I refuse to be humble or modest with this recipe. I’m sorry, but these may be the best frosted banana bread bars I’ve ever eaten. I’m pretty good with willpower, but with these, I had them on my mind all day. I knew they were in my refrigerator, and I just wanted more! They have so much banana flavor, they’re moist, and they’re frosted to perfection. I want to make these for everyone! People will be asking for this recipe asap.

I also have a version of these that’s not gluten-free, and they’re just as good! But even these gluten-free ones? You’d have no idea they’re gluten-free. They bake up the same way, hold all that same moisture from the bananas, and the flavor is INTENSE. Seriously, I’m telling you MAKE THESE!! You will not be disappointed. I’m confidently saying they are some of the BEST FROSTED BANANA BREAD BARS ON THE INTERNET.

Just like every other banana bread recipe story, I had some extra ripe bananas sitting in the basket, just waiting to be baked into something delicious. I love cooking with extra brown bananas! Sometimes, I freeze them for smoothies, but I’ll never say no to a banana bar or banana bread. Extra-ripe bananas add so much more sweetness, banana flavor, and moisture to baked goods while also helping to prevent food waste!

As recommended by my doctor, I’m back to eating gluten-free as much as possible for my health. However, I’ll still be sharing recipes with gluten on my blog since the rest of my family isn’t gluten-free, and I know I’ll bend the rules sometimes! 😊

I’m not sure what it is about banana bars, but I always want to make them after cleaning the house or on a warm day. Even though they’re delicious year-round, I especially crave them in the spring, and I think they somehow complement a clean house perfectly! How to Make Gluten-Free Frosted Banana Bread Bars

Step 1: Preheat and Prepare the Baking Dish

Preheat your oven to 350°F. Line a 9×13-inch baking dish with parchment paper and lightly grease it.

Step 2: Mix the Dry Ingredients

In a bowl, sift together the gluten-free flour, baking soda, and salt. Set aside.

Step 3: Cream the Butter and Sugars

Using an electric mixer, beat butter, granulated sugar, and brown sugar on high speed for about 5 minutes, until light and fluffy.

Step 4: Add Bananas, Eggs, and Vanilla

Mix in the mashed bananas until combined. Then, add the eggs and vanilla extract, beating for about 1 minute on medium-low speed.

Step 5: Combine Dry and Wet Ingredients

Gradually mix in the dry ingredients at low speed until just combined (about 30 seconds).

Step 6: Bake the Banana Bars

Pour the batter into the prepared baking dish. Bake for 25 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean. Do not over bake.

Step 7: Cool the Bars

Let the banana bars cool for at least 45 minutes before adding frosting.

Step 8: Make the Frosting

In a mixing bowl, combine powdered sugar, melted butter, and milk. Stir well, then mix in vanilla extract. Adjust consistency by adding more powdered sugar if too runny or more milk if too thick.

Step 9: Frost the Banana Bars

Ingredients
  

Banana Bread Bars
  • 1/2 Cup Unsalted Butter at room temperature
  • 1 Cup Granulated Sugar
  • 1 Cup Brown Sugar
  • 3 Medium Extra-Ripened Bananas about 1 1/2 cups
  • 3 Large Eggs
  • 1 Tbsp Vanilla Extract
  • 3 Cups All-Purpose Gluten-Free Flour
  • 1 Tsp Baking Soda
  • 1 Tsp Salt
Frosting for Banana Bread Bars
  • 4-5 Cups Powdered Sugar
  • 6 Tbsp Melted Salted Butter
  • 3 Tsp Vanilla Extract
  • 1/4 Cup Milk your choice of milk alternative

Instructions
 

Banana Bread Bars

  • Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper and grease it lightly.
  • In a bowl, sift together the flour, baking soda, and salt. Set aside.
  • Using an electric mixer, beat the butter, granulated sugar, and brown sugar on high speed for about 5 minutes, until light and fluffy. Add the bananas (mashed or whole if very soft) and mix until combined.
  • Mix in the eggs and vanilla extract, beating for about 1 minute on medium-low speed. Gradually add the dry ingredients and mix on low speed until just combined (about 30 seconds).
  • Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
    Do not over bake. Allow the bars to cool for 45 minutes before adding the Icing.

Icing for Banana Bread Bars

  • In a mixing bowl, combine powdered sugar, melted butter, and milk.
  • Mix well, then add vanilla extract. Adjust consistency by adding more powdered sugar if too runny or more milk if too thick.
  • Once the bars have fully cooled, spread the frosting evenly over the top. Let the frosting set for about 1 hour before slicing.
  • Cut into 12 bars and enjoy!

Notes

Storing: Cover and store in the refrigerator.
Tip: heat banana bread bar in the microwave for 10-seconds for the best morning breakfast to go with coffee!

How to Store Frosted Banana Bread Bars:

You truly can’t go wrong with how you store these banana bars, but here are a few options:

  • Room Temperature: If you plan to eat them within 1-2 days, you can keep them covered with tin foil or an airtight container on the counter. They’ll stay soft and moist.
  • Refrigerator (Highly Recommended!): For the best flavor and texture, store them in an airtight container in the fridge. Chilled banana bars taste AMAZING and have a deliciously dense, fudgy texture!
  • Freezer: If you want to save them for later, freeze individual bars in a sealed container or freezer bag for up to 3 months. Just thaw in the fridge or microwave for a few seconds before enjoying.

Try them chilled, you might never go back to room temp!

Which Gluten-Free Flour Do You Use?

Lately, I’ve had the BEST luck with the Trader Joe’s All-Purpose Gluten-Free flour. Any all-purpose gluten-free flour should work!

The icing on top of these banana bars reminds me of my favorite vanilla cake slices from the school cafeteria. It was soft and frosting-like, but on top of the creamy layer, there was a crystallized top, such a perfect texture! Maybe that’s why I love these bars so much and they bring back a little nostalgia

I may need to recreate those classic vanilla and chocolate school cafeteria cakes next!
