Hi, everyone and happy Monday.
I decided to get my recap post up early this morning just in case you needed a break from hearing about the Coronavirus. It’s all we hear about on social media with memes, pictures of toilet paper hauls and fighting back and forth between politicians about what to do. It’s a weird and scary time, and with that said, we all need a little mental break from it. Now, don’t get me wrong, it’s so important to talk about it and bring awareness on what to do during this time, but I’m ready to do something that makes me feel normal. I hope all of you are staying safe and being careful ♥️
There’s no easy way to transition from that, so let’s start this recap post. This is going to be a hectic week for me with packing and all of the fun moving stuff, but I’m going to try my hardest to get more blogs out since I know most of you are home now.
On Monday morning, I took the dogs out for a two-mile walk. I wanted to start the week off with a light workout to get me in the routine. I’m still working on upping my movement and getting outside more. Walking was my go-to this week, and my dogs were all about it. When the grass starts turning green, and everything feels like spring, it’s hard for me to stay inside.
While writing last week’s recap post, I enjoyed a delicious smoothie bowl for breakfast! This bowl had blueberries, peaches, raspberries, vanilla unsweetened cashew milk, vanilla + greens Vega plant-based protein powder, coconut shreds, and granola on top! 😋
For Monday night’s Bachelor, I decided to make homemade chicken wings since we hadn’t had them in so long! The secret to getting them crispy is parboiling them first, then baking at 450 for 12-14 minutes, and then adding the sauce on top! I’m telling you, they are unbelievable and taste fried! I had roasted cauliflower with Tessamae’s habanero ranch on top. My sauce is a mixture of bbq, buffalo, gluten-free soy sauce, and a coconut amino based gochujang. Now, you probably think that’s a weird combo of sauces, and you’re right, but it works! I wish I could take credit for the sauce, but it’s Kyle’s invention, and we’ve been hooked.
My little Bachelor buddy! I know I already talked about the season finally of the Bachelor in my raspberry banana bread blog post, but I’m still shocked at how it ended. I cannot get over Peter’s mom…yikes!
I was up early on Tuesday to do a power clean of the house.
For breakfast, I had one of my favorite combos, gluten-free toast with avocado, and a fried egg! 😋 I finished up my computer work, cleaned the house, and then headed to Starbucks for an iced latte. When I don’t want a hot drink, I usually get a tall almond milk latte with an extra shot of espresso. I was having the hardest time with allergies, and my eyes were watery and just wanted to stay shut. I thought the coffee would help, and I needed something to keep me up for a 6:30 meeting we had.
For dinner, I had two eggs with Tessamae’s habanero ranch on top, a black bean burger with guacamole on top of gluten-free bread, and a spinach salad with peppers, olive oil, and everything but the bagel seasoning.
Kyle and I finished the last episode of The Outsider and then went for an evening walk since it was so lovely outside.
On Wednesday, it was reaching 78-degrees outside! I was in heaven! ☀️ I headed to a local nursery to pick up some flowers for my front porch pots, and it made me so excited about gardening this summer. I wanted to buy all the camellia trees, gardenias, rose bushes, and flowers for the new house! When people ask me what I’m most excited about, it’s the gardening for sure! I find myself watching gardening videos for hours, and it makes me so eager to get started.
I decided to pick up a camellia tree because of the price, and it was still small enough to keep in a pot until we move. Camellias are slow-growing, so I won’t have to worry about it living in a pot for a while.
When I got home, I had a spinach and peach smoothie! 😋 It had unsweetened vanilla almond milk, vanilla + greens Vega protein powder, frozen peaches, two cups of spinach, and a scoop of almond butter.
We headed to the house to take a look at the new countertops, and it’s pretty awesome to see it coming together. We move in precisely 39 days! Now, that’s if everything goes to plan with all the uncertainty going on in the world right. But even if it gets delayed, it’ll all be okay. The safety of workers comes first.
Some of our floors have been installed, and I LOVE the downstairs floors. I was a little nervous when we picked them out because it had a few darker tones that I hesitated about, but I think they turned out great. The floors need a bit of darker tones since everything else in the house is light and bright.
If you are following me over on my home’s Instagram (Cottage Story), then you already know about the upstairs tile ordeal 😂 I’m hoping that gets settled easy, and I’ll be able to share a picture of it done right. If you missed it, I’ll add it to my highlights under “design” on that page so you can see what happened with the floor tiles in our master bath. Be prepared for a laugh! The dm’s I received had me cracking up, and I needed to make the situation a bit lighter. I got a little stressed out seeing some sloppy jobs in the house, so I’m checking out for a bit before I get too anxious with it all. We have a meeting with the builder this week, and hopefully, we can get some reassurance that stuff will be fixed. I mean, it has to be fixed, but hoping it won’t push the date back.
Do you know what makes everything better? Tacos! I made black bean tacos from the Purple Carrot box on Thursday night. I added the habanero ranch (it makes everything better), and they were incredible! I love how creative, yet simple the meals are. These are corn tortillas with purple cabbage, black beans, avocado, mango, and I added mini peppers. I cooked up the cabbage and black beans with sea salt, olive oil, and cumin as the “meat.” The rest was mixed like salsa and added to the warm corn tortillas. I can’t wait to make more of these!
Another warm and sunny day on Thursday meant closing up the laptop and spending time outside! I picked up some pots, soil and potted my flowers for the porch. I also picked up and extra pot and planted some wildflower seeds. I saw a video where someone planted a ton in a pot, and it was a fun surprise seeing which ones popped up! I’m crossing my fingers that at least one flower will come up.
Flowers just make me so happy! 😊
How cute is this little tree frog that was hanging out on the tea olive shrub? He was sound asleep 😴
I made another Purple Carrot for lunch on Thursday. This was a delicious Buddha bowl! I roasted the sweet potatoes, red onion, and cauliflower with olive oil at 400-degrees until they were lightly brown.
I topped a bed of arugula with the cauliflower, sweet potatoes, red onion, avocado, hemp seeds, sunflower seeds, lemon juice, and vegan ranch. I added a cup of brown rice pasta with garlic as well. I was so hungry and wanted the salad to be a bit more hardy. The buddha bowl was DELICIOUS!! I mean, look at it 😋
We headed out to downtown York to pick up coffee at On The Rise Bakery. It’s a new spot, and during this time, it’s important to shop local. I’ve been wanting to try this place after seeing it all over social media, and the coffee did not disappoint! We decided to pick up some baked goods for my dad and kyle because those looked fantastic, too!
They are known for their cinnamon rolls, and by the reaction from my family, you may want to try these out!
We stopped a few home stores on the main street, and it made me so excited to move in. I’m refusing to buy anything for the home until we are in, but it was so hard while walking through the decor stores with all the custom throw pillows and furniture. After planting and being out and about all day, I was exhausted by the time 8 pm rolled around. I jumped in the shower and went straight to bed!
I had SO much work to do on Friday.
I had gluten-free peanut butter toast to start the day with a vegetable scramble.
I headed out to Home Depot and Lowes to pick up moving boxes and touch up paint for the house. I painted the entire hallway, but when I stepped away, I realized the paint didn’t match. I bought the same Sherwin Williams color that the builder listed, but it was so off. I had to go back to the store and do it all over again.
It was a day…
I cleaned up the painting mess around 6 pm, put a pizza in the oven, poured a glass of wine, and sat outside for some fresh air with Grumples. Thank goodness it was Friday…
You know it was a rough day when you bust out the Trader Joe’s Christmas wine!
Saturday was a day for PACKING. We packed up over 50-boxes of things to get a headstart and declutter the house for when we decide to list it. This may be weird, but I love packing. I find it therapeutic, and we ended up donating more boxes of things like board games we’ve never opened, pictures, mirrors, rugs, pillows, and dishes.
I mean…😂
After a long day of boxing our lives up, I made our favorite turkey meatloaf, some Alexa sweet potato fries, and a poppy seed salad.
We needed to get out of the house, so we decided to head to the park to play a little tennis. 🎾 It was the first time I’ve played in a while, and it felt so good to get out there again. I can’t wait for life to slow down a bit so I can get back to my tennis group.
Sunday was a day for cleaning. We dedicated Saturday for packing and organizing. We scrubbed down every room, outside space, and area in the house to get it super clean. It’s safe to say this weekend was EXHAUSTING but so productive. I feel amazing now that it’s all over with. I treated myself to a new plant on Sunday. 😆
We picked up more paint at Home Depot, and I went through the drive-thru so I could try the new pineapple ginger drink from Starbucks. It was ehhhhokkkayyyishhh. For an odd reason, it tasted more like soy eggnog. I wouldn’t order again, but someone may like it! 😊 I had my leftover meatloaf for dinner, a glass of tea, watched American Idol, and went straight to bed. 💜

The highlight of my weekend was taking my best friend wedding dress shopping! We got brunch and then went to the bridal boutique and then out for a few drinks with some friends.

Originally, I thought coronavirus wasn’t going to be this big of a deal but now that Chicago is shutting down, it’s so eerie! I’m lucky I can work from home but still! I’m so worried about people who are older and/or more vulnerable than me! I’m staying away from people simply so I don’t pass anything along whether I have it or not.
Highlight of the weekend was packing up my apartment! Moving is stressful but I agree that packing is therapeutic! Goodwill is about to get some major donations from me!
Frozen II just came out on Disney + and I couldn’t resist!

Can’t wait to see/read your posts once you are in your house! looks amazing already! The craziness that is going on is freaky, but I believe it will leave as fast as it came. At least that’s what I am hoping. The highlight of the weekend was just relaxing with my family and hanging out together. We visited some people that we don’t normally see on a regular basis. I am happy we did that while we can. Wisconsin isn’t too terrible yet with the virus yet. I am a sucker for reruns of The Office. It’s always funny even after the 100th time. Since the bachelor is over (Thank God) the only show that I am watching weekly is The Walking Dead. SO. GOOD.

I’m worried about the virus and potentially being the person who infects others. It’s even more worrying as we seem to be doing nothing in the UK and London is a hot bed for germs anyway!
I had a lovely chilled weekend with my boyfriend, which was well overdue! We went out for breakfast and wandered around a few local stores – low key and lovely!

I’m not out shopping? This is a week-long recap post (my out and about trips were 10 days ago) before CDC made any type of restrictions, and when visiting local businesses was encouraged. I’ve been home for days, working, social distancing, baking, and watching movies. 👍

It´s so nice to come here and read your recap. I mean, with everything going on in the world right now, your blog is a really good escape hatch for me.
Here in Spain we can´t leave our houses for at least 14 days and it´s my third day closed at home. The last weekend wasn´t that bad because I planned my time very well and I cleaned all the house. But today I feel more anxious, I just wish I could take a simple walk… It´s really hard to stay at home for two weeks and pretend like everyting is fine. I really hope it´s all gonna back to normal soon. Of corse I will stay strong, I just have my downs sometimes. I made a list of all the things I want to do, among them come back to drawing.
The good thing of this situation is that I have time to finish all the books I wanted to read and watch series on Netflix. Right now I am watching Elite, Spanish serie on Netflix.

Those tacos look so delicious!
Honestly, it’s completely inescapable for me. I work in the communications department of a university, and I am basically on call 24/7 and attending 8 a.m. meetings 7 days a week to assist with informed decision-making. It’s a complete disruption to so many lives, and at the university, it affects everything from dorming to graduation to financial aid and other repercussions. I’m a pretty anxious person, and being that it consumes everything right now, it’s been tough! It’s especially disappointing to see people panic to the point of self-absorption instead of coming together. I unfortunately cannot work remotely since I’m on the emergency committee, but I am doing my part in social distancing outside of the work setting.
As lame as it sounds, cleaning was the highlight of the weekend. It was the only time I could step away from all the madness, throw on a crime podcast, and decompress.
I am still watching Love is Blind! I also started watching Dracula.

99% of builders mix the paint with white so it goes further. So it might be ABC color but only 50% of pigment if that makes sense. Ive had that issue SEVERAL times.

This post was a such a relief to read after the bombardment of so much important, yet doom and gloom posts out there!
1) My anxiety definitely took a hit the past few days with everything going on, but it’s improving. Lots of fresh air and self care is making a huge difference!
2) Highlight of the weekend was seeing good friends and their sweet dogs, and just enjoying each others company, and again, enjoying fresh air and nice weather! (Canadian winters ftw)
3) Favourite show to watch lately – Gilmore Girls reruns on Netflix 🙂

1. I was doing well, but am currently overwhelmed and stressed to the max. I work at a nursing home in physical therapy and all of our guidelines and procedures are changing, for the better and for the health and safety of our residents. I am constantly thinking about how we might have to completely change our wedding date and everything after we have booked all of our vendors and paid deposits on everything. I’ve been a stressed out mess!
2. The highlight of my weekend was having my parents over for dinner yesterday and having a fiancé who loves my family as his own
3. We started watching the purge movies, it’s definitely interesting and crazy, but it gave me some wild dreams afterwards!

Well we are trying to stay positive but so hard when we live in Northern Michigan and had plans to head south for break but had to cancel! And we still have piles of snow and it’s cold 🙁 but we have been trying to do more crafts,spring cleaning,baking,spa nights,working out,etc. Anything to get us through this!! Hi Tara,
Thanks for your positive post! I think things are just moving faster than we can anticipate, so planning is a little tough right now. As a type-A planner, I’m shifting my focus from the big picture to the day-to-day, and have set goals for the 3 weeks I know I’ll be out of work while MA schools are closed. Each morning I write daily goals & tasks in my planner and I meal plan. I’m currently halfway through the Whole30 reset, which is helping me to be productive and not waste time looking for a snack every hour haha.
Ths highlight of my week has just been being able to get my work done each day (prepping distance learning activities for my students and staying in touch with my school, continuing to teach online classes that I do on the side, and house projects). This way I can spend time with my husband when he comes home from work. He’s lucky to be going in still, so this time at home is a nice reset.
Right now I’m taking an online cinema for class, so I’m watching French films that I’ll hopefully be able to use with my students. I’ve also been enjoying The Politician, Prodigal Son, and lots of documentaries with my husband. We also really like Letterkenny. (It’s brilliant!)
Thanks for all the recipe ideas you’ve shared on Instagram. This is the perfect time to try them! Happy cleaning & organizing!

Okay so i got the Starbucks drink too and I had the exact same reaction LOLOL!!! I am in the process of moving too, so I love reading your posts even more than usual because I can completely relate. Your house is going to be so beautiful when it’s all done. It already is! I’m actually moving from Michigan to Wyoming. My husband and I are due to close on our house at the end of April. I signed up for CBS All Access so between that and Hulu I watched & Finished SWAT last week. Now I’m revisiting an old favorite – Criminal Minds.
My finance works at a healthcare facility for those who are too mentally ill to live at home, so this has been very stressful. I’m lucky enough to work from home but he isn’t and they don’t have any really precautions in place.
I love reading about your house and your gardening! I’ve recently decided to become a plant mom and it’s going spectacularly bad 😂 I’ve lost several plants but I’m learning!

We moved into a very old farmhouse and have had one problem after the other to fix (we have been here three years now in Maine- from Venice, Fl) we are still fixing things. *today there is a nice puddle in the basement which I guess happens when there is rain for weeks* 🤦🏻♀️ I am not good at the smiling and laughing things off I’m still working on it❤️❤️❤️❤️
Once you get into your home and and are settled you will have only the memories of all the worries you had during building time. You will be able to relax and make it yours and I cannot wait to see all the pics!!!!!

I’m 29, have a long history with dieting and I’m just learning to love my body without dieting. It’s strange to say but I feel like I grew up alongside you these past years. Honestly just so unsure. I’m in the health field so I am truly trying to see the positives and what will come when this is over.

The highlight of my weekend was cruising on my onewheel with my hubby and spending time with our kids.
I haven’t been watching much tv, but I recently finished both seasons of “Good Girls” and I loved it!

1. I live in a small province in Canada (PEI) where Covid cases are very low. I also work as an ICU RN so currently I feel ok with everything going on in the world but due to my work situation I am anxiously awaiting a spike in cases.
2. Highlight of my weekend was getting to go to work and socialize with my coworkers. Very thankful to still be working and taking home a paycheque.
3. I watched Oceans 8 now that it’s on Netflix and really enjoyed it!
