Good Morning!
I hope you’re all having a great week. Only one more day until Friday! 🙂 It is going to be a beautiful weekend and I have so many outdoor activities planned. I’m hoping this weekend is filled with wine, yoga, running and dog walking. I may even treat myself to some ice cream this weekend to celebrate the beautiful weather. Any excuse to treat yourself, right?
Before I go into the weekend, I want to share what I’ve been up to this past week! I love doing the recap posts because it allows me to reflect on the week and it inspires me to continue enjoying life to the fullest. As I said before, “I make everyday my favorite day ever.” Plus, coffee and blogging go hand in hand.
*after about six Snapchats from you guys…I finally headed to Pier One & bought the mug! Thank you for thinking of me 🙂
I’m taking this post all the way back to last Monday. I’ve blogged in-between there, but have missed a couple activities! It was beautiful on Monday so I decided to fit in a nice run in one of the hilliest neighborhoods. I regretted it the next day when my legs were super sore and I had to hike up a mountain.
A couple hours before every run I always have cereal and unsweetened vanilla almond milk. It’s the only food that doesn’t cramp me and it fuels my body properly before a run. I always end my run with a 100-200 calorie protein snack for recovery.
Tuesday was all about Becca’s accomplishments and we hiked a mountain in Asheville to celebrate! You can read the post here 🙂 We also had dinner and coffee in Asheville before we headed back to Charlotte.
On Wednesday morning I did yoga with a friend at one of her groups in the park. It was really nice and peaceful. When I got home I had an English muffin and a boiled egg.
Wednesday night was all about Pizza and Harry Potter. We had pepperoni pizza and Hawaiian pizza from Carmelos in Fort Mill, SC. Carmelos is one of my favorite places to have pizza. They have the New York style pizza with the chewy cheese! They also have good salads.
One thing I’ve learned about living a healthy lifestyle is that you HAVE to treat yourself to your favorites now and then, otherwise you’ll feel deprived and crave the unhealthy foods even more. It’s also about moderation. Instead of eating numerous pieces of pizza, I have one slice with tons of salad. I mean, what’s the point of running all the time if you can’t enjoy a slice of pizza now and then? Moderation is KEY.
I always run three miles on Fridays. This was such a strange run because I ran in and out of rain clouds. I like to drive out to the country and run the open roads. There aren’t many cars and it’s absolutely beautiful. I did pretty well on my time too! To be honest, I wasn’t going to run on Friday at all. I kept telling myself not to do it, but then found a little motivation to just suck it up and go. After the run, I was so happy I did it and that feeling is what motivates me to run over and over again. The first five minutes of the run is always the worst five minutes. After you hit that point, it’s enjoyable.
Running is not only a great feeling, the views you get to see and the beauty that surrounds you is also a reward. It makes me realize how blessed I am sometimes.
When I got home, I showered off and then made a delicious protein shake. It had frozen mixed berries, banana, pineapple, almond milk, spinach, kale & Plant-Based Vanilla Protein Powder.
We decided to stay in on Friday night and drink wine, some margaritas and food prep the Blue Apron! We blasted Taylor Swift and rocked the slippers and sweats!
Becca came over on Saturday morning and we headed to the Riverwalk to get a nice workout in. We decided to do some walk/run intervals. Those are the best for burning fat and increasing your heart rate!
The weather was perfect and the river was beautiful!
I was surprised at how empty the trail was. This is one of Charlotte’s hidden gems and one of my favorite spots.
There is something about a Saturday morning walk that makes you feel so good. It’s a great way to kickstart the endorphins and start your weekend the right way.
We did five relaxing miles! We usually go out for coffee on Saturday mornings, but Becca had an appointment so I headed home and made a delicious protein smoothie for breakfast!
My smoothie was made with frozen blueberries, banana, peaches, almond milk, spinach, kale & Plant-Based Vanilla Protein Powder!
After Becca’s appointment, I met her uptown. We had been wanting to go to the 7th Street Public Market for a long time, mainly to try out Not Just Coffee! I’ve been stalking them on Instagram for about two years. The 7th Street Public Market promotes local farmers, food artisans and entrepreneurs. When you walk in, you get a whiff of fresh baked goods, coffee and pizza all at once! It’s heaven. When I walked into the market, I walked past a farmer in hat, plaid shirt, jeans, boots and he was pushing a wheelbarrow full of produce. He had icy blue eyes and I nearly died after he shot a smile at me. Not only did he smile, he hat tipped me…I thought that only happened in the movies. I had Becca pinch me because I felt like I was in a Nicholas Sparks movie. I hurried up and headed towards the coffee so he wouldn’t notice my giant blushed cheeks. I don’t know why I’m sharing this story, but I’m sure you’ve had something happen to you like this at some point in your life 🙂
I get so excited when I see Lenny Boy Kombucha around Charlotte. It’s the first Kombucha I had ever tried and that is when I fell in love with it.
The produce at the 7th Street Public Market was so fresh and very inexpensive. They had fresh cheese, milk, eggs and meats.
Not Just Coffee was very busy. Why? because the coffee was so damn good. I am a coffee snob and have turned most of my coffee drinking friends into coffee snobs. This would please any coffee snob on earth. Did I say “coffee snob” enough? Coffee snob.
I ordered a latte with an extra shot of espresso.
The coffee was creamy, the espresso was smooth and rich. The beans were roasted perfectly and I couldn’t find one thing I didn’t like about the coffee, other than it was too pretty to drink. Drinking the coffee was like stabbing a gorgeous painting on the wall…I felt like I was destroying beautiful art.
Since we were already uptown, we decided to enjoy the afternoon up that way. We stopped at Rock Bottom Brewery for salad and I ordered an IPA because it sounded so good. It was called GODDESS.
I had the grilled chicken cobb. It came with bacon, lettuce, egg, avocado, grilled chicken, cojita cheese, tomatoes, and ranch on the side. SO GOOD!
Becca had the Waldorf salad it was fantastic! It came with walnuts, cranberries, arugula, apple chips, goat cheese and honey mustard dressing.
I headed home after lunch because Shaughna was coming down with Kona Boy! I’ve gone up to D.C. to watch Kona while they were in Hawaii and I always have a blast with him. This time, she brought him to me so he could hang out with Grumples and spend some time in the Carolinas while they headed off to Hawaii this time.
Grumples is currently in dog heaven and they play nonstop.
Shaughna stayed here with us on Saturday night. I love catching up on life with her and she’s always fun (hilarious) to talk to. We had several cups of coffee and just chatted away. Becca headed over as well.
Shaughna has been doing the Whole 30, so for dinner I decided to make something we could all eat. I LOVE making roasted vegetables, so I went with that! They are so filling and delicious.
I chopped up carrots, sweet potato, bell pepper, zucchini, brussel sprouts, squash and onion. I tossed them with olive oil, black pepper, sea salt, garlic powder, minced onion and onion powder. For ours, I added a little drizzle of honey.
I made some chicken breast with the same seasoning on the indoor grill!
I cooked the veggies for one hour at 400 degrees and continued to stir them every 20 minutes.
Since Becca is a vegetarian, I cleaned the grill off and then grilled some black bean veggie burgers for her.
I need to start making these meals more often! It was so good and super easy 🙂
Sunday morning these guys were ready to go on a walk! They keep me so active!
Usually we can take the dogs to the coffee shop and sit outside, but it was SUPER cold (for southern blood). We decided to walk them in the neighborhoods instead. I don’t like to go out to church or anywhere until the dogs get their workout in. I’d rather them be worn out and sleep when I leave.
I never used to post my outfit pics, but after numerous requests, I have been getting more photos! As I said before, I’m not fashionista or fancy dresser…I keep my outfits very simple and casual.
The coat is from Golden Tote! I felt like it brought out my inner Cookie Lyon! (Empire fans know what I’m talking about.)

We have actually decided to break our addiction and try something else this Sunday…I don’t know how I’ll live without my Chai & Homemade parfait. We have been going to Amelie’s French Bakery every Sunday for months!
We always split the croissant because it’s so delicious!
Sometimes I go with the dark roast coffee, but sometimes I simply want a Chai! Depends on my mood 🙂
It’s the best Chai around!
It’s the simple things in life like coffee traditions that make me happy.
After coffee, my mom came over to my place to walk the dogs with me. She loves dogs more than anything! It puts her in a happy place.
My mom stayed behind to relax and play with the pups so I could go for a walk/run at the Riverwalk with Becca. It was a GORGEOUS day and everything was so green. I am so lucky to have a friend like likes to explore and workout as much as I do. It’s fun to have a buddy instead of doing everything alone. I’m aware that I talk about her all the time, but she’s one of the greatest friends and we are always out exploring!
I hate the days that are super chilly, but super warm at the same time. I never know how to dress before heading out and I always end up getting so hot!
Six miles never felt so good!
Kona was happy to see me when I got back! Kona and Grumples are both humans in dog costumes. He jumps up and hugs you tight. I love it.
Sunday night consisted of Sushi and catching up on Empire! That show is my jam. I listen to the soundtrack nonstop.
There may or may not be a piece of sushi in my hand…
I sat out on the patio and caught up on work all Monday. It was so nice out!
I also had some friends over for wine, chips, guac and salsa! You can find those recipes here!
I love that it doesn’t get dark until 8pm! Becca and I decided to walk the pups before packaging orders for the shop.
I love walking the back neighborhoods (the hilly neighborhood I run) because there is little traffic and it’s so beautiful.
SO CHILL!
I headed to the kitchen to grab a glass of water and came back to this…
I headed to the gym to play basketball with a friend around 2pm on Tuesday. I love a good basketball workout! 🙂
After playing basketball, I whipped up a late lunch protein smoothie!
My smoothie is made with frozen blueberries, banana, pineapple, almond milk, spinach, kale, chia seeds & Plant-Based Vanilla Protein Powder! I also topped it with almonds. I love when the almonds sink to the bottom and get super cold! It’s like the surprise at the bottom of the cereal box.
Later that night, I headed to my parents house for dinner with the pups.
They had so much fun running around in the backyard.
They were zonked when we got back to my place.
I went for a long walk on Wednesday morning with the pups. I was actually brave enough to take them by myself and they did pretty well. It’s Grumples that likes to pull a bit. They finally started walking side by side.
When I got home, I had an apple with peanut butter. I love this as a snack!
It was BEAUTIFUL out:) I decided to stop at the market and grab some fresh fruits and vegetables.
The Peach Stand in Fort Mill has the BEST strawberries and produce! I’m so lucky to live so close. The strawberries taste too good to be real and they’re sweeter than candy! They are literally flawless. I also bought a bottle of wine for Friday night. Strawberries and wine go together like peas and carrots.
When I got back, I went to the gym to lift weights. When I got home I made a little snack mix that had almonds, cranberries, sunflower seeds, toasted unsweetened coconut, pumpkin seeds and walnuts.
I had a late lunch that consisted of leftover roasted vegetables and chicken from Saturday night.
Becca and I have been working on tons of projects lately, so after working for a couple hours last night, we decided to take a break and go grab some dinner.
I’ve been wearing so much pink lately. Becca said it looks like “pink threw up in my closet.”…She’s so wonderful lol

We went to Akahana Asian Bistro, one of my favorite spots in Baxter Village. I ordered the house salad with ginger dressing. I could have had five of these and called it a meal because it was so good.
For my meal, I had chicken lettuce wraps with MSG free/low sodium sauce! THESE ARE SO GOOD!
Now, I’m off to the post office to mail some orders and then out for my daily run! 🙂

1. YES! It was at a country music festival two summers ago. I had been talking to this guy for about a month and me and his cousin were camping with him at this festival. So the first day I met him in person was the day we went! When we got there. A group of us girls were standing around, and I was sitting on the tailgate of his black pickup, and the group of guys were standing a little ways away from us and we made eye contact… not a big deal, but it felt like a Nicholas Sparks Moment! Or a music video moment… either way haha
2.Fresh Peaches are my absolute favorite fruit! Strawberries and Raspberries come second 🙂
3. Friday night going out for a friend’s birthday, Saturday hit the driving range with my sister and make a shelf for my bedroom and a run, Sunday relaxing, cleaning, etc!! Perfect weekend. Finally in the 70’s here!! For a few days anyway!

I just found a somewhat “Hidden Gem” near where I work of a 2.5 mile long trail. I go there during my lunch break sometimes and walk, but today I’m going to conquer running it. I’m just shocked I never realized it was there before.
I can’t say that I have ever had a Nicholas Sparks movie moment, though I can imagine it would feel GREAT to have one.
This summer I’m ready for the loads of sweet corn, fresh strawberries, and more cantaloupe!
As for this weekend, in which it’s supposed to be 70’s (I’m sooo happy! Considering I live in Ohio and LAST weekend we had 30’s and snow.) so that means being outside! Saturday we are going four wheeling for the day and then possibly a bonfire/cookout that night?
I just know I will be outside enjoying the weather a LOT!

We have a blast with a huge group of people that go, we go out about 3-4 times a year. Memorial Day Weekend and Labor Day Weekend are big four wheeling weekends as well.
Random question though….I was just thinking about this….when you go to trails and things to run, what do you tend to do with your car keys while you run? I have a key fob (the kind where you just have to have it on you to unlock the car, then push the button to start the car) and never know where to put it….I only have 1 pair of running capris with a zippy pocket, but they are the worst running capris ever (they don’t stay up) so I rarely wear them. I just need some better ideas on where to put it/carry it while I run. Plus I have the iPhone 6s Plus now so that’s already a BIG thing I am carrying in my hand. Just wanted some thoughts from another runner.

That just sounds like a freaking blast! My aunt and uncle live out in Columbus and I used to go four wheeling with them. I need to make it out that way soon!
I have a hidden compartment on my jeep that I hook them to. I used to hide them behind or on top of the tire too.

1.Off the top of my head I can’t think of any. But I love the books and movies! (Well, most of them ;))
2.All the things!! I love all fresh veggies more in the summer because I love the flavor they get from the grill. Unfortunately I don’t eat my veggies like I should. And fruit is always so refreshing in the summer! I wish I craved it more in the winter month. I’m just excited for all things summer! Watermelon and grapes are my favorite fruits and (grilled) asparagus and summer squash are to die for!
3. My husband and his family are huge Nebraska fans! So we’re going to the Nebraska spring game! I think we’ll also go to Omaha to the zoo 🙂 really excited about it! I used to live in Des Moines IA so I was only like 2 hours away but never took the time to go there! Now I live in SW Kansas and I’m going. Such is life 🙂

Grilled veggies are so good! I live off of them in the summer. I like to make them in bulk and keep them in the fridge. Grilled asparagus!!! yum 🙂 Now I want grilled veggies!!!

My Nicholas Sparks moment was one of the best days of my life. My now husband and I met in college and once I saw his bright blue eyes from across the room I just “knew”. I even told my mom that same week that I was gonna marry him. And I NEVER told her that about anyone before! He’s been by my side since and supports me in everything. But he knows that A Walk to Remember is my favorite N.S movie so he woke me up at an awfully early hour one day with his truck packed with our bikes and drove us 6 hours to South Port,NC where the movie was filmed!It’s one of the prettiest places I have ever been to! He was so nervous all day and after walking on the beach for a few hours he pulled out a box, got on one knee, and proposed! So, who knows? Maybe just one look can change your fate. God places people in our lives in certain moments for a reason. I am a firm believer in that! So maybe Mr.Dreamy eyes???? ;)Love your recap posts!

I’ve never commented before but have been reading your blog for around 4 years now, and I am so happy to see you look happier and healthier than ever!
I was wondering about your runs alone. I’m 19 and live in a college town, and I feel uncomfortable running far away from the population as I am worried someone might take advantage of me or something. Sounds dumb, I know, but there have been a few cases at my University in the past few months. Do you bring anything to protect yourself? I want to be able to go for long runs too haha and would love to find a way without feeling scared.

You do not sound dumb at all. I make sure to do smart running…I NEVER run on trails that are secluded. If they are secluded, I make sure to have a friend with me or pepper spray. Try to find public areas to run and safe neighborhoods. Its smart to be cautious! Also, always let your friends/family know where/when you are going to run. Tell them you’ll call them after the run!

Yay for trails! I finally found one without ducks lol. It’s 30 minutes away but totally worth it. haha gotta love Ornithophobia. 9 miles everyday <3 And chai teas are so amazing. Second favorite kind of tea. And oh my gosh Kona is so precious!

I love what you said about moderation. I totally agree and try to life that kind of lifestyle. My husband and I were out of town this week and we had a couple of days of indulgence and it was great…but my body definitely was telling me it was time to get back on track! I strive to live a balanced life..the best of both worlds in my opinion 🙂
1. The only one that really comes to memory was a long time ago when I was a freshman in high school. I was super uncool and definitely not a popular kid. I was Pop Choir and it was the day of our concert and the super hot popular senior who I had a major crush on stopped me in the hallway and asked if I would sing a duet with him for the concert that night. I was so in shock and I definitely couldn’t stop smiling all day. Probably the highlight of my entire high school career. LOL.
2. I am super excited for all the fresh fruit — but especially peaches and cherries. Love them both SO much.
3. Just chilling and have as relaxing a weekend as possible 🙂

Balance is a must and I always feel so much better with a balanced diet. I always feel off if I indulge too much and last year I totally let myself go for a bit (relationships) and I never felt myself! Now, I have this moderation thing down.
I was also in pop choir 🙂 Your story is super cute and reminds me so much of my high school experience as a freshman!

I absolutely LOVE your recap posts! They are the best. I wish I had more time to devote to hiking during the week- it seems quieter and less people are out then. But I can’t get out during the day, due to my job 🙁 I can head out on the weekends though, which is still good! I just stick to running in the evenings on weekdays after work.
I cannot wait for fresh strawberries! I’ve been eating them the past few weeks, but they just aren’t sweet enough yet. Nothing like strawberries in season!
Are you still doing YNAB? I know you said you were cutting down on going out to eat and buying things. I really liked that post because I am trying to be more conscious of my spending, as well. You should do an update! It’d be cool to know how you’re balancing everything!

The strawberries here are SUPER sweet. I can’t get over them. I just had them for breakfast and regretted sprinkling honey on top!
I have been using it and I love it’s notifications 🙂 I do like to go out with friends and I think that plays a huge role in my social life and lifestyle, so I just fit it all in. 🙂

1. Love your little moment! Last summer I dated a guy who took me on the most magical but simple dates. On one date we walked through a park in the ‘golden hour’ before sunset and kissed on a bridge over a creek. I looked up and saw a beautiful deer staring at us. It felt like I was in a movie! Another time we were laying on a blanket by this cornfield at night (I’m from a pretty rural area) and saw several shooting stars! He ended up being a jerk, so the movie moment didn’t last but it was still nice 🙂
2. RASPBERRIES! I could eat them all day. And berries in general.
3. I volunteer at my hometown’s monthly community meal. The area homeless and other people in need will come and eat with us and it’s just really nice to do something as basic and simple as sharing a meal together. It’s also supposed to be super nice out so I’m hoping to either make it to a yoga class on the riverfront pier in Philly or go for a run!

Berries are so good. The blackberries at the markets here are like 3x bigger than the normal size!

Hey Taralynn! Definitly know what your talking about with those Nicholas Sparks moments, but mine have usually turned out incredibly wrong and I get super awkward and so not cool! Haha I cannot wait for summer fruits! Mango’s are the best, but I’m just excited for all my smoothies I’ll be making! My weekend will be serving as my mama’s date to a family friend’s wedding (My dad agreed to be our DD, so that’s pretty rockin! My mom is literally the best to goof around with at weddings! And we’re supposed to have great weather here too (FINALLY!) Have a great weekend!

Summer fruits are everything!! I love mangos when they are in recipes. I don’t like them by themselves for some reason. Weddings are so fun ? I love that you have a great relationship with your mom! YAY DAD FOR BEING DD!

1. Have you ever had a Nicholas Sparks Movie Moment? Yes I have!! On New Year’s day, my guy friend who I had always wanted to be more than just friends with stopped over and we went for a drive. It was the first time in years we had gotten to hang out or really talk much. I was walking back to my front door from his truck, a little disappointed that he hadn’t said or done anything to make it seem like he had feelings for me like I had thought, so I figured it must just be in my head. I was almost to the front door when I heard the door shut on his truck and him running up to me saying “wait!” I turned around and he looked super nervous so I asked “what do you want?” and in response he kissed me. When he pulled back he said “I’ve wanted to do that for so long and I couldn’t miss my chance again.” We’ve been together ever since. 🙂
2.What farm fresh food are you super excited for this summer? I love going to pick strawberries in the summer!!
3.What is one thing on your itinerary for the weekend? I get to dog sit for my friend who lives out in the country all weekend, and the weather is supposed to be gorgeous! 🙂

2. I am super excited for peaches too! Those are my absolute favorite fruit. I’m also excited for okra. I love roasted okra.

Awe my dog gives me big hugs just like Kona! I love it. People ask me all the time if I have a kid I’m like nope just a dog! That’s how human she is to me 🙂 I love lettuce wraps! You can literally put anything in them.. Burgers, fajitas and shredded buffalo chicken with avacado is my fav!

Dogs are kids to me lol Lettuce wraps are the best! My friend and I are going to attempt a tofu version of these! I think the lettuce tastes so much better than the tortilla!

Sounds like a great week! Its finally starting to get warmer in PA as of this week im so happy! I also love that its not dark as early…I love taking a long walk or having time outside after being stuck at work all day!

firstly, your hair in braids looks so gorgeous! Also, you and I share the same pizza strategy… I always load up on salad, and soaking up the leftover dressing (I usually go heavy on vinegar and lighter on the oil) with the crust means I actually enjoy eating the crust instead of just mindlessly eating plain bread.

Can’t say that I really have! I’ve been to some super cool places that remind me of Nicholas Sparks movies, though.

We’re having a patio party at my parents house (lots of wine and yummy cheese boards)! I haven’t seen my family in a while because I was in LA for a week on a business trip. It’s also going to be in the 70s this weekend, and for MN, that’s amazing!

1. I’ve most definitely had a Nicholas Sparks movie moment… Except right now, I’m in the middle of the movie, where the girl’s in love with the boy and the boy doesn’t feel the same way. So my life needs to hurry up and get to the ending where they’re together already. Ha!
2. This is going to sound like the WEIRDEST answer… but I haven’t had much luck with produce at Chicago’s farmer’s markets for the past few years. I get much better stuff at Whole Foods or even Jewel! However, I’m SO excited for farmer’s markets to come back because it means I get to stock up on my favorite soap from a local vendor… It’s goat’s milk and tea tree oil, and my skin loves it!
3. I’m dog-sitting for my friend for the next 10 days, and since I don’t have dogs of my own… my plans pretty much consist of soaking up as much puppy time as possible when I’m not working. 🙂

I just discovered Baxter Village last night! I want to live there and drive my golf cart to Starbucks in the morning and sit outside by the fire at the grapevine wine bar on Friday nights lol! The houses in there look like they’re straight out of a storybook. I loved it!! I live near Wilmington but my grandparents live in Fort Mill so I visit often.

How amazing is that place?! I love how everyone drives around on golf carts and the little village is so cute and safe for night runs/walks. There is so much to do and see! Wilmington is beautiful as well!

I love peaches too! I’m also excited for corn on the cob and watermelon! No summer dinner is complete without grilled corn not the cob for me (not to mention I love the cheap prices…. 6 ears for $1!)!
My weekend was spent outside! Its finally starting to get a bit nicer (at least the sun is coming out even if its still 45)! Lots of dog walks, outdoor runs, and time spent at the dog park!

I love hitting up the farmers markets when I can. I’m actually off this Saturday so I think I just might have to go do it! I am looking to start up Whole 30 again so it would probably be best to get some veggies. That was so nice of you to make a whole 30 approved for your friend. I swear the last time I did it I just never went out because it was to hard. I can’t say that I have had a Nicohlas Sparks moment… but that’s ok with me. Also that Asian place you went to looks delicious, have you been to Pei Wei? I have one down the street and they’re pretty good at making anything you order Sodium free, GF, no MSG what ever you want. If you ever some to California (specifically Orange County) You’ve gotta check out the Anaheim Packing House it’s like the coffee place you went too, plus they have a ton of other AMAZING places to eat there. My favorite it Pop Bar, look them up! You will be drooling! <3
