Itโ€™s one of those dependable, go-to recipes that I can throw together for a last-minute get-togetherโ€”especially because I usually have all the ingredients on hand. No lemons? No problem. Iโ€™ve swapped in limes, oranges, or just added a little extra vanilla for a classic olive oil cake recipe. Iโ€™ve even turned it into a chocolate olive oil cake when Iโ€™m craving something richer. And you already know my fall favoriteโ€ฆ the pumpkin olive oil cake. Itโ€™s perfection.

This summer, Iโ€™m planning all the fun get-togethersโ€”with good food, friends, and this olive oil cake front and center. Itโ€™s the perfect dessert to share, especially topped with fresh summer fruit. And let me tell you, when peach season hits? Itโ€™s absolutely stunning with sliced peaches and a drizzle of honey. Almost too pretty to eatโ€ฆ almost.

Lemon Berry Olive Oil Cake with Whipped Cream Cheese Frosting

Ingredients
  

Lemon Olive Oil Cake
  • 1 1/2 Cups All-Purpose Flour
  • 1/2 Tsp Salt
  • 1 Tsp Baking Powder
  • 1 /2 Tsp Baking Soda
  • 1 Cup Sugar
  • 3 Large Eggs
  • 1 Cup Buttermilk
  • 3/4 Cups Extra Virgin Olive Oil
  • 1/4 Cup Freshly Squeezed Lemon Juice
  • 3 Tbsps Lemon Zest
  • 1 1/2 Tsp Vanilla Extract
Whipped Cream Cheese Frosting
  • 4 Ounces Cream Cheese
  • 1 1/2 Cups Heavy Whipping Cream
  • 1/2 Cup Sugar Divided
  • 1 Tbsp Vanilla

Instructions
 

Lemon Olive Oil Cake

  • Preheat your oven to 325 degrees. Grease a 9×3-inch cake pan, line the bottom with parchment paper, and lightly spray the top with cooking spray.
  • In a mixing bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  • In a separate bowl, whisk together the sugar, olive oil, and eggs until smooth. Stir in the buttermilk, lemon juice, lemon zest, and vanilla extract.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix!
  • Pour the batter into the prepared cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely before removing it from the pan. Dust with powdered sugar just before serving.

Whipped Cream Cheese Frosting

  • In a stand mixer or with a hand mixer, beat the heavy cream on high speed for about 3 minutes until it begins to thicken. Add 1/4 cup of sugar and the vanilla extract. Continue beating until soft peaks form and the mixture is light and fluffy. Scoop the whipped cream into a separate bowl and set aside.
  • In the same mixing bowl, beat the softened cream cheese with the remaining 1/4 cup of sugar on medium-high speed until completely smooth and lump-free.
  • Gently fold the whipped cream into the cream cheese mixture. Once mostly combined, beat on low speed just until fully incorporated and fluffy. Taste and add a bit more sugar or vanilla, if needed.
  • Top the cooled lemon olive oil cake with the fluffy whipped cream cheese frosting.

Lemon Olive Oil Cake โ€“ Ingredients

  • All-purpose flour (gluten-free flour works as a substitute 1:1 ratio)
  • Baking powder
  • Baking soda
  • Salt
  • Granulated sugar
  • Large eggs (room temperature)
  • Buttermilk (room temperature)
  • Extra virgin olive oil
  • Freshly squeezed lemon juice (If you do not have lemons, use extra vanilla extract, or any citrus fruit!)
  • Lemon zest
  • Vanilla extract
  • Fresh Berries (add the berries inside the batter, and on top for an extra summer berry twist!)

Whipped Cream Cheese Frosting โ€“ Ingredients

  • Cream cheese
  • Heavy whipping cream
  • Granulated sugar
  • Vanilla extract

Steps to Make the Lemon Olive Oil Cake

  1. Preheat the oven and prepare a round cake pan with cooking spray and parchment paper.
  2. Sift together the dry ingredients: flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the sugar, olive oil, and eggs until smooth.
  4. Add the buttermilk, lemon juice, lemon zest, and vanilla extract to the wet mixture.
  5. Combine the wet and dry ingredients, mixing until just combined.
  6. Pour the batter into the prepared cake pan and bake until a toothpick comes out clean.
  7. Let the cake cool completely before frosting or serving.

Steps to Make the Whipped Cream Cheese Frosting

  1. Beat the heavy cream until thick, then add sugar and vanilla, and whip to soft peaks.
  2. In a separate bowl, beat the cream cheese with sugar until smooth and lump-free.
  3. Fold the whipped cream into the cream cheese mixture and beat until light and fluffy.
  4. Frost the cooled cake with the whipped cream cheese frosting and top with fresh berries or fruit of choice.
