I wanted to let him do this on his own, but after one bite, he knew he had messed up. That’s when I jumped off the stool and said, “LET ME DO IT!”

When I made my butternut squash brownies a few weeks ago, the batter tasted a lot like pudding. I knew exactly how I wanted to approach this cottage cheese pudding recipe, and after a few ingredient adjustments, it turned out absolutely perfect. It tastes like the creamiest, richest mousse you’d find on the dessert menu at a fancy restaurant. Oh my goodness, this chocolate protein pudding is a real treat—and a healthy one, too! My husband couldn’t believe how good it was, so I made even more and packed them into the cutest jars to keep in the refrigerator. I found these plastic reusable jars on Amazon (linked in my storefront), and I’ve been using them to make homemade nut butter, hummus, and granola. They are so cute and practical, and I love that they aren’t glass—toddlers and glass do not mix! They’re also the perfect size, too!

I kept this parfait pretty simple, but you can customize it with fun toppings like crushed graham crackers, granola, extra fruit, chocolate chips, or any other additions you like. I bet a cherry pie filling would be delicious with the chocolate pudding!

      I’m by no means a professional, but back when I was lifting I was always looking for protein desserts to satisfy my sweet tooth without disrupting my weight loss. when making vanilla anything, I would substitute Cocoa powder with fat free vanilla pudding powder, usually only needing about half the pack or less and add that into whatever recipe I was using. with this one though, you’ll struggle to get vanilla flavor through the nut butter. I think I would consider blending cottage cheese, maple syrup (though vanilla likely won’t cancel this out as much) or stevia to sweeten it, a half scoop of vanilla protein powder, and a vanilla fat free/sugar free (depending on preference) pudding packet to taste and see where that gets you. it won’t be quite as clean as this recipe. alternatively, look up old school pudding recipes from before the pre made packets were around, and see what you could add with low flavor and high protein to that base.
      alternatively, to take the easy way:
      fat free/sugar free vanilla pudding mix + vanilla protein powder + liquid that the directions state in the package.

  3. I haven’t made this yet but want to today. if I make a big batch, how long will it last? like if I made the 3x it says 12 cups, so that would be six days for my husband and myself.
