I found this recipe back in the media vault. I forgot it existed, and I’m not sure how I forgot because it was so darn good. A month ago, I went to the Charlotte Knights game and then had everyone over to watch a movie and have cupcakes for Emilee’s birthday. Emilee and I made a ton of quesadillas to use up the rest of the bourbon chicken. If I had a restaurant, these babies would totally be on the menu. They had a unique taste that you couldn’t get enough of.
Here is the recipe for the crockpot pulled bourbon chicken…
For the quesadillas, you’ll need large tortillas, cooking spray, shredded cheese, and bourbon chicken.
-Spray the tortilla with cooking spray.
-Heat a panini/indoor grill to 350 degrees.
-Lay one tortilla onto the grill, top it with 1/2 cup of bourbon chicken, 1/4 cup of cheese, and add another tortilla on top.
-Press the grill down and let it cook for about 5 minutes.
You could cut these into squares and serve them as appetizers at a football party.

I made the chicken last night, I couldn’t find any bourbon glaze, so I improvised, but it smelled so good when I shredded it this morning!
