Last night for dinner I brought home a large salad from Whole Foods for Jeremy and I. I added broccoli, craisins, curried carrots, croutons, cucumbers, peas, peppers, onions, and romaine lettuce. There was a little left over so I threw it into my lunch container. I added a little cottage cheese as well, lately I’ve been using it as my dressing, plus it adds in more protein. On the bottom right is a peanut butter and jelly sandwich, but not your typical peanut butter and jelly. I used Village Hearth bread, Pb2 Powder, and No sugar added jelly. It tasted exactly like a regular peanut butter and jelly just 1/2 the calories and fat. I bought the jelly and Pb2 Powder at Whole Foods, so people who don’t wish to use additives can find it there as well. On the Top right I have a small honey-crisp apple, and a single serving of 100 calorie black soft licorice. I can’t wait to dive into this at lunch.
