Good Morning, Everyone!
Can you believe it’s already Friday? I hope you all have some fun and relaxing plans for the weekend. I did an update post yesterday and by the end of it, I was (mind) exhausted and felt overwhelmed after reading through it. It made me realize that waiting two weeks to do a recap post is ridiculous and I need to do smaller frequent ones to keep all my photos and daily activities organized. I’d also love to get your opinions. Do you like the daily short ones, or the extra long ones?
Yesterday, the day started out so calm and relaxing. I had my coffee, my pups were cuddled up next to me, and I did my daily emails while watching Good Morning America.
Fifteen minutes later, the dogs went nuts. I’m not sure what they got into but they were crazy all day long. I had to move my coffee table just so they could wrestle on the living room floor instead of my couch. If you follow me on snapchat @taralynnmcnitt) you probably saw some of the nonsense. That is why this post is filled with dog photos becuase they were a big part of my day — and becuase they’re incredibly cute.
That is Grumple’s “mom let’s go for a walk face”, so I just took the both of them over to the dog park.
The dog park calmed them for a bit and it allowed me to get some work done.
I hate when I need to get up to get something, but the dog is so soft and warm cuddled up next to me. I always feel guilty getting up.
Around noon, my friend and I went to the Riverwalk to walk the trail while enjoying the beautiful weather.
The skies were so blue, the river was loud and rough, and the grass was turning bright green. Spring is just around the corner 🙂
Our walking time was really bad becuase we couldn’t help ourselves from stopping to take photos and look at all the different views of the river. The river looked light green yesterday.
They added more trails and walkways at the river walk so it’s even longer now!
I love when you can see the sky’s reflection on the river.
This would be a cute picnic spot.
The time is so bad, but we had lots of stops and I really enjoyed the walk!
For lunch, we headed to the Juice Bar. I grabbed one of their superfood protein bars. I keep it in the refrigerator and have a piece whenever I need quick energy or a snack in-between meals. They don’t look very good, but I promise you that they are. This one had raw oats, flax seed, chia seed, bee pollen, maca, natural peanut butter, vegan protein powder, goji berries, and spirulina.
This time, I ordered the wheat grass shot and the matcha green tea smoothie. I love wheatgrass and the flavor is almost sweet to me. After reading 50 Reasons to Drink Wheatgrass Everyday on one of my favorite sites, I’ve been more inspired to do it. The matcha green tea smoothie was really good. I believe it was just added to the menu and I’m already craving one today! Maybe after my run!
When I got back to my place, the dogs were at it again.
I had to take them over to the park again. They got into the puppy crack apparently.
These goofballs didn’t take their eyes off me while preparing dinner. They know they’re not supposed to be in the kitchen, but those faces…
I made a goat cheese mixed green salad with fruit and homemade chicken nuggets! My homemade chicken nugget recipe can be found here and it’s so much better than the store-bought kind!
My salad had strawberries, blueberries, dried cranberries, organic spring mix greens, pecans, sesame breadsticks, and crumbled goat cheese. I used the low sodium Panera bread Balsamic dressing and I really liked it. Panera probably has the best “store bought” dressings. You can usually find it in your grocery store’s produce aisle next to the bags of lettuce.
Mix the greens in the dressing first, and then add in all the ingredients and crumble the goat cheese on top.
This salad is so good paired with Pinot Noir! This is the salad I made for bachelor night.
Yesterday was a great day and I’m already looking forward to today. If you go into each day with positivity and tell yourself that everything is going to be great, then it probably will!

Hi Taralynn! Happy Friday 🙂 Two posts in two days, lucky us!
I’ve been on a big salad kick lately and like to bring them into work for lunch. Since I don’t have much time in the morning I’ve been throwing together spring mix, broccoli slaw, edamame salad mix, carrots, and a tad bit of hummus plus non fat greek yogurt (in place of the dressing). I also bought those already cooked turkey patties from BJ’s and I cut that up and throw it on top. It sounds like a random mix but it’s actually really tasty!
Personally, I like your shorter/more often recap posts because they usually include more detailed info! When it’s a recap of over two weeks, naturally things probably get forgotten over that amount of time. I selfishly want you to write more so I have more posts to read 😉 lol. (P.S. You seem so busy ALL the time, how do you manage all your time? I’d like to see a post about that! I feel like I can never get everything done during the week…)
No plans tonight, I usually just relax on Friday nights… the work week is so tiring! But tomorrow, I’m going to a Beatles cover band concert with my boyfriend. He is a big Beatles fan so it should be fun! We are also going to dinner beforehand and going to try a new restaurant. Do you have BYOB restaurants in NC? I live in NJ and they are everywhere here.. it’s nice to have the option of bringing your own beer or wine, plus it saves a lot of money!

That is exactly what happens 🙂 I’m actually not great at “managing” time, but I have a routine that I try to stick to. I do a lot of my work/studies in the morning and at nights so I have the day to do things.
I’m going to do the same, but at the movies 😉 There aren’t a lot of BYOB in NC, but Food Truck friday in the summer! 🙂

I love a good massaged kale salad, with a variety of chopped veggies. I usually mixed in some grated parmesan cheese and add some roasted chickpeas on top for crunch. I like the massaged kale because it hold up in the fridge so I can make 2 days worth at a time and don’t have to worry about it being soggy.

I’m so jealous the weather by you is so nice! I live in Wisconsin and so far we’ve had two 50° weather days and every other day has been much colder…I can’t wait til Spring!!!!
1. I love adding fruit to my salad. My favorite is mixed greens, avocados, sliced almonds, strawberries, manderin oranges, and a raspberry vinaigrette.
2. I like both. I read all your posts no matter what so I guess I don’t really care. 🙂
3. I’m a pregnant woman so my Friday nights consist of laying on the couch watching movies after a long week of working with kids. Lol
Tomorrow is my baby shower though and I am so excited for it!! My due date is almost one month away! I am ready for this baby to come out! Being pregnant is awesome and a privalige, but honestly I can’t wait to feel like myself again!!

What is your favorite salad combination you like to make at home?
I love to make salads using romaine lettuce, cucumbers, hard boiled egg, shredded cheese, and ranch! That’s usually my base; sometimes I don’t add the cheese and I use bell peppers and spinach too but I love hard boiled eggs and cucumbers in my salads!

It’s starting to get warmer here in Connecticut, too but I am looking forward to more sun to get out and hike more and go on bike rides! Tonight I am planning on just relaxing with my boyfriend and hanging out. Maybe going out to dinner but who knows! We tend to just go with whatever we feel and don’t plan too much on the weekends 🙂

I’m not a huge salad fan, but one salad I make that I love is romaine lettuce, strawberries, blueberry goat cheese from Trader Joes, and balsamic vinegar. It’s very similar to the one you posted.
I like the shorter recap posts because shorter means more often and they’re easier to read all at once. Sometimes I don’t have time to read the long recap posts all at once so I have to read them in parts. But you do you, I’m happy with whatever works for you!
I wish I had exciting Friday night plans to share with you but I’m just going home for a few hours to hang with my mom who is recovering from surgery. I hope you have something fun planned!

I like to read something new every day. As other people mentioned, I read your blog at work when I have some free time. Unfortunately where I work, they blocked the internet so yours is one of the few blogs I am actually still able to read 🙂 Hopefully they never catch on….
Do you take your nice camera with you when you go out for walks and to dinner or do you usually just snap pictures on your phone? Do you mind sharing again what kind of professional camera you have?
I am a huge salad lover as well. I always make the salad that you posted above, especially in the summer. I’m not a fan of goat cheese so I just sub that for feta!

1. I’m pretty boring with my salads, because I’m not a fan of fruit in my salads. I usual have a salad with some edamame, chik-peas, grape tomatoes, and cucumbers. My favorite salad place is Snappy Salads. Their dressings are my absolute favorite.
2. I usually love the longer posts, but it did seem this last one was more just a bunch of pics. I think I religiously check your website for what you write more than the pictures. So the denser the post the more I enjoy it.
3. I have a ton of studying to do this weekend so to get my mind right I have a busy night ahead of me filled with meal-prep and house cleaning. Not the Friday night people usually get excited about, but my boyfriend and I blast fun music and make it a good time.

I love fruit in salads depending on what kind of leafy green is used. Spring mix & kale is great with fruit mixed with a balsamic dressing. I also love chickpeas, which reminds me to put that on my grocery list!

1. I really love keeping my salads at home simple: hard-boiled egg, crumbled bacon, and lots of raw veggies depending on what I have on hand. I don’t really go out of my way to make salads at home so it’s normally a “Oh crap! I have nothing for dinner! Where’s the lettuce?!” type of situation 😛
2. I like them both, but I like the daily ones for the same reason that everyone else does – it makes my morning commute a bit better 🙂
3. Right now, my only plans are closing down the cafe I work at… But I’m trying to talk my friend into watching Fuller House with me after!

I want to start by saying that I love your blog. Regardless of the length of your posts, I am always interested in what you have to say. While I think I enjoy your recipe posts to most, the recaps are always great (especially because your dogs make an appearance so often – I have two dogs, too).
I am not picky when it comes to salads, except for goat cheese. I usually prefer feta cheese with any kind of green and loads of veggies. Salad dressing is also a necessity and I usually opt for EVOO and red wine vinegar with seasonings. It is such a good way to add flavor without the crazy ingredients and salt.
I do have a question for you. What do you do with your dogs when you are not home? I have been crating mine for years, but I think they have reached a point where they do not need to be locked up when I am not at the house. They used to be crazy chewers and would literally destroy furniture, couch cushions and pillows. Now I think we are finally past that.

I got hooked on goat cheese after having it over and over again in france. Feta is really good too though.
My dogs are really good about just staying at home when I’m not there. Grumples doesn’t chew anything or get into anything. The chewing was a first year phase. A lot of people crate them or drop the off at doggy day care here in Charlotte.
I got lucky with the behavior!
🙂 You can also try bitter spray on some of the items they chew.

I love to make greek salads at home! Tomatoes, cucumbers, olives, and feta! SO easy and SO delicious!
If I had to choose between long and short blog posts, I’d probably choose short (although I like them all). Having more frequent posts pop up always brighten my day to see what you (and the pups) are up to!
No big plans here for Friday night, except some Blue Apron cooking! I was inspired by your Valentines dish and signed up! (LOVING it so far!) 🙂

So far I’ve made the Spicy Shrimp Spaghetti with Cabbage & Toasted Breadcrumbs and the Trinidadian Chicken Curry with Coconut Grits & Collard Greens. The Pretzel Burgers with Hoppy Cheddar Sauce & Roasted Sweet Potato Rounds is ready and waiting to be made for dinner tonight!
Do you have a favorite Blue Apron you’ve made so far? I just discovered that all of their recipes are on their Pinterest and website but I have a hard time picking!

I prefer more frequent blogs. you’re one of like 4 blogs I check daily and I’m always sad when there’s no update.
I have an exciting night of getting my brows waxed and that’s all. haha. it’s more exciting than it sounds. my friend owns a beauty bar where she basically just does facials, facial hair removal and applies make-up. my husband works downtown so i’ll meet him there and we’ll walk to her business and find somewhere for dinner afterword. then i’ll probably fall asleep on the couch while watching a movie.

1. Favorite salad combination is Organic Mixed Greens with dried cranberries, walnuts and feta cheese with a balsamic vinaigrette dressing. It’s simple and delicious!
2. I look forward to your daily post. Catch up on Mondays from the weekend and then maybe 1 here and there during the week. I check your blog everyday so when I don’t see a new post it saddens me. When you do the long post I can sense by the end your exhausted and it feels rushed. You’re an inspiration in so many ways. I’ve learned to try so many new healthy foods now, stuff I would have never been introduced to if it wouldn’t have been for you, like Matcha, never heard of it before your blog. I tried it, found out I don’t like it but yet I know what it is now and there have been several recipes I’ve tried and loved! I’m thinking about moving to Charlotte in a year and was curious as to how far things are from each other? Do you have to drive super far to get to your river walk or go hiking, out to eat at all these places, get downtown, etc? I know you always post about Crowders peak, but are there other mountains for hiking? I’m currently in Chicago and I’m so over it, originally from Asheville and I miss all the hiking/outdoorsy things to do and better weather but I know jobs are sparse there so I figured Charlotte was a happy medium for me.

The Riverwalk is about 30 minutes from uptown, but Charlotte is FILLED with running paths and cute parks. I drive about 45 minutes to get to the mountain to hike. There are mountains surrounding charlotte. It’s close to the beach, close to the mountains and so on. I used to liv in Chicago and love Charlotte a lot more! Don’t get me wrong, I loved Chicago but the cold, the traffic, and everything was so hard to get to. Also so many jobs in Charlotte!

My favorite salad combination is spinach, hard-boiled egg, red onion, cucumbers, peppers, and gorgonzola cheese with a balsamic vinaigrette! It is my go-to for work week lunch.
I like the daily entries for the week, because I also read it to start my morning at work (with my coffee also, of course!). The catch-up posts are fun for the weekend! 🙂
My fun-filled Friday night plans include hitting the gym after work, then going home to snuggle with my dog and fiancé on the couch!

I always like a mexican salad! corn, black beans, pico! but sometimes i like everything but the kitchen sink salads: pasta, veggies, meats, pretzels, cheeses…whatever! Friday night includes wine and dinner with the family.

I don’t normally get headaches when I run. If I do, it’s becuase I’m super tired or super dehydrated. Are you drinking enough water? Also, if it’s super sunny, that could cause the headaches. Try getting some sports sunglasses.

I love the daily posts! Reading them and seeing all of your beautiful nature walk photos and creative healthy meals when I’m at work each day motivates me to keep my own life on track. Your blog is definitely a huge source of positive motivation to me, and is often the reason I am pushed to make healthier choices and get to the gym or outdoors for more exercise each day! The long recap posts are great, but sometimes hard to follow when they cover so much time.

Your pups are SO cute!! I love salad with fruit on it! Blackberries, strawberries and blueberries always remind me of summer and help me get the Detroit winter blues to go away! I like the shorter posts! This Friday my boyfriend & I just got a ton of stuff done! We did our workout, cooked up a yummy dinner, watched an episode of our new show (Better Call Saul- spinoff of Breaking Bad) and I’ve got some studying to catch up on. 1. I love love any kind of salad. I eat salad pretty much every single day for lunch. I switch my proteins up between grilled chicken or tuna. Then I add just about any and every salad topping I’m in the mood for (I try to stay healthy) cucumbers, cherry tomatoes, bell peppers, olives, sunflower seeds, chopped almonds, broccoli, cauliflower…and then a dressing to top it off (healthy again) lemon juice, olive oil, coconut aminos with a drizzle of toasted sesame oil. Really depends on what I’m in the mood for!
2. I love your longer blog posts! It’s awesome to see what you do in a week. You’re always so busy doing such fun and interesting things! Love your recaps 🙂
3. My Friday night is going to be spent lounging on the couch watching a Lifetime movie. It’s not often I get a friday night off. I’m in grad school, work a full time job and TWO part time jobs. A free friday night is like a holiday to me!

Gosh, so beautiful there. I wish I could walk trails by rivers and ponds. Lol, but I’m terrified of birds so I avoid this areas XD
1. I loves salads and it may sound weird, but all I really need is just good ole lettuce / kale and either strawberries or tomatoes.

I’m going to be taking a trip to Charlotte (and exploring surrounding areas) in the next few months to see if my husband and I may want to move there–it’s between FL and NC. I’ll be looking through your old posts to get some ideas of good food places, but I thought I’d suggest a post of your suggested top places to visit/see when visiting Charlotte or North Carolina in general. Hi! Gorgeous pics-its still too cold where I am to walk on a regular bssis especially in the morning. I’m getting cabin fever but spring is around the corner!
My go-to salad combo is lettuce (any kind), avocado,croutons, bolthouse yogurt ceasar dressing, red onion, green pepper, and crab! It’s insanely good and filling.
I like more updates even if that means shorter posts 🙂
Friday night was Cracker Barrel night with my husband (I think this is a national restaurant chain but maybe not?) They have the nicest staff, the coziest atmosphere, an awesome gift shop, and the best comfort food!

i dont mind longer posts or shorter posts but if i had to choose id say more frequent short posts are my favorite.
My favorite salad combo is feta, kalamata olives, tomatoes, zucchini, and croutons.

I call myself the salad queen although it probably isn’t true lol. One of my favorites is grapefruit slices, mixed greens, pistachios (or almonds), cooked and diced turkey bacon, avocado and cucumber. For the dressing, you combine juice from the grapefruit with a little bit of olive oil. You are probably like, “gross” but I HIGHLY recommend giving it a try. I know you are not a big fan of grapefruit so maybe strawberries or another fruit would be good instead!

I love fruity salads! Yum! Those photos of the river walk are fabulous! Looks like a great running route. I love pretty much any kind of salad combos- as long as its with dark leafy greens! I think shorter posts are great for keeping the reader engaged- but I don’t have a specific preference.

I am so glad that you and Nick broke up. I’m not trying to be a bitch but I think you are a very independent girl and he pulled you down a bit. Your blogs are better now and you seem much happier. I love seeing all your energy throughout the posts now. Please don’t take this the wrong way but I just think you are way better off with someone who fits your lifestyle. I never say nick run with you or cook. A lot of healthy living bloggers get their husbands involed and he seemed like he didn’t care about anything other than his sports.
