Preheat the oven to 350°F. Line a 9x13-inch baking dish with parchment paper and grease it lightly.
In a bowl, sift together the flour, baking soda, and salt. Set aside.
Using an electric mixer, beat the butter, granulated sugar, and brown sugar on high speed for about 5 minutes, until light and fluffy. Add the bananas (mashed or whole if very soft) and mix until combined.
Mix in the eggs and vanilla extract, beating for about 1 minute on medium-low speed. Gradually add the dry ingredients and mix on low speed until just combined (about 30 seconds).
Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean. Do not over bake. Allow the bars to cool for 45 minutes before adding the Icing.
Icing for Banana Bread Bars
In a mixing bowl, combine powdered sugar, melted butter, and milk.
Mix well, then add vanilla extract. Adjust consistency by adding more powdered sugar if too runny or more milk if too thick.
Once the bars have fully cooled, spread the frosting evenly over the top. Let the frosting set for about 1 hour before slicing.
Cut into 12 bars and enjoy!
