Almond Flour Pumpkin Muffins
Pumpkin muffins are everything right now.
While I was shopping a couple weeks ago, I found a box-mix for almond flour pumpkin muffins and had to try it. First off, almond four is expensive! If I was going to make an almond four muffin from scratch (which I still love doing) it would cost double than just buying a box. Just a great deal for only $4.99!
When you don’t have a lot of time to make something or don’t feel like getting too fancy, box mixes are the way to go. Sometimes they can be really unhealthy, but there are a lot of better-for-you boxed products out there.
I found this one in the baking section at Earthfare.
These were so quick and easy to make (boxed, duh).
Just add eggs, oil, and water. I used coconut oil for mine.
Bake and done!
No leftover cans of pumpkin, no flour mess to clean up, and no expensive leftover almond flour to find a use for.
Naturally high in protein and low in carbohydrates
Grain, gluten, dairy and soy free, paleo-friendly, low-glycemic and non-GMO!
Let’s talk about the taste.
No one could tell that they were made with almond flour and so healthy (compared to most pumpkin muffins). They had a lot of spice to them and you could taste the pumpkin flavor in every bite. It’s a pet peeve of mine to have a pumpkin flavored dessert with a huge lack of pumpkin flavor!
So I give these an A+

These look so good! I just bought a gluten-free pumpkin muffin box mix from Trader Joe’s last week. I can’t wait to try them! I need to look out for this brand. Coffee and a muffin is the perfect way to start the day 🙂
Let me know if their brand is any good! I LOVE TRADER!
Does Nick like these? Looking for ideas for my boyfriend’s birtday
Nick doesn’t like pumpkin. But anyone who loves pumpkin, will love these!
Wow these look so good!! i wonder if i could sub a flax egg for the egg??
I’ve never experimented with flax egg! Could be worth a shot!
These sound fabulous! I love that they use almond flour as well! Such a great thing for those of us eating a gluten free diet! And $4.99 that is so cheap! Really hoping I can find them!
If you can’t find them at the store, I know Amazon sells them!
How do you swap for coconut oil – is it typically the same amount as the regular oil in the recipe?
I used the same ratio! No more or less and these worked great.
I love that this boxed mix is gluten-free and super healthy! Ill have to buy it asap!
Makes life so much easier 😉
I have been on a mission to find as many pumpkin recipes as possible this fall! This one is certainly going on the list. Thanks for sharing!
