One of my favorite foods growing up was my Grandma’s butter and radish sandwiches. NOT! Just the thought of it grossed me out. She used to make us cousins lunch with these sandwiches. It consisted of : butter, white bread and radishes. I’m not sure what she was thinking. I used to pick off the radishes and butter, eating what was left of the bread. Healthy, right? I love her to death, but I’ll pass on the sandwiches next time. It took me a while to create a taste for radishes, but once I did, I was hooked. I love the crunchy texture. They are perfect for salads. They are also perfect with cream cheese and flax cakes!
-Slice 1 large radish.
-Mix together : 2 tbsp low fat cream cheese, 1/2 tsp dill weed & 1/8 tsp garlic powder in a small bowl.
-Add 1 tbsp of cream cheese mixture onto each flaxseed cake.
-Top with radishes.
