I didn’t know what to cook on Wednesday night. I never really know what I want until I start digging around the kitchen pulling ingredients onto the counter. I had peas, chicken, broccoli, olive oil, seasonings, arugula, and couscous in front of me. Light bulb! Flaxseed chicken fingers with cheesy broccoli and couscous! The other ingredients went back into the fridge! I’ve made breading with flaxseed before and it never failed me. My favorite are the mozzarella sticks and the baked cod.
Ingredients For Breading: 1 cup ground flaxseeds, 2 tablespoons light brown sugar, 1/2 tablespoon garlic powder, punch salt, pinch of pepper, and a 1/2 tablespoon of bread dipping seasoning (or blend of all seasonings).
Other: 1/3 cups olive oil, 1 large egg, 1 lb boneless, skinless organic chicken tenders.
Cheesy Boccoli: Your choice pasta, 3 tablespoon olive oil, 2 tablespoons milk, 1 cup cheddar cheese, 1 tsp garlic powder, 1/4 tsp salt, pinch of pepper.
Couscous: 1 Box wholegrain organic couscous prepared, 1/2 tablespoon garlic powder, 1/4 tsp salt, 1/4 tsp onion powder, and 3 tablespoon parmesan cheese.
Heat oven to 400 degrees!
Mix all the breading ingredients together in a bowl. Use your hands to break down the brown sugar with the other ingredients.
Rinse chicken.
Crack the egg into the olive oil and mix well.
Dip the chicken into the egg mixture.
Coat the chicken with the breading.
I like a thick breading, so I use my fingers to press it down. If you want a light coat, just simply place the chicken in the mix on both sides without pressing it down.
Place the chicken aside and coat them all.
Spray baking sheet with cooking spray and place the tenders on it.
Bake for about 10-12 minutes. It really depends how your oven cooks and how thick your chicken is. I always use the thickest piece as the tester to determine if they’re done. You never want to eat raw chicken.
I prepared the broccoli and couscous while the chicken was baking away. I used to have an obsession with the cheesy broccoli in the steamer bags, but thenI read how bad they are for you. That doesn’t mean I have to give up all cheesy broccoli, but I will have to spend more time preparing it. That’s ok because it’s very simple!
Cheesy Broccoli:
*Steam broccoli (about 4 cups)
*Cook pasta! (2 cups)
*In a little sauce pan on medium heat, cook up the olive oil and milk. Stir in cheese and seasonings. Once the cheese is slightly melted, add the broccoli and pasta and combine!
The couscous is simple! After I prepared it with box instructions, I just added all the seasoning in!
I was very happy with how these turned out. The sweet breading with the seasonings really covered up the flaxseed flavor. It was crisp and everything you could ask in a chicken tender!
