Thank goodness it’s Friday! I can’t wait to go home this weekend for Mothers Day! I made a light lunch today because I know I’ll be enjoying Mom’s home cooking tonight! On the bottom of the lunch container is a broccoli slaw salad. I’ll post the recipe later tonight when I get off work, but it’s basically just broccoli slaw, broccoli, craisins, chow mein noodles, dates, sunflower seeds, water, and truvia. On the top right is Chobani and Mio with 2 tbsp of tropical trail mix. I love adding trail mix to my lunches because not only does it give me energy it helps with my sweet cravings. On the top left I have a peach salsa with a toasted 50 calorie tortilla.
