Bacon Cheese Quesadilla & Vegetable Quinoa

Some of the best tasting meals come from groceries leftover from previous meals. Last week, I took a break from my work and headed to the kitchen to get something to eat. There weren’t many things left because I hadn’t gone grocery shopping in a long time. I was going to order Jimmy Johns, but instead I decided to make something from whatever was left in the house and it wasn’t much.

I had an avocado, cheese, bacon, two bell peppers, and a box of vegetable quinoa on the counter. I thought about making a quinoa cheesy bacon stuffed bell pepper, and then I thought about toasting the tortillas and topping them with all the other ingredients but finally I decided to make quesadillas.

I cooked up the bacon in the oven, sautéed the bell peppers with olive oil on the stove, and then added both to a tortilla with cheese. I then cooked the tortilla on the frying pan with olive oil. I cooked up the quinoa separately, but I’m sure it would have tasted good in the quesadilla as well.

For not having a game plan or many things in the house to work with, I was pretty impressed with the outcome! I ended up eating the leftover quesadilla for dinner.

    I haven’t tried quinoa yet. What does it taste like? I’m hoping like some sort of rice taste. I bought two flavored quinoas and one red version. I may make some tonight and put it over these 15 bean “soup” mix beans I made yesterday. I don’t use the ham broth packet the beans come with; I make mine in a crockpot with chicken base, drain, then add them to warmed corn tortillas with kale. Have you tried mung beans yet?
