Pistachio Chicken Salad!

Good morning everyone!

I’m currently trying to type and blog while walking the forest walk on the treadmill. I read an article the other day that said it’s easier to think when your body is exercising. I’m not sure if that is applying to me yet. Maybe it’s because I’m half focussed on the big buff man lifting weights in front of me. Not a bad view. But, to be honest, when I’m on a treadmill, I get extremely bored! Working and working out at the same time is making the time fly by. Also, I’m in my apartment’s gym so it’s not as awkward. Anyways, I wanted to share another salad fix with you. I made this one a while back when I was visiting home. It’s always the random salad fixes that taste the best.

In this salad, I have grilled chicken (cold), pistachios, cold leftover green beans, hardboiled eggs, croutons, and it’s tossed in a ginger sesame dressing. And that’s it! So easy:)

Tonight, the girls and I are going to a bbq, and I want to make a dessert! What is your favorite semi-healthy dessert to bring to a bbq?

  1. Nilla Wafer pudding! Made with vanilla pudding, bananas, whipped topping, and nilla wafer cookies.
    It’s a delicious southern specialty but you can definitely make it healthier!

  2. Definitely your fruit pizza Taralynn! My family and friends always rave about it, and I swear I could eat the whole thing all by myself. 😉

  3. For healthy desert ideas I would bring fruit kabobs (strawberries, watermelon and grapes) and chobani as the dipping sauce. Super healthy!

  7. Well that looks yum! I wouldn’t put eggs on mine because although I love eggs, I HATE them hard boiled. immafreak. I’m not a huge dessert person so normally if I have to bring something sweet, I resort to fruit kabobs!
