Back to the Carolinas: Pancakes & Cobb Salad!
I’m so happy that all of the road trips are out of the way…for now. Thankfully my drive was lovely yesterday! The sun was out, the weather was nice and I hardly hit any traffic. There were a few traffic congestion points, but I’ve seen worse. I only made a couple stops, one to Starbucks and the other to get gas.
This post isn’t that interesting, but I thought I’d share some of my recent meals and let you know I’m posting my brother’s kale salad recipe after this!
For dinner, I had a Southwest Cobb salad from McAllister’s Deli. It came with chips, guacamole, chicken, cheese, lettuce, grilled corn, tomatoes, and chipotle ranch.
This morning I treated myself to a giant blueberry pancake at The Broken Egg Cafe with a side of bacon and scrambled eggs! I have been craving a pancake for about a week now! I finally got it!
I love a good cobb salad! Yum!

Btw! You should try their chipotle peach dressing 🙂 it has bit of a kick but its amazing with a garden salad and some chicken 🙂

Tara Lynn, I have been wanting to try another broken egg because I was craving pancakes this AM too! I went for BBQ instead. I live in Post Ballantyne and love Bad Daddy’s Burgers! You should check it out! I’ll go with ya!!
