After crafting up a storm Tuesday morning, I took a breakfast break around noon. I guess it was more of a brunch. I made one of the best omelets yet! The goat cheese avocado omelet! I’m all about the avocados lately. It had 4 egg whites, 1 egg yolk, goat cheese, avocado, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tablespoon light cream, pinch black pepper, pinch sea salt, and 1/4 cup sautéed onions.
Mix together the eggs, seasonings, cream, and pour it into a greased pan on medium heat. Once the bottom side of the omelet is cooked, sprinkle in the goat cheese, avocados, sautéed onion (and other veggies of choice) and fold it over. Allow the insides to cook and add it to a plate, and top with extra avocados.
I served mine with apple slices, an english muffin with raspberry jam, and coffee!
