*make sure the butter is not too hot, or it has the chance to cook the eggs while mixing. 

Beat in the eggs and vanilla.

Step Two:
Sift together the flour, sea salt, baking soda, baking powder, cinnamon, ginger, cardamom, cloves, and allspice. Slowly add the sifted ingredients into the wet mixture and mix until just combined and avoid overmixing.

Step Three:
Add the grated carrots, strained pineapple, and pecans to the mixer. Mix on low speed for about 10–15 seconds. Scrape down the sides of the bowl, then mix again for another 5 seconds.

Step Four:
Grease a 9 x 13 cake pan and line it with parchment paper. Pour the batter evenly into the pan.

Step Five:
Bake for 30–35 minutes, but keep an eye on it, as ovens can vary. Use the toothpick method to check if the cake is done (the toothpick should come out clean). Keep in mind that the cake will continue to cook slightly as it cools. Avoid overbaking to preserve its moist texture.

How to Make The Best Vanilla Cream Cheese Frosting

Step One:

Step Two:
Add the cream cheese, melted butter, and half of the powdered sugar to the mixer. Mix on low speed (adding half of the powdered sugar first helps prevent the butter from splattering when it meets the cream cheese). It’s also helpful for the cream cheese to be at room temperature.

Step Three:
Once combined, add the rest of the powdered sugar, vanilla, and milk.

Step Four:
If the frosting is too thick, add more milk. If it’s too runny, add more powdered sugar. Give it a taste test to see if it needs more vanilla or additional cream cheese for a stronger cream cheese flavor.

  • 7 Cups Powdered Sugar (more or less)

Have you ever wondered how someone came up with carrot cake? I used to think the same thing about zucchini bread until I researched it.

Well, I went down a rabbit hole of carrot cake history, and here’s what I learned:

The origins of carrot cake trace all the way back to medieval Europe, when sweeteners were too expensive and not easily available. Carrots, known for their natural sweetness (though I don’t necessarily agree, there’s fruit for that), became a popular substitute for sugar in desserts. Interestingly, carrots weren’t the only root vegetable used to sweeten treats. Can you imagine making a parsnip cake? Turns out, it exists! (Yes, I Googled it.) And believe it or not, there’s even eggplant cake! Who knew?

The modern carrot cake, the kind we know and love today, started to gain popularity in the 19th century. Back then, people made carrot puddings and began adding spices to enhance the flavor. Fortunately, sugar became more accessible, and they worked that into the mix too.

Carrot cake saw a resurgence during World War II, especially in the UK, when sugar became scarce again. The recipe became a beloved dessert, and its popularity grew. By the 1960s and 70s in the United States, carrot cake became a classic, especially when paired with cream cheese frosting, a combination that’s stood the test of time. Oh, and let’s not forget: everyone added raisins to their carrot cake back then. Luckily, we’ve collectively moved past that phase because, honestly, it was unnecessary.

    I made this over the weekend for my toddler’s birthday party and it will not be our family go-to carrot cake! I added walnuts and extra cream cheese.

    I could not taste the pineapple in recipe but enjoyed the tangy sweetness. I often try new carrot cake recipes when my dad visits on Sundays and he raved about how intense the spice meter was in this one. Not many, if any at all, add ginger to their carrot cake recipes but I now think it is a must. I liked the spice a lot. Have you ever made a english fog cake?
