I am still on my trip, but I wanted to put together a couple photos for you. I hate not updating my blog everyday, so a little update post is better than none. I gathered a few instagram shots and added some descriptions. I promise to return with some great recipes and post next week!

Spending time with my mom for mothers day! The bottom photo is a instagram of all the goodies we picked up at the Dutchman’s store. There is a larger image on my instagram.
Red Hot Angel Food Cake
One of my mom’s favorite desserts, red hot angel food cake. All you need is a box of Organic angel food mix and a cup of red hots. Angel food cake is actually much better for you than regular cake. My grandpa use to make this all the time. I think it brings back good memories for my mom which is why she enjoys it so much.
Cranberry Coconut Side Salad
2 Cups Salad Greens, 2 Tbsp Croutons, 1/2 Tbsp Poppy Seed Dressing, 1 Tbsp Unsweetened Coconut, 1 Tbsp Dried Cranberries.
Roasted Veggies
-Sliced and baked sweet potato with garlic powder and pepper.
-Roasted asparagus with black pepper, onion powder, & garlic powder.
-Steamed & roasted broccoli with garlic powder and 1 tbsp cheddar cheese.
I paired these veggies with grilled shrimp.
Movie Night Snack
Air popped popcorn with cranberries & walnuts. I always burn my popcorn on purpose…it’s delicious!
Jeremy, his parents, and my parents sat around the fire for a nice mother’s day ending.
After a long weekend, I was ready to dive right in.
