HOME FROM SAVANNAH
I spent the past few days in Savannah, Georgia. I melted in the heat, but it was still as beautiful as ever. Kyle and I decided last minute to take off for a little getaway, and Savannah is one of our favorite spots. Whenever we leave, we start planning our trip back. We love the people there, staying at a new bed and breakfast each time, riding bikes around the squares, and the food scene never disappoints. I will be posting all about our trip in a separate blog post with more of a travel guide layout, so today’s post is going to be the OG Monday recap. MONDAY IS FOR HAIR
After getting my last Monday recap post done, I headed out for my hair appointment. I had an inch cut off, my roots done, some toning, and conditioning treatment. A couple of days ago someone asked me if I like my hair shorter, and the answer is YES! Absolutely! My hair is so much easier to do, and it doesn’t get matted after showering. I think I’ll be keeping it this length for a long time now. As for the color, I love the lighter look! We will see what summer and running do to my hair, but I’m hoping I can keep it up. The dilemma I’m in now is that my favorite hair stylist is moving. I’m going to have to find someone that can keep up all the hard work she put into fixing my mop!
NORDSTROM CAPPUCCINOS
I had one of the best cappuccinos at Nordstrom on Monday. I had to return a dress at Loft, so I figured I’d stop and grab a cappuccino to give me life for my drive home. I ordered a small cappuccino with almond milk and an extra shot of espresso! It was heavenly!
AMAZON HAS INEXPENSIVE ADORABLE DUVETS
I get asked about my bedding a lot on my Instagram stories, so I thought I’d share some new updates!
I have had my white duvet cover for the past year and a half and have loved everything about it! I got it at Wayfair, and it was the softest. It was pretty pricey but definitely worth it. The buttons somehow fell off when I had it in the dryer, so it was time to replace it. Usually, I would get the buttons fixed, but it also had a red dirt stain from when Leo ran upstairs after being outside. We are generally good about keeping the dogs downstairs until they have dry paws, but he was on a mission to destruct.
Since I washed it and washed the comforter inside, I decided to add it to my containers outside that are getting dropped off at a women’s shelter. I have a lot of throw pillows, rugs, and home decor to donate this summer.
As I was browsing Amazon, I saw a striped linen comforter duvet with so many great reviews, so I thought I’d give it a shot. I didn’t believe it was going to be great because it was very inexpensive. After putting it on the bed, I was shocked! The quality was fantastic, it was soft, and it also came in different colors. I thought about getting another to rotate, so it lasts longer. I’m absolutely in love with this one! Even the comforter was inexpensive and extremely high-quality!

RANDOM DINNER NIGHTS FOR THE WIN
I decided to throw a ton of ingredients into a bowl and call it dinner. Wait, I do this pretty much every week. I baked cauliflower gnocchi, cooked up some ground turkey, and sauteed kale, brussels sprouts, and cabbage slaw together with chive kite-hill. My only complaint is that I didn’t have leftovers because it turned out to be delicious.
BACHELORETTE MONDAYS
Since I had an early dinner, I took a quick shower, made some tea, and decided to head upstairs to watch the Bachelorette in bed! Whenever I’m on my computer for too many hours, I like to escape to the upstairs and leave all my blog work downstairs. The only thing that follows me up are these two doods!
Oh, and as you can see, the bedding is dog-approved! They aren’t allowed upstairs without a paw-check now.
TUESDAY IS FOR TENNIS
I woke up early on Tuesday morning to have my coffee and walk the dogs before heading to the tennis courts at 8 am. Now that the weather is in the upper 90’s, activities have to be before 10 am! After three hours of tennis, I was zonked!
I headed back to my house and finished up some yard work, blog work, and then headed out to my parent’s house to help my mom with a project she was working on for work. A fun project that involved cake! 😋
POOLSIDE WEATHER
After working outside in the heat, the pool was the first thing I needed to dive into! There’s nothing better than floating in a backyard in complete silence. I have a pool in my neighborhood, but it’s always crowded with families and kids. Plus, pools are so much better when your dogs get to come.
DINNER AT MY PARENT’S
I knew I was going to be over at my parent’s late since I was helping my mom make cake pops and put together some gift boxes for work, so I stayed for dinner. We had baked chicken breast, baby kale with balsamic, cherry tomatoes, and sweet potatoes.
SUNNY CAKE POPS
I made yellow cake pops with white chocolate and a yellow drizzle! The theme of my mom’s boxes was “sunshine,” so I made them yellow to fit the theme. I used to make cake pops all the time, and getting to do them again has inspired me to make a gluten-free & dairy-free version this week!
FOUR-MILE RUN WEDNESDAY
I was excited to get my run in on Wednesday morning, especially since I skipped Monday’s run. It was way too hot, and I had a lot of other things going on. Sometimes if my run doesn’t fit my schedule, I get anxiety, and I need to remember that it’s OK if I have to put it off another day. I get nervous that if I take a day off, I’ll lose progress in my running, but that is so silly because I actually come back stronger when I take a longer break.
I ran before 10 am, and before it hit 70-degrees, so it was a win! It felt great, and I’m feeling so much more in shape than I was a couple of months ago! It’s insane that I can fun five-miles again. At the beginning of this year, I was set on never running again, so it’s pretty funny to see where I’m at now!

GLUTEN-FREE & VEGAN MACADAMIA NUT COOKIES
I am so excited about this recipe. I made gluten-free & vegan macadamia nut cookies on Wednesday after my run, and they are going to be a summer staple for me! I’ve been craving white chocolate macadamia nut cookies for so long because they are my favorite, but it’s hard to find a dairy-free option for them. When the white chocolate chips I ordered showed up on my door, I dropped everything so I could make them! 💜 I promise you’ll LOVE this recipe! I blogged about it on Thursday!
JUMBO SALADS FOR LUNCH
I was so hungry when lunchtime rolled around, so I made a jumbo salad! The photo doesn’t do a great job of showing how big it is. This salad is served in one of the large family-sized serving bowls from Pottery Barn.
I tossed baby kale with Tesse Mae’s vegan Caesar dressing and topped it with chopped avocado, cranberry apple quinoa salad, clementines, sunflower seeds, and white northern beans.
BROCCOLI KALE CRUST PIZZA
For dinner on Wednesday night, Kyle and I split a broccoli kale crust pizza from Trader Joes! The key is to bake the crust for ten minutes on each side at 420-degrees before adding the toppings. Once you add the toppings, you cook it for an additional seven minutes. I used Trader Joe’s pizza sauce and the vegan cheese shreds, which are AWESOME!!
And yes, those are two little Applegate gluten-free chicken nuggets hiding on the tray as well 😆 I was craving them with barbeque sauce. Sometimes, I eat like I’m five-years-old, but oh well.
SAND VOLLEYBALL
I was glued to my computer screen on Thursday. I’m so happy I had a volleyball game because it gave me an excuse to get off the computer. Most of our team was out of town, so it was just three girls against a big team of six. To be honest, it was the most fun it’s ever been! We played our hearts out, and by the time we were done, we were dripping in sweat because of all the running around we were doing.
I got home so late, made a turkey wrap, and went straight to bed!
BAD RUN DAY
I tried my hardest to keep pushing through the heat on Friday. I wanted to get a long run in before my weekend trip, but I was just NOT feeling it. I decided to listen to my body and stop at 2.2 miles. I was not feeling it, and I’m sure a mix of bad sleep, bad attitude, and dehydration played a huge role.
CHOCOLATE BANANA PROTEIN SMOOTHIE BOWL
After my bad run, I decided to have a protein smoothie bowl for lunch. It had unsweetened almond milk, chocolate plant-protein, frozen banana, ice, and cinnamon. It almost tasted like a Wendy’s Frosty.
FAJITA STUFFED BELL PEPPERS
I made fajitas stuffed bell peppers for dinner on Friday night. It was the perfect way to use up the produce in the fridge, and they have quickly become one of my favorite dinners!
- Boil the bell peppers in water (until slightly soft, but don’t let them wrinkle)
- Saute chopped onion and zucchini with avocado oil.
- Cook up your protein source. I used ground turkey, but I want to try this recipe with tofu to see how it turns out.
- Combine the protein source and vegetables with a packet of fajita seasoning. I also added extra black pepper, cumin, sea salt, onion powder, and garlic powder.
- Fill the bell peppers with the protein and veggies.
- Top with your choice of cheese. I used Trader Joe’s Vegan Shreds.
- Bake at 400 for 10-14 minutes!
These are perfect for meal prep! 🌶
PACKING FOR MY TRIP
I woke so early on Saturday morning so I could have my coffee and finish packing for the trip. I usually pack in advance, but this was a last-minute trip and much more laid back. I packed for one HOT weekend! I will try to share where my outfits are from in the travel post, but if you’re curious about anything, just ask me in the comments, and I’ll make sure to help you out! 😊
LET THE ROADTRIP BEGIN!
We left for Savannah around 9:30 am, and I was so excited! We planned to get there around noon so we could grab our bikes, check into our bed & breakfast, and grab lunch!
I wanted to try the dragon drink (coconut milk & mango/dragon fruit flavors) at Starbucks for a road trip treat. I prefer the pink drink (which is strawberries), more, but this one was pretty similar and good as well.
p.s. if you squint at the photo above near my hand for too long, it’ll look like my shoulder is my hand, and it looks so funny… I hope I’m not the only one that sees this **
BEFORE LEAVING SAVANNAH
I can’t wait to share my entire Savannah post with you, but I figured I’d share my morning run with you here! This morning, I was up at 6:30 am so I could have a couple of sips of coffee, and mentally prepare myself for my 7 am run! If you haven’t guessed, I’m not a morning runner. When I walked outside to grab my coffee, I immediately questioned if I wanted to run. I was ready to go back to bed, but after my first cup of coffee, I got the motivation just to try to do two miles.
RUNNING IN THE SAVANNAH HEAT
After the first five minutes of my run, I felt surprisingly great. I was distracted by Savannah’s beauty even to pay attention to the heat. When I hit two miles, I wasn’t even out of breath, so I decided to turn it into three. By the time I made my way back to my bed & breakfast, I had reached 4.5 miles. Of course, I wasn’t going to quit there. I decided to run a little further to hit five. I felt so proud of myself for getting past the mental block, running in the heat, and coming back stronger after Friday’s not-so-great run.
COFFEE AND MUFFINS TO GO
After taking a shower, having breakfast, and packing, Kyle and I headed out. I was sad to leave but excited to see the pups! Before taking off, I had to make a pitstop at The Coffee Fox to grab their gluten-free, vegan muffins to take home. They were so UNREAL! Even their power balls were good, and I was sad they were out because we planned on buying them all. I hope I can create a recipe to match these, but until then, I get to treat myself to them all week.
ICED COFFEE FOR THE ROAD
I also had an iced coffee with almond milk from The Coffee Fox for the car ride. This was the second time having their iced coffee in 24-hours because it was delicious! ♥️ It has been three years since going to The Coffee Fox, and it’s only gotten better!
CAULIFLOWER GNOCCHI PIZZA
While I was in the middle of typing up this recap post (approximately one-hour ago), I decided to try out a random concoction for dinner! This turned out to be one of the best combos I have had in a long time. I will be making these literally every night for the next week! Holy moly it’s sooooooo good! I baked Trader Joe’s cauliflower gnocchi at 420 for twenty minutes, then added pizza sauce, and vegan cheese on top and baked for an additional ten minutes. I promise this recipe (more of a combo) will not disappoint!!.
Well, now that the Bachelorette is over, I’m out of here! It’s time to brush my teeth and head to bed. I’ll be back in the morning with my coffee and get to your comments!

Fantastic recap! , last minute road trips are the best! Have you tried making your own pizza bases? I have been making them with spinach and beetroot, they are amazing. One thing I cannot live with out on a road trip is good coffee. Please do the Savannah post recap style. A restaurant I went to last weekend had Baked Carrot sticks glazed with honey and peanut butter as an appetiser they were so good and will not disappoint! Definitely recreating them.

The last delicious thing I ate was chicken burger yesterday 😉 Here in Barcelona we have this NBA Cafe and they serve great burgers for 5 euros on Mondays! And there are TV screens everywhere so you can watch NBA games.. They also have a huge store for NBA fans 🙂 My boyfriend loves to go there!

I have to tell you, I really like this new format of the Monday recap with the bold title of each section. Easier to read maybe. I like it. Also, never thought to boil the peppers first before filling. Usually the filling dries out too much before the pepper gets cooked enough.

Great music. I will usually curate a playlist just for the trip on Spotify. It really sets the mood and starts a vacation off right.

Since it is unlikely I will make it to Savannah anytime soon (my husband and I travel too much internationally as it is for his work) I would much prefer a recap post. It is more relatable and readable, less clinical.

The baked pesto chicken I made tonight from the Skinnytaste blog. It was the first time I tried the recipe and both my husband and I agreed that it was a hit.
On another note I want to let you know that you seem so happy lately, you have a radiant glow about you and it is so nice to see. You seem really balanced to me. Anyways, keep up the amazing work! I always enjoy reading your recap posts.
Loving this season of the Bachelorette by the way! The Bachelorette doesn’t usually hold my interest but something about Hannah’s interaction with her suitors is wayyy more engaging and entertaining than usual. It’s like a car accident, I can’t not watch haha.

I’m just driving through France and I don’t go without coffee and water. Sometimes tea as well. And a good podcast! The best way to pass a long day on the road. My partner and I have a few we only listen to together while travelling.
I prefer the recap-style (because most likely I’ll never go there and have to experience the place trough you!).

I definitely cannot live without water on a road trip. It’s the worst when you get to your destination and your dehydrated from the drive. We usually plan on taking our time getting to our destination, so we can stop as much as we need to.. =) Sometimes easier said than done because we are excited to get there.
It’s so hard to pick. I love the travel guides and the recap posts. If I had to pick, maybe recap?
The last thing I ate that didn’t disappoint was a vegan birthday cake that my husband ordered me from a cute little bakery in our town. I was worried I wouldn’t get to enjoy any birthday cake since going gluten/dairy free, but this cake did not disappoint! It just goes to show you that if you get a little creative, being gluten and dairy free can be really fun.

Have you tried just the regular Dragon Fruit Refresher? I love that! I’m not huge into coconut milk. I definitely have to stop for an iced coffee for my road trips, and I like to have something crunchy like chex mix. Last summer my husband and I drove from Southern California all the way to Wyoming and the chex mix kept me awake! I love your recaps but if you do a travel guide I’m sure I’ll love that too, I just found a cauliflower risotto that was amazing from my local Ralphs/Kroger.
