Tropical Shrimp & Squash

Tonight, dinner is all up to Grumples! Not really, but I’m sure he would have chosen shrimp too. I bought way too much at Whole Foods yesterday. I’ll be eating shrimp for a week straight. No complaints tho!

There are so many ways to cook shrimp, but I settled for the lazy way.  The “pop it in the oven and roast it” method. I chopped up a large summer squash and two large zucchinis. I mixed them in a bowl with 1/4 cup organic crushed pineapple, one cup medium uncooked shrimp, and 1 tsp brown sugar. After laying the shrimp and veggies out on a non-stick pan, I sprinkled Tutu’s organic Hawaiian and black pepper seasoning on top.

I baked for 20 minutes at 375 degrees.

I also had a side salad with: romaine, cottage cheese, edamame and black bean salad from whole foods, croutons and chickpeas.
