Happy Monday! It feels so good to have finally woke up feeling 100%. Last week was rough, I got through it, and all of the rest did my mind some good. Monday through Wednesday I was completely out. I hadn’t been sick like that in years, and I hated it. To make things worst, it was in the upper 70’s almost all week, so it was torture looking outside. I wanted to walk the trails or do something fun, but I couldn’t walk the dogs one block without getting winded. Fortunately, after a few rainy days ahead, we’re going to have sunny and warm weather again! Plus, next week, I’m heading to Disney World! I have so much to look forward to.
I could start my recap post with Monday, but it would just be pictures of medicine. Early in the week, spent my days sleeping, taking hot showers, listening to podcasts, and relaxing as much as I could. I got around to blog work as much as I could, but my mind was not in it.
I felt wayyyyyy better on Wednesday, but not “better” enough to get out of the house. I started power cleaning and putting my energy into house chores. I’ve been putting off the fridge clean-out for a while now, and I thought it would be the perfect time to do it. I took every shelf and drawer out of the fridge and scrubbed every spot! I had to toss out some things that went bad, or products we never used. It felt so good to get the fridge cleaned out!
I decided to give eggs a shot for the first time in over 40 days. I started drifting away from eggs before tapping into the plant-based challenge because they were making my skin break out and they were high on my food sensitivity test. I don’t know what it is, but they now kind of gross me out. I don’t know if it’s because I didn’t eat them for so long or what. After having clear skin for a month straight, I woke up the next day with breakouts. It was the validation that I needed, and I think I’ll be avoiding eggs as much as possible. What are your thoughts on eggs? I have heard so many people tell me they get the same skin issues when eating eggs.
For dinner, we did bake salmon with green beans and sweet potatoes! When I was doing plant-based January (which I’ll be filming a video on my thoughts and recap from the month), I craved fish. I craved it so much!
After being sick for six days and walking around the house looking total zombie, I was in desperate need of a change. My hair was frizzy, matted, dry, and I threw it in messy buns 90% of the time because I didn’t want to deal with it. If I’m being completely honest, I felt insecure about it. I read a lot of your comments on my Instagram when I asked for hair suggestions. I decided to get the full-on chop! I did about six inches off the ends with blonde coloring. I’m not done either; I’m going back in a month to get another two inches off and blonder. I’m just so sick of the long hair and want to do something new. I spent so much time when I got out of the shower trying to detangle my hair, and that’s why it always looked so frizzy and crazy. I just didn’t want to deal with it. Now that it’s shorter, I can actually style it. I’m just really really happy with the results!
It’s crazy that just a hair cut made me feel so much better 💜 If you’re in the Charlotte area, I’ve been going to Dolce Lusso on Park Road for about a year! Ask for Savanna because she is the best!
I was so hungry when I got out of my hair appointment, so I stopped at Chopt because it’s a couple of stores down for the salon. I did a custom build which had kale, romaine, quinoa, sweet potatoes, cucumber, cranberries, edamame, tomatoes, and falafel! Because it was 80-degrees out, I decided to sit on the bench by the greenway and have a bit of the salad before driving home. It felt so good to be outside. The blossoms on the trees gave me all the Spring feels!
When I got home, I started working more on my Colorado blog (which I promise will go live soon.) I sat outside and worked with my oat milk cappuccino! 😊
For dinner, I had the last of the Chopt salad. I also had some cauliflower gnocchi later in the evening.
I spent all of Friday working on a Valentine’s project for Kyle. I’m sure you guys already know what I’m working on if you’ve been reading my blog for a while! When it gets here, I’ll show you guys! For lunch, I had a salad with spring mix blend, avocado, bell peppers, and chipotle dressing (leftover from Chopt.)
Kyle and I grilled out on Friday night and caught up on True Detective. We did grilled corn, asparagus, and chicken that was marinating in bbq sauce for about three days! The food was great.
After dinner, I made some of our favorite chocolate chip cookies! I’ve wanted to film the tutorial for YouTube, but I was way too sick last week. I’m going to get it up this week! I thought this recipe would be cute with valentine’s day m&ms! Maybe I’ll do that tomorrow! 😊 You can find the recipe for these cookies here! I just made some swaps by using almond flour, swerve brown sugar, and less coconut sugar.
On Saturday morning, Kyle and I went to the gym, went to his hair appointment, and did a Trader Joe’s run! I love filling up the fridge with all of Trader Joe’s specialty products. I need to go back because I skipped the produce section only because of Trader Joe’s on a Saturday is CRAZY!
Breakfast: oats, protein powder, peanut butter~
Lunch: Grilled chicken, cauliflower gnocchi, and chive kite hill ~
On Saturday night, Kyle and I went to see The Prodigy. My thoughts? The acting was great. The movie was awful. I hated it and would never watch it again. And if you do watch it, you’ll know exactly why I hated it. There’s a particular part. But, those are just my thoughts. I knew we should have picked What Men Want instead! Can you tell I’m feeling salty?
After that movie, I just needed to watch Spongebob and go to bed.
After walking the dogs on Sunday morning, I had a delicious breakfast!
I had udis gluten free bread with peanut butter, strawberries, and tangerines! 😋
Becca and I met up at our favorite coffee shop (our middle point between houses since we live an hour apart now 😭) to catch up and go over some exciting plans. Oh, and Lights Juicery & Cafe is our spot. 😉☕️
We drove around and scoped out some locations for some photos next weekend. I’m taking engagement photos for her and her fiance, and I’m over the moon excited. We have so many ideas for the photos, and it’s going to be a blast!
P.S. these are the pants I got for $7 at the thrift store in November! They’re originally from Loft & I love them.
We decided to get dinner at Genghis Grill, and I was so excited because I hadn’t been there in so long! The bowl has all kinds of things, but it was huge, so Kyle got lucky and had leftovers.
When I got home, Kyle and I took the dogs for a walk and then sat on the couch and watched the Grammy’s while we both worked on our computers. Fun Sunday night 😉

I think the most drastic thing is that I got out of the shower one day, brushed my hair and then chopped like 3-4 inches off by myself because I was tired of it. (I have curly hair, so you can’t notice when it’s dry)
I’m actually not a movie person – I just watch some on Netflix, so I haven’t actually been disappointed by a movie in a long time.
No Bachelor for me.
Also, eggs. I can eat scrambled eggs and eggs over medium for breakfast but then some days, eggs just really gross me out and I can’t even deal with the smell of eggs. So I only use them in recipes now.

I love your weekly recaps! Your hair looks great. The most drastic change I’ve ever made to my hair was going brunette. I am a natural blonde and highlight my hair on a regular basis so when I did go dark I felt like I was wearing a wig especially because I have blonde eye brows and a dark color never lasted on them. The rose colored jeans were at the thrift store, which is where they belong as they didn’t ‘spark joy’ for someone. Even worse are those fake leather, plastic looking diarrhea boots from the China with the gold donkey heel. I don’t know where to start with those, I mean I can’t even. I think the most drastic thing I’ve done with my hair was when I cut it off a few years ago. I swear it was like 10 inches that I chopped off. It was amazing but then I went through that awkward phase of trying to grow it out but not being able to do anything with it. So now I get it trimmed every once in awhile. I love my long hair but I totally get the annoyance of the upkeep.
I can’t remember the last movie I saw that disappointed me. I’m more of a show watcher and I’m the kind of person that repeatedly watches the same show over and over again cause I know what happens. Lol I don’t like surprises.
My best friend has been trying to get me to watch The Bachelor for forever! I just can’t get into it though! I don’t know what it is but I can’t make myself sit down and watch that kind of drama.

What’s the most drastic change you’ve made with your hair?
I’ve never done anything drastic with my hair to be honest- I know what I like and what I don’t like. I don’t like it short because I get phantom hair syndrome and I feel too exposed lol. I also don’t like bangs because they annoy me and get in the way. I went blonde two years ago and it was the best thing I’ve ever done to my hair.

What’s the last movie you saw that disappointed you?
I haven’t really been to the movies in almost a year. My husband and I travel internationally a lot and we watch way too many movies on the long plane flights. I think I got burned out. I guess the last movie I saw that disappointed me was Ocean’s Eight? I found it kind of boring despite the plethora of famous actresses.

Yes, it is definitely my guilty pleasure. I started watching since Ben’s season and this is my favorite season so far, hands down. I think Demi is my favorite personality- I really appreciate how candid she is. I hope Hannah G (the one that looks like Barbie) wins. She has that innocent and optimistic vibe, but you can tell she has real chemistry with Colton. They seem like they have enough to talk about, but there is also undeniable passion. Everyone seems to think Cassie will win though. Who knows?

OMG YES! I LOVED DEMI! I actually thought she was the “realist” because she had no filter. The last movie I saw in theatres was Vice. Growing up on a military base, I didn’t realize how much that movie would hit me. I cried for hours afterwards because I was just so frustrated, thinking of all those who lost their lives because the choices Dick Chaney made. Very frustrating.
The movie was phenomenal acting wise though.

The most drastic hair change i ever made was bleaching it to silver and chopping off 8 inches. It was honestly my favorite color and I wish my current job allowed “funky” colors.
As for the last movie I saw that disappointed me was Ready Player One. I listened to the book first and expected differences, but not to the point of the entire first challenge being completely changed.

My husband and one of his best friends convinced me and his friend’s wife to finally watch Talladega Knights with them… and I hated it. I think I snickered once, maybe? It was honestly just raunchy and not my kind of humor at all. It didn’t help that it was the unrated and uncut version, so it was even worse and they swap out the friendlier (and apparently funnier, according to my husband) scenes for ones that were raunchier and didn’t really add anything to the movie at all. Total disappointment of a movie for me, for sure.
The most drastic change I have ever made with my hair was chopping it off to donate it several years ago! Currently, my sister and I are in a no-major-cuts five year challenge! Whew. We weren’t sure we’d get there, but it ends in 2020! So we’re actually relatively close! I think we both plan to donate it again when the time comes to get cuts! Super excited about it!
Also, with it having been a high of 50 on Super Bowl Sunday (super BORING Bowl, ugh.) we actually grilled out some brats for the game with friends! That has been the highlight of the last month or two because we’re back to well below freezing sitting right in the middle of a snow globe at the moment. Sounds cute, until you get stuck driving down the middle of the road, or until you have to push a shopping cart full of groceries through 4-5 inches of snow in the parking lot. That was my workout for the day! Haha. Because of our rather let-down weather (hello, winter.) I am super jealous of your 80 degree afternoon! I can’t WAIT until it’s even 60 again here! Woo!

I cut 12 inches off my hair last June, I’ve always had long hair so it was a big change, however I’m loving it. Have you considered going to the doctor to see if these food sensitivities are actually legit? I dont doubt the way you feel when you’re not eating foods, but as someone with an eating disordered past, I know it’s an easy way to fall into a restrictive pattern again. I’m worried you are using these “sensitivities” to avoid certain foods to lose weight.

I have been to the doctor and taken blood tests, twice actually. I could definitely see why you’d think avoiding foods like that would be because of restricting, but I see it as totally the opposite. I think eggs, foods with gluten, and dairy are still healthy. I wish I could eat them, but I end up looking eight months pregnant with bloat and feeling like my insides are being ripped out with pain after eating them. I eat way worse now that I’m not eating those foods (processed gluten free pizza/burritos/veggie burgers/tofu.) <--- those are defintely not foods i'd eat if I were trying to lose weight. If I was looking to avoid foods to lose weight, I'd probably start with my candy section in my house, not good wholesome foods. I don't believe in cutting out food groups in order to lose weight and think it's all a scam. If anyone has ever felt the pain from eating those foods, they'd totally understand why I choose not to eat them. I do appreciate your concern though, and I 100% agree with where you are coming from.

Lol you think your teenage year hair was bad? LET ME TELL YOU! I had THE BLACKEST HAIR and the underneath was blue, purple, pink, blonde, red, and turquoise!! AND I LOVED IT lol It went great with my nose ring 😂

First, I want to say that I am glad you are feeling better and love the hair!! Been following your blog recently and love it! I wanted to comment on the eggs. They do not bother myself or my family at all, and I eat a minimum of 2 a day (most days). But, the best eggs to eat are pastured and not pasteurized. Even if they are organic, they are still fed soy which is still not good. The “fed a vegetarian diet” is, actually, not good! Chickens were meant to be out eating weeds and bugs, not grains, especially soy, and even more so if it is not organic. Soy is toxic, especially when not fermented (I have a doctor of Chinese medicine who told me so. The Chinese do not use soy the way that we do here in the US.). Maybe check that out. Right from the farm is the best and most nutritious way to eat them. Unfortunately, finding farms in some areas is easier said than done. I used to live in PA where the organic farms were everywhere. Where we are now, not so much……tough to find and because of that, very expensive.

In college I dyed the front part of my hair pink. That’s probably the craziest thing I’ve ever done- I’m too boring/afraid to do much else to it. I loved having pink hair though; people treated me differently (in a good way! Cashiers and random strangers would open up to me as if I was their friend) & I would definitely do it again.
Ugh, Jurassic Park: Fallen Kingdom. What a terrible movie. We held out on seeing in theaters and just rented it recently. I’m SO glad we didn’t spend $25+ to see it.

That sounds like a pretty fun style!! I think it’s funny that you mentioned people wanting to open up to you when you did that! Whenever I’m with Becca, people will see her tattoos, feel relatable, and start pouring our their whole lives tories! It happens everywhere we go! lol We always laugh about it.

Hi, Cara! I don’t really use a foundation that often! I just do a light bronzer powder and blush! Whenever I feel like I neeeeeeed some coverage, I use IT cosmetics!

Love the hair!! You inspired me to go get the dead ends chopped off mine, and it feels a million times better. When I was 5, I wanted to be Dorothy from the wizard of oz for my themed birthday party. My mom obliged and used a “kid approved” red hair dye that was supposed to wash out with one shampoo. Apparently my blonde hair really liked the dye because I was a redhead for a YEAR. I guess that’s not something drastic I did, but my mom sure takes the cake 😂
And Split was a huge disappointment to me! I thought it was going to be a documentary kind of movie about what it’s like to have split personality disorder but instead it was a creepy movie about kidnapping little girls. YUCK.

I just recently got a partial side shave! It was a very bold choice, but I love it! I guess I don’t have a disappointing movie to report. I mostly watch Netflix! However, I do not have any intention of watching The Prodigy- I don’t scare myself on purpose lol! No Bachelor for me, either. I stick to Netflix. haha
My husband and I don’t eat eggs often. Usually when we do we get sick. I’m sorry to hear it breaks out your skin, but glad that you were able to pinpoint what it was!

Totally late to the game but I had some fre time during my son’s nap and am catching up on your posts! The most drastic hair change I made was cutting off 11 inches and going from blond to auburn! But I’m back to my natural now, too much maintenance going that drastic.😂 And the new Fantastic Beasts movie that came out in December. We went to see it on my birthday and I actually walked out of the theater! It was the first time I had ever done that. Same reason, there was a particular part and after having my baby I’m way too sensitive to that stuff now lol. Wow that was a long comment. Thanks for all the great posts! Hope you’re having a great time in Disney world! I can’t wait to try those cookies.
