I’ve had a lot going on these the past couple of days, hence the lack of blogposts. My brother came into town Friday night, and we adopted a puppy. Nick has a lot of time saved up in the books and so he took Friday off to spend it with me. We went to our favorite little town, Waxhaw, and had lunch at Maxwell’s Tavern. We’ve gone to most places in Waxhaw, but not Maxwell’s yet! It was a really fun looking tavern and would be a great spot for watching games or hanging out with friends.
I haven’t had chicken wings in over month and so to reward myself from all the running and workout goals, I ordered a bourbon wing appetizer to split with Nick.
For my meal, I had the grilled chicken salad. It came with eggs, tomato, cucumbers, croutons, cheese, lettuce, and a side of dressing.
After Waxhaw, we headed to the grocery store and then to Nick’s parents house. We bought all the ingredients for seafood Alfredo so Nick’s dad could make it for my brother! It’s the best dish in the entire world! It has crab, shrimp, scallops, tortellini, and his delicious homemade Alfredo sauce! I call it RALF-redo sauce!
T.C. arrived around eight and we had dinner. It was nice seeing him since he’s been gone.

That seafood alfredo looks amazing. You have inspired me to try new salads for my family and I wanted to share one we had last night. It was a HUGE hit with my husband and 8 year old daughter. It is a Southwest Chicken Salad. So easy, so yummy and so filling.
Black beans, corn, your choice of salad greens, grilled chicken, shredded cheddar and top with some tortilla strips. I found a light Fiesta Salsa dressing that made it complete. Perfect for those that enjoy mexican food!
