Sometimes when I’m craving cake, I go for something healthy. Instead of diving into the kitchen to slave away baking, I do it the faster way. And no I don’t run to the store, I use the microwave! Here is one of my quick healthy “cake” fixes.
Ingredients for “Cake”: 1/4 cup pumpkin pure, 1 egg, 1/2 tsp vanilla, 1/8 teaspoon baking powder, 1 tablespoon almond flour, 2 tablespoons unsweetened applesauce, 1 tablespoon vanilla protein powder.
Mix all ingredients together and add them to a microwave save bowl. Microwave for three minutes.
Icing Ingredients: *1/4 cup unsweetened coconut milk, *1 scoop or three tablespoons vanilla protein powder (or chocolate), *1 teaspoon ground cinnamon.
Mix together and let it chill in the refrigerator for 2-3 minutes.
