Hello & Happy Tuesday!
After two and a half weeks on the Big Island, I’m finally flying 4265 miles home today. I’m very sad to be leaving one of my favorite places, but happy to be back home with my dogs. I have missed them so much (and my boyfriend too, of course!) I have done so many exciting things here, but getting back into my routine of walking the dogs, cooking at home, and attending my yoga classes sound really nice right about now. Another thing I’m looking forward to is the Blue Apron box sitting on my porch as I type. I made sure to pick out my three meals from the eight offered on their menu, and had it delivered just in time for my return. Going grocery shopping is the last thing I want to do when I get home. I get a box delivered every week but skipped the weeks I was away. I love that you can cancel or skip anytime! It makes it really convenient.
Looking at all this food while sitting in the airport is making me so hungry, but I wanted to share some Blue Apron meals I made this spring, and I’ve included a video showing how easy it is to make the meals as well! One of my dad’s all-time favorite meals is the patty melt. A patty melt is a hamburger patty with caramelized onions topped with swiss cheese between two slices of rye bread. When I saw it on the menu, I knew I had to add it to the box. My dad likes to stop by during the week, so I thought it would be fun to make this for him for lunch.
This was one of the easiest recipes I’ve made with Blue Apron, and now I’ll know how to make patty melts for my dad from now on. I am going to try to make them with ground turkey instead the next time.
I was super excited for Blue Apron pizza night. This pizza was so large that it could have fed four people. For starting at $8.99 a serving, Blue Apron is such a good deal. You’ll never be hungry after a meal. Kyle usually has to finish my plate for me.

A couple weeks ago, we had a horrible storm! I had just finished cooking this Mexican Casserole, and we sat around the living room with candles, playing checkers, and enjoying the dish with the pups begging for bites.

This post made me so hungry! One of the things I love about Blue Apron is that it teaches you a ton of new recipes you wouldn’t normally make, and then you end up re-creating them for your own rotation! Ben and I STILL make the black bean tostadas we learned months ago. Plus, nobody wants to go grocery shopping right when they get home, so having food already waiting is super nice.

They have vegetarian, but not fully vegan options yet. They’re always doing new themes with the menu, so keep watching out for a vegan menu!
