Good afternoon, everyone!
It’s been insanely busy the past few days. I had two doctor’s appointments yesterday, a tattoo removal, a home inspection for our one-year warranty, a door installation consultation, and wedding planning on top of all of that. We are officially in the double-digits, so all the small details that are left have to get completed. The good thing is that my checklist is getting much smaller.
I’m taking the next few hours to sit outside on the patio and write the recap. It’s currently 72-degrees, and I am soaking up every bit of it. We had such a mild winter, and I’m so happy about it. About 80% of my perennials have made their back way up, so I’m classifying this as spring. Do you know how some people decorate for Christmas weeks before December? Well, I start planting things weeks before spring. Plus, living in South Carolina, spring is always here sooner. It’s going to be 80-degrees on Friday! WHAT? 😊 On Monday morning, our neighborhood had a coffee truck at our clubhouse. I grabbed an almond milk chai cappuccino and did a walk with my neighbor! I love when our neighborhood has coffee trucks available. It makes walking so much better! Last month, we hit a 50-mile walking goal. This month, we upped the goal to 70-miles! I hope we can do it. I did a little run-walk on Monday evening. I get so bored walking alone that I decided to see if I could run a bit. I managed to run two of the miles (with a few breaks), which felt really good. What didn’t feel good was how tight my groin was the next few days. It just goes to show that you shouldn’t do something even if you think you can. It’s important to work your way up to it and definitely stretch! I made low-carb chicken enchiladas for dinner on Monday night, and they were so good! We watched our episode of The Servent before bed. That show gets weirder and weirder. My neighbor and I did a six-mile walk on Tuesday! The streets we walk on are so hilly, so it truly feels like an intense workout, especially when you walk at a fast pace. Some people don’t think walking is working out, but I think it’s the BEST workout!
In the afternoon, I headed to our local nursery to pick up two white camellia trees. The red one we planted last year is doing amazing, and I wanted to put some white ones up as well. Tea on the front porch to end the evening ♥️ After my morning walk on Wednesday, I had avocado toast with everything but the bagel seasoning. I got invited to a flower workshop by another neighbor on Wednesday evening. We made some gorgeous bouquets! I love anything that has to do with flowers. After the flower workshop, we picked up some decaf white chocolate almond milk cappuccinos and went on a little stroll. I was up bright and early for a dermatologist appointment on Thursday. I had four moles removed and a year skin check. Use this as your reminder to make your skin appointment! So important ♥️
When I got home, I had my go-to smoothie! I was feeling so off the rest of the day. Have you ever had those days where you feel fuzzy and blah? I ended up having dinner around 4 pm, cuddling up on the couch, and falling asleep at 8 pm.
I had a turkey jalapeno queso burger on an o’doughs everything bagel topped with Tessamae’s habanero ranch for dinner. My salad was just kale, garlic vinaigrette, and avocado. I spent the day with my mom on Friday. We walked around the cute shops in York, SC, and then had lunch at the Garden Cafe ♥️ I had the yummiest low-carb protein pancakes on Saturday morning! After breakfast, I headed out on another walk with my neighbor! We had an acai bowl food truck in the neighborhood, so I picked a few up for Kyle and me to have lunch. I planned on gardening all day, so I thought this would be the perfect fuel. My bowl had acai, banana, strawberries, blackberries, raspberries, and granola. Kyle had the same but with peanut butter, almonds, and Nutella on top. I spent twelve hours outside getting my ten new climbing rose bushes planted, my bulbs in, pulling out weeds, and replanting some primroses that have made their way across my entire flower bed. I think privacy trees will be on our weekend list of things to do. We had someone scheduled to come out the past few weeks, but they never showed up. I guess this means we will have to save money and do it ourselves! I love a good digging day. After finishing up outside, I took a shower and made some dinner for kyle and me. I made seared salmon, butternut squash, kale salad, and Brussels sprouts. Our next-door neighbor makes THE BEST mac and cheese on this planet, so we had some of that as well. Moderation is key. We sat out on the porch watching the sunset and then started the movie “afraid of the rain” before heading to bed. Sunday was my cleaning day. I didn’t get to do it on Friday, so I spent all day cleaning and organizing.
I had a kale salad (which I’ve been eating every day lately) with cranberries, honey goat cheese, avocado, garlic vinaigrette, and pecans. It’s amazing! My parents came over on Sunday night for dinner. Kyle made us steak, I made broccoli salad, and pesto parmesan cavatelli.

The last movie I watched was the new Coming 2 America sequel, lol. Not as good as the first and we mostly just watched it due to curiosity! We don’t get food trucks in my neighborhood…maybe this is a Southern activity? Up here in Massachusetts we are nearing 60 plus degrees this week! I’m so excited for Spring and can’t wait to start to work on my own yard!

The last film I watched was Greenland- a bit predictable but I still enjoyed it! There are so many good series on nowadays but nothing beats a proper movie!
We don’t get food trucks but (pre-Covid) we have a once a month Makers Market with lots of food and goods stalls from local producers- it’s so fun! Hopefully it’ll be back soon! Those açai bowls sound SO tasty and refreshing!
I’m not a big cake fan but give me a brownie and I’m happy!

Happy Spring…I’m calling it early too! It hit 61 in Wisconsin yesterday!
Last movie we watched was Once Upon a Time in Hollywood. I know it’s been out for awhile, but wow it was so much better then I anticipated.
No food trucks in our neighborhood, but they do have them in our little downtown area from time to time. I think it’s a wonderful addition to any area.
This is a tough question…I love chocolate cake, but also carrot cake and angel food with fresh strawberries.

I love reading your recaps! I am reading this a work (SHHHH!) I’m a teacher and we just got back from two snow days so I am totally jealous of the warm weather you guys are having! If we get above 35 degrees its a “nice” day for us! hahaha
We get lots of food trucks in our town but not in our “neighborhood”. In my town we have a food truck lot that has parking for trucks, and several outdoor seating. Super nice!
Favorite cake? Chocolate cake with white buttercream! Also, the different holiday FunFetti cake mixes and coordinating frosting. Yum 🙂
