It is officially summer! That means fresh produce from the garden and the farmer’s market to make delicious salads for all the backyard BBQs! I’m currently on the “I’m a private chef in the Hamptons” TikTok algorithm. I can’t get enough of their Hamptons cooking content. It reminds me of when I was working in the Hamptons right out of high school, and we’d stop by all the local markets for produce. Those were the days! Since watching those videos nonstop, I’ve dreamed of large summer salads with fresh bread, goat cheese, and giant heirloom tomatoes.
Last night, we were invited to a friend’s house for smoked pulled pork, and I was excited to have an excuse to put on my “I’m a private chef in the Hamptons” hat and whip up a delicious farmer’s market-inspired salad to bring with us. Right after I packed up my booth at the market, I stopped to grab a few items from other local vendors to make this salad extra special!
I made a peach and prosciutto kale salad with orange honey vinaigrette. It was so refreshing, drenched in summer flavors, and super easy to make for any summer party you’re invited to. On Saturday nights, I’m usually zonked from working at the farmers market in the heat after days of baking. But I was still looking forward to visiting a friend’s house so our kids could play and hang out while eating delicious food. Salads are my favorite side to bring when we’re invited anywhere, and I love coming up with new recipes. This salad is one of my new favorites. It showcases the delicious and refreshing summer produce and is filled with pretty colors! It took about fifteen minutes to prepare!
What is in the dressing?
- Olive Oil
- Freshly Squeezed Orange Juice
- Honey
- Garlic Powder
- Sea Salt
- Black Pepper
What is in the salad?
- Kale
- Cucumbers
- Peaches
- Heirloom Tomatoes
- Red Onions
- Avocado
- Blueberry Goat Cheese
- Candied Sesame Walnuts
- Dried Cranberries
- Blueberry Goat Cheese
- Prosciutto
- Balsalmic Vinaigrette
- Sliced Baguette
It is so easy to make homemade vinaigrette dressing, and I love making it in the summer to marinate kale. Our garden has so much kale right now! I like to use oranges and honey to sweeten the vinaigrette.
Speaking of TikTok, have you seen those cookbook clubs? Where the club picks out a cookbook, and everyone makes something from the cookbook and shows up with a dish? How fun is that?! I may need to start one of those locally!

Peach and Prosciutto Kale Salad With Orange Honey Vinaigrette
Ingredients
Orange Honey Vinaigrette
- 1 Cup Extra Virgin Olive Oil
- 1/2 Tsp Sea Salt
- 1/4 Tsp Black Pepper
- 1/2 Tsp Garlic Powder
- 2 Tbsps Honey
- 1 Large Orange
Peach & Prosciutto Kale Salad
- 10 Cups Freshly Chopped Kale
- 2 Cups Cucumbers Sliced
- 2 Cups Peaches Diced
- 1/4 Cup Red Onions Sliced
- 1 Large Avocado Sliced
- 2 Large Heirloom Tomatoes Sliced
- 1/2 Cup Dried Cranberries
- 1/2 Cup Candied Sesame Walnuts or candied pecans
- 1 Block Blueberry Goat Cheese or plain
- 1 Drizzle Balsamic Vinegar
- 7 Slices Prosciutto or package
Instructions
- For the Dressing: Mix the olive oil, freshly squeezed orange, and honey together. Mix in the garlic powder, sea salt, and pepper. Taste to see if it needs more garlic or honey!
- Massage the kale with the orange honey vinaigrette.
- Combine the massaged kale, cucumbers, peaches, onions, avocado, and tomatoes in a large bowl.
- Top with dried cranberries, candied nuts, goat cheese, prosciutto, and balsamic.
- Slice the baguette and serve on the side to scoop up the leftover vinaigrette!
- Store in the refrigerator until serving time.
I had fun doing a photoshoot of this salad because it was so beautiful! I usually walk around the grocery store or the farmer’s market for inspiration when coming up with salad recipes. I like to have a big pop of color in every bite.
I’d probably add fresh grilled chicken and cold couscous pearls if this salad were the main dish. I’ll have to try that version next!
The dinner night was amazing. We had some of the BEST pulled pork we’ve ever eaten! I live for all the summertime food! I made sure to bring some giant, chunky chocolate chip cookies over for dessert 🙂

Once it’s summertime and we get the pool set up we’re ALWAYS outside. Josh usually smokes on the weekend and I’m always in charge of sides, lately we’ve been on my mozzarella salad kick now that I can eat dairy again! 🙂
Mozzarella on salads is so good! especially with pesto and balsamic!
