I baked some oatmeal breakfast cookies and these peanut butter cookies a couple Sundays ago. They were SOOO good and I wanted to share the recipe with you before falling asleep (hello midnight!) I’m so bad when it comes to peanut butter cookies, I can’t stop. I want more and more and more, especially if my mom made them. She makes the best! I decided to make a healthier version just incase I couldn’t stop. They are a little spin off from my other almond flour based cookies!
They turned out just as good as the real deal and I know I’ll be making this recipe again. My dad had no idea they were “healthier.” I love them crumbled up on Halo Top ice cream, dipped in almond milk, before or after a workout and for dessert! If peanut butter cookies are your favorite, you have to try these!
PROTEIN PEANUT BUTTER COOKIES
Ingredients
*2 & 2/3 Cups Almond Flour (Not Packed Down)
*1 Tsp Baking Soda
*2 Tsp Pure Vanilla
*1/4 Cup Honey
*3/4 Cup Peanut Butter
*3 Packets Stevia
*3 Scoops Vanilla Protein Powder
*2 Large Eggs
*4 Tablespoons Melted Coconut Oil
What to do?
Preheat oven to 350 Degrees.
Mix the almond flour, protein powder, peanut butter and baking soda together.
In a separate bowl, mix together eggs, vanilla, and honey.
Mix together the wet ingredients into the dry ingredients bowl.
*If it’s too runny, add more almond flour. If it’s too dry, add more peanut butter!
Place the cookie batter in the refrigerator for 20 minutes to firm up! This will help you form the cookies.
Drop the cookies onto the sheet. (about 1 & 1/2 tablespoon) The dough is trickier to work with because it has no flour. Don’t be afraid to get those fingers sticky! Place them on the GREASED baking sheet and press down into a cookie form with your fingers. Use a fork to give them the indent.
Bake about 10-11 minutes. Let them cool for about two minutes. (The edges will be lightly brown & the centers will be super soft)
Remove from the baking sheet and add to a cooling rack or a separate plate.
This recipe makes about 38-40 cookies (1 &1/2 tablespoon sized)

Yum! I am definitely going to try this! I might even try with different sort of nut butters too (have you tired cashew butter? It’s amazing!)

2. Yes – being gluten free I bake with almond flour a lot. But it expensive!

If you have a Trader Joe’s around you, get their almond meal! It’s much cheaper and pretty much the same thing!

Sadly, I have no trader joes near me as I live in New Zealand. One bag of almond meal/flour is about $17!) So I make sure I ration 🙂

Yum!! Definitely making these 🙂 Question, do you use truvia stevia packets? that’s what I have but I know those packets are bigger than others. Also are 38 cookies really only 85 calories total?! Sounds too good to be true 😛 I have a feeling that’s just for one cookie, right?

Ooo!!! These look yummy! I might have to make an adjusted version of these for my hubby — he really likes his peanut butter cookies! I don’t know if I have a specific favorite cookie, but I do really like gingerbread cookies. And, no, I’ve never cooked with almond flour before; I tend to use whole wheat flour for almost everything.:)
