This morning, when I went into the kitchen to pour myself a cup of coffee, I spotted some overly ripe bananas on the counter. I was excited to bake banana bread with them, something my mom always did. She made banana bread at least once a month because she kept buying bananas, even when no one in the house ate them. I didn’t mind, though. I’ve always loved banana bread. The best kind, in my opinion, is moist, falls apart easily, and has just the right amount of banana flavor.

This is a FIVE STAR chocolate chip banana bread recipe that I’ve been enjoying for years!

I love simple, easy-to-follow recipes, and this one was that. It took about 10 minutes to prepare and an hour to bake. While the banana bread was baked, I sipped my coffee and enjoyed the delicious aroma filling the air. Who needs banana bread candles when you can have the real thing aromafying through the house?

Why are extra ripe bananas so delicious?

Ripe bananas are a treat because their natural ripening process transforms starches into sugars, creating a sweet, caramel-like flavor that’s irresistible. As they ripen, enzymes break down pectin, making the fruit softer and perfect for baking or blending. Their rich sweetness is complemented by fruity, aromatic compounds that develop during this stage, enhancing both flavor and aroma. Packed with natural energy, vitamins, and minerals like potassium, ripe bananas are not only delicious but also a nutritious and versatile ingredient for snacks and recipes alike.

What is the best way to store banana bread?

Storing banana bread properly helps maintain its freshness and flavor. Here are the best ways to store it:

1. Room Temperature (2-3 Days)

  • Wrap the banana bread tightly in plastic wrap, aluminum foil, or store it in an airtight container to prevent it from drying out.
  • Keep it at room temperature in a cool, dry spot, away from direct sunlight or heat.

2. Refrigeration (Up to 1 Week)

  • If you need to keep it longer, refrigerate the banana bread.
  • Wrap it in plastic wrap or place it in an airtight container before refrigerating to retain moisture.

3. Freezing (Up to 3 Months)

  • Whole loaf: Wrap the entire loaf in plastic wrap, then aluminum foil, or store it in a freezer-safe bag.
  • Slices: Slice the bread, wrap each slice in plastic wrap, and place them in a freezer-safe bag or container. This makes it easy to grab individual servings.
  • Thawing: Let the bread or slices thaw at room temperature or warm them in the microwave for 10–15 seconds.

I can’t wait to try this recipe! If I use baking stevia it says 1/2 cup equals to 1 cup of sugar. Above you mentioned substituting it with 1 cup of baking stevia, will it be the same or sweeter ?
