Almond Flour Pumpkin Muffins

Pumpkin muffins are everything right now.

While I was shopping a couple weeks ago, I found a box-mix for almond flour pumpkin muffins and had to try it. First off, almond four is expensive! If I was going to make an almond four muffin from scratch (which I still love doing) it would cost double than just buying a box. Just a great deal for only $4.99!

When you don’t have a lot of time to make something or don’t feel like getting too fancy, box mixes are the way to go. Sometimes they can be really unhealthy, but there are a lot of better-for-you boxed products out there.

I found this one in the baking section at Earthfare.

These were so quick and easy to make (boxed, duh).

Just add eggs, oil, and water. I used coconut oil for mine.

Bake and done!

No leftover cans of pumpkin, no flour mess to clean up, and no expensive leftover almond flour to find a use for.

Let’s talk about the taste.

No one could tell that they were made with almond flour and so healthy (compared to most pumpkin muffins). They had a lot of spice to them and you could taste the pumpkin flavor in every bite. It’s a pet peeve of mine to have a pumpkin flavored dessert with a huge lack of pumpkin flavor!

So I give these an A+
