Unfortunately my brother is gone and breakfasts like this won’t be served anymore unless I get up and make it myself. T.C., my brother, is the breakfast king. He takes his omelets, breakfast burritos, and breakfast hash very seriously.
Yesterday morning, he made this easy and delicious breakfast recipe with ingredients already in the house. He used the potatoes, onions, and peppers from the Kabobs the night before, and who doesn’t have eggs?
First, he softened the potatoes by boiling them, diced them up and added them to a sautéed pan with olive oil to brown them. After they were browned, he added bell peppers and onion. He cooked the egg separately and then added them! He seasoned it with lawry’s, pepper, garlic powder, and onion powder!
He wrapped his up in a burrito, and I just ate mine as is with a dab of ketchup! My brother also added vegetarian sausage to his.
I love creative and filling breakfast like this!
I’m not a huge fan of fried potatoes like hash browns, but I love breakfast potatoes like this! YUM!

Boiling the potatoes and then cutting them up to fry again is something I’m much too Lazy to do, haha! I dont like double cooking, and thats why I need someone like Nick in my life.
