Bare with me, everyone. This is my first time writing on my new blog! I spent the past decade using a post editor from Genesis, and it was much easier than what my new theme, Kadence, offers.
Kadence is much harder to learn and more complex than my original editor, but it comes with so many more options and features. Once I get the hang of it, I think Iโm really going to enjoy it here.
The unfortunate part is that I have to go in and edit thousands of blog posts to fix the formatting. I could hire someone to do it, but I’m a mom who likes to spend money at Target and not on editors. Priorities? oops. Itโs not that easy since I have to convert a lot of them into blocks and re-upload files. So if things look a little funky around here, I promise theyโre being worked on behind the scenes!
Iโm spending my morning finishing up this blog post and then working on fixing all the broken links and images to make this site super user-friendly. I promise itโll be there soon!
Itโs been a while since Iโve written a recap blog, and I always regret waiting so long โ but this month has been busy and I havenโt had a lot of downtime to write.
My son has been out of school for most of the month because of breaks and holidays, Iโve had doctorโs appointments during the few hours he was there, and we even had a few weeks where my mornings werenโt really mine โ thanks to a little guy who decided that 4 a.m. wakeups were his new thing.
I hate to jinx myself, but this past week weโve had a very good sleeper, and Iโve had a little more time to myself in the mornings.
Weโve also been on Easter and Spring Break, so weโve been doing so much โ and Iโve been writing less โ which means this recap is going to be packed with photos!

Meals Lately:
Meals lately have been easy dishes I quickly throw together โ like eggs, toasted sourdough bread (which I need to make more of tomorrow!), hard-boiled eggs, salmon, roasted butternut squash, guacamole, turkey slices, protein oats, fresh fruit with local honey, peanut butter rice cakes, cottage cheese with Arctic seasoning, potatoes, small salads, quinoa, and turkey meatloaf. I did a “what I ate today” blog on my Substack last week.
Of course, Iโll snack in between meals on things my toddler doesnโt finish or things heโs snacking on โ like pretzels and gummies โ and I really need to quit that habit.

One of the cutest things that melts my heart is that after preschool every day, my son and a friend from his class meet each other in the field to pick dandelions. Itโs so adorable!
Summer Camp
My son’s school gets out in late May, and I decided to sign him up for his school’s six-week summer camp! It’s not a consecutive six weeks โ there will be some breaks in between โ but he is going to be so excited since he loves his school.
I wasnโt sure if I was going to do it because they require the kids to be potty trained, but now that heโs fully potty trained, we have him signed up for the fun summer camp! Itโs just a half-day, four-day-a-week program, but itโs going to keep him social and busy during some of the hottest parts of the year.
We’ll probably spend our afternoons at the pool, library, parks, and museums. I honestly cannot wait to have a summer with no bakery work or markets. Gosh, I know I loved that season of life, but it really feels good to have my house back in order, to be fully focused on being a mom, and to not be weighed down by to-do lists and deadlines.
Iโm telling you โ for me, the hustle was not worth my mental health declining. This summer is going to be so much fun! Especially at this age in his childhood.
Recipe of the Week: Turkey Meatloaf
Itโs always a win when you can get a toddler to try a new food โ especially something as simple as meatloaf!
This kid mostly eats chicken, rice, french fries, breakfast foods (unless itโs eggs), hush puppies, cucumbers with hummus, anything spicy, smoothies, fruit, and yogurt. Now that Iโm listing these out, I guess Iโd say heโs not as picky as some โ but he definitely doesn’t like trying new things.
I try to reintroduce something new into his diet every two weeks. Sometimes it works, sometimes it doesnโt.
As for pasta, pizza, and mac and cheese? He hates those foods. (I know โ so rare for a toddler!)
A few weeks ago, I made my favorite turkey meatloaf recipe, added a bunch of chopped arugula, and he LOVED it!

One thing my son loves more than anything is donuts โ and lucky for him, his mama loves coffee, and the two usually pair well together!
A few weeks ago, my dad had eye surgery, and I decided to drive him and my mom to the appointment since it was near South Park Mall โ my son’s favorite spot to visit on a rainy day.
While they were there, we picked up coffee at Copain Bakery, and he got himself a strawberry brioche donut. (I know, Iโm a mean mom, but I usually only let him have half and save the rest for the next day.) Heโs just the kind of kid who wonโt eat his meals if he fills up on sweets โ plus, I’m not a big fan of dyes, and Iโm sure this one was full of them.
I try not to make dyes a huge deal โ if there are just a few drops, I might cave โ but youโll never catch me letting him eat anything loaded with dyes. I just get so nervous about the side effects, especially because of how much I had as a kid and the attention span struggles I faced in school. I just don’t want to risk it. I try to keep his diet super balanced and everything fun in moderation.
After our little treat, we headed to the mall to walk around. I originally went in to get some clothes for myself but โ like always โ I walked out with a new stuffed animal and a bunch of summer clothes for him instead.
We also did the Easter scavenger hunt at the LEGO store, which was so much fun!
In early April, the weather started to get super warm โ Iโm talking 80s and humid already! That meant sprinkles, trips to get ice cream cones, dog walks, and all the outside time.
One thing I love about where we live is that thereโs so much to do for kids around here. Weโre surrounded by different parks and indoor play spots, but we also love finding fun right at home โ playing in the sandbox, swinging, gardening together, pretending to run a car wash, going on walks, or even just laying out a blanket and relaxing in the grass.

Discovering Carowinds…
I know, I KNOW. I’ve lived in this area for over a decade and had never been to Carowinds. Well, I take that back โ in 2014, I did a walking 5K there, but it was just in a small section early in the morning, and then we went straight home.
I seriously regret putting it off for so long. Carowinds was amazing! Iโve had so many friends tell me to take my son, saying he was the perfect age for the Camp Snoopy section with all the rides and activities. I finally looked over the website and decided โ okay, we are definitely spending a lot of our summer, fall, and winter here.
I ended up getting us season passes โ including one for my mom since she loves tagging along (and sheโs such a fun grandma)! Weโre also super excited for the waterpark to open up soon!
One of my really good friends has a daughter the same age as my son, and they have become the best of friends. Their friendship absolutely melts my heart.
We experienced Carowinds for the first time with them, and watching the kids run around and ride all the rides was so much fun. I definitely have a little daredevil โ my son thought all the fast and spinning rides were a blast! He was even asking to go on the big roller coasters, so I know I have some wild rides coming my way in a few years… luckily for him, he has a mom who loves the thrill!

Carowinds has so much food, but the first time we ate there, we tried their dining hall. We had beef brisket, broccoli salad, a cornbread muffin, fries, and chicken nuggets โ and honestly, it was so delicious for amusement park food!
That said, weโll probably stick to eating at home since we live so close, or bring our own little snacks and meals. If I ate like that all summer long, I’d definitely be feeling it โ lol!
Funny story: a suburban mom brag real quick.
So, I used to play basketball all through elementary, middle, and high school. I loved it. I would shoot hoops in the driveway with my dad or brother, working on free throws and three-pointers. Shooting hoops was โ and still is โ my thing. Iโve begged Kyle to get us a basketball hoop just so we could play together because itโs such a fun workout.
Well, you donโt just lose the ability to shoot hoops, right? So when my son wanted one of the huge stuffed hamsters at Carowinds, I told my mom (who was there with us), โLet me just give it a try.โ
I gave the guy $12 for four basketballs โ and made every single shot.
He ended up winning a basketball and a HUGE hamster. People were cracking up watching this tiny kid pushing a giant stuffed hamster in his stroller that was bigger than him. It was hilarious.
While we were sitting there eating my sonโs very first Dippinโ Dots (delicious, by the way), we watched everyone play the three-point game. I think itโs still called “Around the World”? You get 45 seconds to shoot 12 balls from different points around the three-point line. Tons of kids and even athletic men were trying, but barely anyone was making shots. The announcer is distracting, the buzzer is going off, and thereโs a huge line watching you โ so the pressure is real.
I thought, you know what? Why not.
I swallowed my pride, accepted that there might be some air balls, and decided to go for it โ even though my rotator cuff isnโt exactly what it used to be.
I handed over my money, took a deep breath… and completely air-balled the first shot.
DANG, that was embarrassing.
But I shook it off, told myself to just add a little more power and arch my arm โ and then:
SWISH.
SWISH.
Miss
Ran to center line: in!
Backboard bounce: in!
Backboard: in again!
Another one in!
Missed one off to the left… then IN! IN!
Buzzer sounded… final shot: IN!!
The crowd was cheering for this sweaty mom out there just having a moment. ๐
I ended up winning a cow, a jersey, and a hat for my son all in one game! The guy working there asked me if I played in college and I laughed so hard I almost peed my pants.
I seriously couldnโt believe I did it. It felt like a movie moment.
Of course, now Iโm determined to try again and hopefully get it filmed next time โ but knowing my luck, as soon as the camera is rolling, I’ll probably miss every shot, lol. Actually Carowinds should film you, and charge a fee if you want your video. I would have TOTALLY paid for that.
I can officially confirm that the rims at Carowinds are not bent, distorted, or rigged in any way. You actually have a fair shot at winning โ so bring your A-game and give it a try!
Goodbye Tulips!
Gardening is always in full swing by April, and by the next recap I share, my flowers will have quadrupled in the photos. May is when the real magic happens!
It was time to take the tulips out and store them for next year. Honestly, it didnโt make me sad โ they brought me so many gorgeous bouquets all spring, and now itโs time for the next wave of beauty. My ranunculus, zinnias, and dahlias are about to have their moment! I planted so many more in the gardens this past month…and I still have even more to plant this afternoon.
Canโt wait to see the gardens explode with color!
Back to my Sourdough Ways…
I have made more sourdough bread this past month than ever before. Mostly all jalapeรฑo pepper jack, since that’s the favorite around here!
Next on the favorites list is the parmesan pesto sourdough โ and honestly, it’s kind of out of this world. Especially when you top it with warm marinara sauce and crispy fried chicken cutlets. OMG.
After the bread cools, I slice it up and store it in freezer Ziploc bags. I keep the slices in the freezer, and anytime we want a piece, we just pop it into the toaster oven or air fryer.
This is hands down the best way to keep your bread fresh when you can’t eat it all in one day!

I have so many recipes to catch up on editing and posting โ and theyโre delicious ones! Like this creamy garlic parmesan spaghetti squash pasta with honey mustard seared chicken, prosciutto, and lemon.
I even made the same version with cavatelli since my husband doesn’t love spaghetti squash (heโs Italian and always gives me the side eye about it ๐). But seriously, this recipe is AMAZING, and I can’t wait to share it โ especially with my fun new blog theme that makes writing recipes so much easier and gives me so many fun editing options.
Sometimes blogging just needs a little refresh to feel exciting again. I hate feeling like I’m on autopilot!

Toddler Breakfasts on Repeat…
I know I should switch things up every once in a while, but honestly, I can’t. My toddler eats an ENTIRE plate every morning of his organic chicken sausage (we get it from Costco!), protein pancakes, or sometimes organic waffles โ and of course, his smoothie. He can’t go a morning without begging for one, and what kind of mom would argue with that?
His smoothies are packed with amazing ingredients (I’ll share some recipes below!), but I do drizzle a little organic maple syrup on top, which I’m sure helps. Heโs such a good breakfast eater โ I’m counting my blessings for that one!
We’ve been loving a few lunches over at Poppyseed Kitchen lately. Between that and Ilios, my son begs to go every week. I know I should probably be more of a “no” mom, but honestly, it’s like having a little best friend to go sit and have lunch with every day โ how could I say no?
Another thing I’ve been obsessed with lately: cottage cheese with ground turkey taco meat. It’s such an easy, high-protein lunch. And of course, my afternoon matcha lattes have been a daily treat too. I use Vital Proteins matcha collagen, a drizzle of local honey from Five Blossoms, and sometimes Iโll mix in a little oat milk or a scoop of protein powder โ all poured over ice. SO good!

Baked Banana Oatmeal Blender Bars
I may not be able to get my kid to eat eggs or oatmeal for breakfast, but I can when it’s baked into a “cookie bar.” This banana baked oatmeal bar has been a staple in our house for years. Sometimes I mix in blueberries, and other times Iโll add semi-sweet chocolate chips. It’s so easy!!
I’m actually making another batch today with the bananas that are turning brown in the produce basket. You just throw all the ingredients into a blender, pour it into a baking dish, bake, and you’re DONE! It’s seriously the easiest thing ever โ and so delicious and nutritious.

Strawberry Picking at Black’s Peaches
I have been counting down the days for strawberry picking season to open up. We decided to go on a Tuesday once the weekend crowds were back at school, and the fields were filled with ripe berries. We pretty much had the entire fields โ and most of the farm โ to ourselves all day.
We spent about an hour picking strawberries and then multiple hours on their HUGE outdoor playground for kids. This playground had some of the COOLEST homemade playhouses built with old tractors, swings, slides, agility obstacle courses, painted hay bales โ the list just kept going.
We are definitely going to be spending a lot of time there this summer. Plus, it’s just down the block from some of our other favorite farms: Bush-N-Vine, Windy Hill Orchard, the Peach Orchard, and Five Blossoms Farm. I love my farm trips in the summertime, especially with a tractor-obsessed toddler.
We picked SO MANY strawberries, and they had so much fun that we went back and bought even more buckets for picking.

Our first stop on our little outing day was The McGill Store in Clover. This spot is so cute and rustic; they make some incredible lattes! I ordered the honey latte, and I havenโt been able to stop thinking about it since. Iโm excited to stop out later this week to have another while we pick up peaches in the area. I like using all local farm produce when making desserts for the farmerโs market….

Southern Touch Bakery for Lunch:
After hours of farm time, we headed over to one of our favorites โ Southern Touch Bakery & Coffee Shop โ for lunch. It’s the cutest little spot that used to be a gas station, and they have some of the best drip coffee, desserts (seriously, their brownies are amazing), and the good kind of restaurant ranch!
My son always orders the chicken fingers and french fries, and I shamelessly steal off his plate while sipping my coffee and sneaking bites of that brownie. My mom ordered a pulled pork sandwich with a side salad and baked beans, so we ended up sharing that too. It was the perfect cozy end to a fun day.
Trisha Paytas Tour:
I don’t even know how many years it’s been โ maybe 12? โ but I’ve loved following Trisha Paytas on social media for so long. Her songs are always a bop during my workouts, and her videos have gotten me through some pretty tough times in my life.
I really wanted to go to her tour when she came to Charlotte about six years ago but didnโt have anyone to go with, and I regretted it so much. This time, I decided I wasnโt going to miss it. If you know me, you know Iโm not a concert person or someone who even likes to go out past 7 PM, so the fact that I really wanted to go says a lot.
When Iโm baking or out on my walks, I always listen to her podcast โ she drops new episodes twice a week โ and I love keeping up with all the hot topics and pop culture she talks about. I just think sheโs such a fun, lighthearted person to follow, and the show was so much fun!! So many of her iconic songs, and the fact that sheโs six months pregnant and still up there delivering a full performance was seriously impressive!!
Catalina Kitchen & Bar
Before the concert, we went to Catalina Kitchen & Bar for dinner โ and OH MY GOSH โ I cannot wait to go back. Mainly for the spicy ahi tuna. Iโve never had a better ahi tuna dish in my life. It had soy sriracha sauce, sesame, citrus guacamole, scallions, seasoned crispy wontons โ and it was perfectly spicy!!
Iโm not usually a cocktail girl, but I thought, you know what… Iโm not usually a concert girl either, so letโs just go all out. I ordered their “Stay Cool Baby” cocktail and it was absolutely the right choice. It was super citrusy and sweet โ with vodka, limoncello, cucumber-lemon flavors, and topped off with prosecco. Honestly, I think Iโd love making a version of it at home using my non-alcoholic prosecco for a fun summery treat!
For my entrรฉe, I ordered the Sonoma Chicken Salad, and it was delicious โ especially with their Green Goddess dressing. It came with mixed greens, grilled chicken, avocado, corn, almonds, dates, bacon, tomatoes, and cornbread croutons. I just asked for no blue cheese.
I cannot wait to eat there again and try even more dishes. So good!

Chocolate Chip Cookies
I needed some last minute chocolate chip cookies made, so I did my favorite go-to, which has been a trending recipe on the blog lately. I shot a new video and photos for it so I can update them when I get around to it.

Park Picnics
One thing youโll find us doing ALL SUMMER LONG is park picnics.
Thereโs just nothing more relaxing than grabbing food (or packing food), walking to a big open field, and sitting under a shade tree. My son loves running around like an airplane or kicking his soccer ball across the field. Itโs seriously the best โ just watching him be wild, rolling around in the grass, laughing like crazy.
After school the other day, I picked him up, and we grabbed his favorite โ Ilios (so funny because heโs actually there right now with my husband having a lunch and park date!) โ and headed to the park. We sat on a picnic blanket, listened to Danny Go songs, had a yummy plate of food, and I sipped my favorite Doc Pop.
It was the best afternoon.
Library & Reading Time
Another day of spring break shenanigans!
The weather was HOT โ but not as hot as itโs about to get this summer โ so we headed to the library to check out some books. My goal is 500 books by fall! Iโm keeping track of everything we read (plus doing mini kid reviews!) and Iโll be putting a big list together here on the blog soon so you can look back through it.
I donโt know what it is about the smell of libraries that feels so nostalgic. Thereโs just something magical about picking out books, checking them out, and taking them home. Buying books at Target or Amazon will never feel as exciting as a good old library trip.
Iโve been picking out books with fun, silly stories, and Iโm so excited with how much heโs been loving our reading time. Every night he begs to pick a book from our library bag โ and he always grabs the same ones: “Fuddles” and “Bad Cat.”
Itโs so special to see how much reading impacts kids, and I really believe it makes such a difference.
After checking out some books, we headed to one of my favorite coffee spots โ Rock Hill Coffee. I ordered their matcha latte with oat milk, unsweetened, and then I add one packet of stevia myself. Itโs so yummy! I usually get it hot, but not when itโs warm outside and especially not after 1 PM. ha!

We packed some fresh fruit (and of course I had to have my Poppi!), and headed to the field to read all of our new library books. How cute is our library bag?!
There was one book in the stack that he made me read twice โ that’s when you know youโve found a good one! I always make a little note of those, just in case we want to check them out again or even purchase them for our home library.
I have a feeling this is going to be one of my absolute favorite summer morning traditions โ it’s the perfect, calmer way to start the day.

I know I share a lot of recaps, but Iโm thinking about putting together a full summer activity blog with all the fun things to do with toddlers! We do so many different things, and I think it would be really helpful (and fun!) to have it all in one place โ especially for anyone looking for ideas on weekends or during summer break with their kids. Things as simple as sidewalk chalk ideas.

Nursery Talk:
I think weโre getting to the end of our nursery days. (Not the crib though!) I know most three-year-olds have moved on from their cribs by now, but mine has never once tried to climb out โ so until that day comes, heโs staying put! ๐
That said, Iโm starting to feel like itโs time for some “big boy” updates in his room โ maybe a new paint color, some cool wall decals… Iโm not sure yet.
How long did you wait before changing your nursery into a big kid room?
One of my friend’s husbands makes the most amazing 3D-printed pots, and they brought one over for me a few nights ago! My son and I headed to the local plant nursery to pick out the perfect indoor plant for it (coffee lovers are going to love this one!). I canโt wait to share a video of it with you all next week!!

Weโre on year two with this bounce house, and itโs still the best gift ever from Grandma! Iโm telling you โ heโll spend up to five hours straight in it without getting out! And the way he sleeps like a rock that night makes it so worth it. Heโs completely obsessed!!
Spring break has been packed with all the activities! Bounce houses, sandbox days, library trips, trail walks, Carowinds adventures, park dates with friends, long walks, rainy walks, Target runs, favorite restaurants, errands with Mom, new kinetic sand tables, painting activities โ and so much more!

A little matcha treat from Rock Hill Coffee! Lately, coffee just hasnโt sounded good to me after 9 a.m., so Iโve been reaching for tea instead. But in the mornings? GIVE ME ALL THE COFFEE!
Smoothies are an everyday thing in our house.
My son LIVES for them, and Iโll always be excited about making them. I really rely on Costcoโs organic frozen berries and fruit for a lot of our morning smoothies โ it’s so much more affordable that way!
Basically, our smoothies have organic milk, one scoop of organic Orgain protein powder, a cup of frozen berries, frozen mango, sometimes an entire orange, a banana, frozen spinach, frozen kale, and a splash of elderberry juice!

Pesto Parmesan Sourdough Bread is the MOMENT!
This one is coming really close to being just as good as the jalapeรฑo Pepper Jack bread. Itโs stuffed with pesto and Parmesan, then toasted to perfection. When itโs almost done, I add even more Parmesan and pesto on top and bake it for a few extra minutes. Itโs so good with avocado, Arctic seasoning, arugula, prosciutto, burrata, and a drizzle of balsamic glaze!
Another one of my favorite go-to breakfast (for myself) is my protein oats!
I mix organic quick oats with water and add in one cup of frozen organic blueberries. I microwave it for a minute, stir, and then microwave for another 30 seconds. After that, I mix in one scoop of vanilla Orgain vanilla protein powder, a pinch of sea salt, and a dash of cinnamon. In my opinion the vanilla Orgain is the best tasting one! I cannot stand how whey protein tastes. I use this one for my protein balls, too. This breakfast honestly tastes like warm vanilla blueberry pie. Itโs packed with fiber, protein, and healthy carbsโperfect for keeping me full during our morning walk before school.

We are super into family picnics right now and have another one planned for today! We’re trying a viral pizza spotโone you can’t get a reservation for. Turns out, Dave Portnoy, the pizza review guy, tried it over the weekend, and once he posts his review, if it’s a good one, we’ll never get in! So stay tuned for what we think! We’re taking the pizza to the park tonight for a little picnic.
Last weekend, we did a date night at the park with peanut butter and jelly sandwiches, fresh fruit, yogurt, chips, and I loved the Orange Squeeze Olipop!

Toddler Summer Survival Kit
I figured I’d start getting my bags summer-ready for all the bumps, sunburns, thirsty kids, dry lips, dirty hands, stained shirts, and so on!
I packed a bag with a change of fresh clothes, bandaids, antibacterial spray, first aid ointment, bug spray, hand sanitizer, sunscreen, hydration packets, antacids, wipes, and snacks.
This bag has come in handy already during our park trips!
Bluebelle Farms Kite Festival
We headed out to Bluebelle Farms in Rock Hill (our first time there!) for their market and festival. It was such a fun spot with farm animals, BBQ, and amazing vendors! We had a blast, and so did my son and his friends, who ran all over the place with their new dinosaur bubble wands! My son LOVED the giant turkey and sat next to it for about fifteen minutes, talking to it and petting it. He even asked for one, and while I said yes, his dad said no. Bluebelle Farms had the CUTEST bunnies!!
And…I got my FAVORITE seasoning ever, Arctic Seasoning I let the only know how much I talk about his stuff! You guys, I put it over cucumbers last night, and my son ate an entire cucumber. This sauce is magic, even my friends text me telling me that their kids eat vegetables with it.

I walked past this couple selling artwork and couldnโt stop eyeing this cute little duck. I donโt know why, but it just spoke to me. Iโve always thought if I ever had another kid, a duck or Little Bear theme would be adorable, and this little duck could be the inspiration for the room.
So, I thought, “oh, Iโll leave it.” But I couldnโt stop thinking about it.
I went back, picked it up, and handed it to the lady. Then, underneath, I found a beautiful drawing of a cardinalโmy dadโs absolute favorite bird, so of course, I had to grab it for him too.
Then the husband whispered, โThis is her first sale of the day,โ and honestly, that broke my heart. Markets are SO much work, and for it to be so late in the afternoon with no sales yet? Heartbreaking. She was so kind and talented, and I can’t wait to go back to support her when I eventually do a nursery!

I love a Saturday morning. I did some baking while Kyle went out on a park date, and I also did some gardening. April & May are THE BEST months in South Carolina.
Protein Pancakes:
Before they left, I whipped up some delicious protein pancakes using Kodiak mix, extra eggs, mashed bananas, vanilla, blueberries, and even more protein powder for that extra boost. They were a hit!

Later in the morning, we headed to the neighborhood Easter event. They had a petting zoo, pictures with the Easter bunny, and an egg hunt, which was so fun! My son is obsessed with the bunny, and he couldn’t wait to run over and show him all of his Easter eggs afterward!
I was so excited to host Easter dinner and the backyard Easter hunt at our house this year! Once your child turns 3, holidays are a whole new level of fun!!! I was also super excited about the menu โ I had some delicious dishes in mind!
Before he went to bed, he left the Easter bunny some carrots and broccoli, and it worked! He woke up with some pretty amazing Easter gifts!

It ended up being a gorgeous day! I don’t think we’ve had a rainy Easter in years.

Easter Menu:
Roasted carrots with balsamic glaze
Plain sourdough bread
Jalapeรฑo Pepperjack sourdough bread
Marinated grilled chicken
Pulled pork (our friends brought over some of the best!!)
Cucumber salad (compliments of my friend April!)
Broccoli salad (recipe here, but I’ll be updating soon!)

Easter was the best! My house was filled with toddlers, full bellies, Easter eggs, sugar comas, kids playing, and the cutest Easter egg hunt ever. I truly love hosting days like this! These are the kinds of memories I love making for their childhood, even if the won’t remember, us parents will.

We were up extra early on Easter morning since it was spring break. We spent some time watering the flowers โ we had just added new petunias to the front โ and my son had a blast running through the hose!
Right now is the perfect time to get outside for walks โ the flowers are absolutely gorgeous, especially the roses and azaleas!

Yellow Dragonfruit
My friend kept talking about yellow dragonfruit. Iโve had the pink ones before, and honestly, they donโt taste like much. She dropped a few yellow ones off for me, and she wasnโt joking โ they are SO good! The seeds have a light, wafery crunch, and the amount of health benefits packed into a yellow dragonfruit makes every bite totally worth it. I LOVED it!!
Spring break coming to an end.
I know itโs Saturday, and I could wait to publish this tomorrow and include my Sunday adventures โ but honestly, I cannot add one more thing to this post. Itโs already so long, and I started editing this blog at 3 a.m. todayโฆ and itโs now 2 p.m.! ๐ Iโll save the rest for another blog. And that was just writing. I spent a few days uploading and organizing photos.
But seriously, if you made it this far โ good job ๐๐ I have so many recipes to blog next week once my son is back in school, but I also might not be around too long since weโre heading to the beach for my sonโs birthday next week!!! Stay tuned and follow me on Instagram for all the beach updates!

Awww! My son has the same food preferences as yours and really hasn’t changed in 21 years!! It brought back so many memories when you listed those foods, all except the hummus, he would never even think of trying that! LOL! Also, when you spoke of the library and something about the smell of old books…I just heard recently that old books have lignin, a component of wood- based paper, that breaks down and releases vanillin, contributing to the vanilla-like scent they give off. I feel like that’s such a pleasing scent for people. Love your blog!
