Yesterday, I told myself that I was going to cut back on dining out, eating junk, and I’m going to workout more. Sometimes life gets in the way and our health gets pushed back. So, today has been on track! I started my morning is a run, had a healthy breakfast, and a healthy lunch. Later today, I am going on a six mile walk with Emilee and then going to cook something healthy and light for dinner.
To me, eating healthy involves lots of fresh produce, nutrient dense foods, protein, fiber, and easy on the carbohydrates.
For lunch, I decided to make some eggs for a quick natural protein fix. I like to eat more egg whites than the yolks. The yolks contain healthy fat and as much cholesterol as your body needs. I cracked one large egg into a heated skillet and six additional egg whites. That’s a lot of protein! It’s kind of like a sunny side up omelet.
As soon as the bottom of the egg fully cooked, I flipped it like an omelet and cooked it again on both sides for about 30 seconds a piece.
I had a 1/2 cup of broccoli salad and quest protein chips with the egg! This is the type of lunch that you can make quick and it keeps you full for hours. After a weekend full of heavy food, this is exactly what my body needed. This meal had over 41 grams of protein in it. I like to make sure that ever 100 calories I take in has at least 10 grams of protein. I like my carbohydrates to come from fruits, vegetables, and whole grains.

I’m like that too-in the way that I want to make sure that each meal I have at least has 10 grams or so of protein in it. 🙂

I love eggs, and I always feel so good when I eat them. Do you save the yolks after you use the whites or do you toss them?
