Last Saturday night the weather was cold and I was exhausted from all the running around town. I made a quick dinner for my night in. I spent the evening working on my gingerbread ornaments while watching Christmas movies.

I picked up a rotisserie chicken from Nino Salvaggio’s. It’s so much easier than preparing and baking the chicken on lazy nights.

I prepared the quick sesame green beans because they are our favorite.

For the butternut squash, all I did was dice it up, added garlic and onion seasoning with a drizzle of olive oil. I baked the squash for 20 minutes at 425 degrees. I also flipped it every five minutes or so!
