I’m going to try to fit this really quick update post in because I have friends in town and a busy day ahead of me! But, as I always say, “a quick post is better than none.”
Thursday afternoon, I couldn’t stand being inside any longer. It was 102-105 degrees out. I put on shorts and a tank and went off for a three-mile run. I made sure to hydrate myself, bring some water, and take the miles slow.
I jumped in the pool with full clothing afterward.
Later in the evening, around six, I grabbed some Dunkin Coffee and headed to the peach stand in Fort Mill, SC.
The peach stand is such a cute little market. They have local foods, fresh produce, ice cream, desserts, and almost anything you need or want!
I picked up some of my favorite BrukBars! I love supporting the local business & the couple who makes these are super nice!
I also picked up some delicious peaches and whole-grain muffins for breakfast.
Yesterday afternoon, I was out and about getting ready for some friends to come in town. I needed to stop and grab a quick bite to eat. I chose Moe’s because it was really close and they have great salads! I ordered the grilled chicken salad with salsa, guac (yes I know it’s extra) light on the cheese, rice, and beans. I usually use salsa as my dressing.
I had half and saved the rest for later today 🙂 I knew I had to save room for a big dinner at my favorite spot in Waxhaw, Rippingtons.
We also started with the southwest spring rolls because they are the best tastin’ things! If you ever go to Rippington’s, you must try these! We had five people at the table and we all had one! They were the hit of the night.
I had to take them to my favorite place for dessert, as you all know, the Waxhaw Creamery. I split a scoop of pistachio almond and a scoop on maple walnut.
We took our ice cream and walked over the bridge to the Haunted House!
I’ve talked about this house in a lot of my posts! (haunted coffee walk) I should start a haunted house wine & walk tour in Charlotte because I love this stuff. Thankfully my friends do too!
The creepy thing about this house is that it is in fact abandoned. No one lives there. No electricity runs to the house and all the windows are broken and the doors are open. Either someone was in the house as a squatter watching someone on an iPad or it was a ghost. We all stood outside trying to figure out what was going on in there. I’m going to bring binoculars next time. We were all pretty creeped out. It started raining and lightning and we had to rush back! We had quite the storm to top off the haunted house watch.
This morning, we had a yummy little brunch with fruit, granola, and yogurt!
