Pumpkin muffins are everything right now.
While I was shopping a couple weeks ago, I found a box-mix for almond flour pumpkin muffins and had to try it. First off, almond four is expensive! If I was going to make an almond four muffin from scratch (which I still love doing) it would cost double than just buying a box. Just a great deal for only $4.99!
When you don’t have a lot of time to make something or don’t feel like getting too fancy, box mixes are the way to go. Sometimes they can be really unhealthy, but there are a lot of better-for-you boxed products out there.
I found this one in the baking section at Earthfare.
These were so quick and easy to make (boxed, duh).
Just add eggs, oil, and water. I used coconut oil for mine.
Bake and done!
No leftover cans of pumpkin, no flour mess to clean up, and no expensive leftover almond flour to find a use for.
Naturally high in protein and low in carbohydrates
Grain, gluten, dairy and soy free, paleo-friendly, low-glycemic and non-GMO!
Let’s talk about the taste.
No one could tell that they were made with almond flour and so healthy (compared to most pumpkin muffins). They had a lot of spice to them and you could taste the pumpkin flavor in every bite. It’s a pet peeve of mine to have a pumpkin flavored dessert with a huge lack of pumpkin flavor!
So I give these an A+

How do you swap for coconut oil – is it typically the same amount as the regular oil in the recipe?
Taralynn McNitt says
I used the same ratio! No more or less and these worked great.

Taraylnn,
I went to Earthfare! Oh my gosh! I fell in love. My boyfriend and I went there for smoothies, but came out with salads and pumpkin tortilla chips. I could not believe that place! I could spend hours in there. I posted on my blog about my trip there as well as my Charlotte Adventures: http://thesweetlifediaryofahealthnut.blogspot.com/2015/10/how-about-little-bit-of-my-charlotte.html
I just wanted to say thank you so much for all of your ideas and inspiration. You do not get enough appreciation, so I just wanted to personally say thank you for everything you do! I hope to meet up with you someday! Safe travels to DC.
