Cookies n cream cupcakes I had to make for a party. This was challenging because I couldn’t test taste them.They weren’t vegan and I’m on my 13th day of vegan month. I was told they were great, so it all worked out okay 🙂
Vanilla Cake Batter:
- 2 Cups Flour
- 2 Tbsp Cake Flour
- 1/2 Tsp Salt
- 2 Teaspoons Baking Powder
- 1/2 Cup butter (Softened)
- 1 Cup Sugar
- 2 Eggs
- 1 Cup Milk
- 1 Tbsp Vanilla Extract
- Preheat oven to 375
- Line pan with cupcake liners
- In an electric mixer blend butter and sugar until fluffy.
- Slowly beat in eggs.
- Mix in a separate bowl flour, baking powder, and salt together.
- Add dry ingredients to mixer.
- Slowly beat in vanilla and milk
- Add 1/2 cup to each liner
- Bake for 20 minutes.
Frosting :
- 3/4 Packet Oreos
- 1 Cup Unsalted Butter
- 1 Tbsp Vanilla Extract
- 1/4 Cup Heavy Cream
- 6 Cups Confectioner’s Sugar
- In an electric mixer combine powdered sugar and butter until it’s crumbly
- Mix in Vanilla
- Mix in Cream 2 Tbsps at a time until creamy.
- Add Oreos to zip lock back and crush.
- Stir in Cookies
