I hit a personal record last night. I wasn’t feeling good over the weekend, and all my body wanted was sleep. I don’t sleep in, I go to bed at a pretty reasonable hour, and I can operate without hitting the seven-hour-sleep rule. Last night, I fell asleep at 6:15 pm. I ate dinner, closed my eyes on the couch, and I was out. I woke up to Kyle putting a blanket on me at 11 pm, and then I made my way upstairs and slept all the way until 6:30 am this morning. That’s about twelve hours of sleep. I don’t think I’ve ever done that in my entire life. Whatever I was coming down with, the rest helped because I feel 100% today.
To top off the excellent sleep I got last night, I headed out this morning on a four-mile walk with my dogs. What’s so great about that? Well, I was in a tank top. It was 65-degrees at 9:00 am this morning. Hellllllo! It’s going to hit 76-degrees on Thursday, so I’ll be heading out to do some outdoor DIY projects! When I spend a lot of my week behind the computer screen or cooking, my recaps can be pretty blah. I apologize for the not-so-exciting recap this week. I didn’t want to skip out on it altogether, so I’m sharing some things I ate and did this week. It’s Valentine’s week, and it’ll be warm, so I’m hoping to have a more entertaining recap next Monday.
This is going to sound so pathetic, but I look forward to Monday. I do love my weekends and look forward to those as well, but I get so inspired over the weekend and can’t wait to jump on weekly projects. Also, Bachelor Monday! Duh.
Tuesday morning breakfast overview: Half bagel, protein yogurt, and pumpkin seeds (chocolate fudge Orgain plant based protein powder + cinnamon pumpkin Superseedz) Lemon ginger tea with extra ground ginger and fresh lemon juice. (yogi tea brand + anthony’s organic ground ginger.) Along with my other medication, I take a vitamin D3 supplement and tumeric.
I usually have my supplements with breakfast a couple hours after coffee.
I got a call from my mom on Tuesday morning asking if I could go to the grocery store with my dad to help him pick out some low carb options and put together some fun low carb meals. His doctor wants him on a low carb diet, so I was excited to help him out. He’s already lost ten pounds in the first week and a half. Way to go, Dad!
The first dish I put together was a chicken and broccoli salad. This a great little recipe to eat on top of romaine lettuce and cottage cheese.
Ingredients: 6 cups chopped broccoli florets, 4 cups shredded chicken breast, 1 cup sunflower seeds, 1/2 cup chopped turkey bacon, 1/2 small onion diced, 1/2 cup light avocado oil mayonnaise, two tablespoons apple cider vinegar, 1/4 cup swerve, and 1/2 tsp black pepper.
In a mixing bowl, combine the apple cider vinegar, chicken, mayonnaise, swerve, and pepper together. Pour the mixture over the chopped broccoli, onions, bacon, and sunflower seeds. I put it in a to-go container and gave it a good shake with the lid on. Let the salad sit in the fridge for three hours to marinate.

Another one not pictured: chopped tomatoes, cucumber, celery, black pepper, mayonnaise, and crab meat. A seafood salad to go in lettuce wraps.
One of the best meal prepped low-carb recipes has to be the egg cups! They are so easy to make, and you can just eat them for every meal. I love making these.
Here is one of my meal-prep blog posts with my egg-cup recipe.
These egg cups had 18 scrambled eggs, 1 tsp garlic powder, 1 tsp onion powder, a sprinkle of black pepper, 1/2 cup chopped spinach, ground turkey sausage, chopped turkey bacon, sauteed onion and peppers, and a light sprinkle of cheddar cheese on top. I baked these egg cups for 17 minutes at 350 degrees. Make sure to grease the pans, or they’ll stick!
Wednesday morning breakfast before diving into my workload.
Two scrambled eggs, waffle (ate the other half hours before with coffee), grapefruit, and tea! The grapefruit was incredible, which reminds me! I need to stop and pick up more.
It finally stopped raining, so I headed to the grocery store to pick up a few things. I can’t stand when I’m out of my sparkling water! I drink it religiously. I also needed some fresh flowers because they help my rainy day/winter blues.
After working the rest of the afternoon, I went out on a three-mile dog walk with the boys. I took Leo 1.5 miles and Grumples 1.5 miles. It was so nice to just get out of the house with them.
For dinner, I made zoodles, turkey tomato sauce, and sauteed kale. The zoodles kind of tasted like slimy worms, so I ended up toasting a bagel and eating that with my sauce instead. I like sauteeing chopped zucchini instead of the zoodles, and I should have done that instead.
I headed out on Thursday morning for a long walk, and then took a yoga class! It was funny because I went to yoga in my winter coat, and when I came out, it was tank top weather.
I had so much work to catch up on Thursday that I hardly left my office. I wanted to get everything completely done so that I could just have a relaxing Friday and weekend.
Kyle ended up LOVING his meal prepped meals from last week, so I decided to surprise him and do it again this week. Instead of cooking his chicken on the stovetop, I slow cooked it in the crockpot to make it even better. I don’t mind doing the meals because I’m usually already in the kitchen cooking on Fridays. It saves him a lot of time and then gives us more time together on the weekends. He has a really busy work schedule so I like helping him out when I can.

My Friday creation was a success. I made banana almond blondie bars with chopped walnuts and figs. IT WAS INCREDIBLE! I’ll have that recipe up soon because I just have to share it with you ASAP. It’s also grain free, gluten free, dairy free, soy free, and no added sugars. Start saving those extra ripe bananas now!
I made homemade stove-popped popcorn with sea salt after dinner to have while watching the Olympics. (I don’t even remember what I had for dinner, but apparently, it isn’t pretty enough or didn’t even make it to the plate to photograph.)
I woke up on Saturday morning, walked the dogs in the pouring rain, and decided to do a floor workout instead of going to the gym. I’ve been filming all of my workouts, so those will all be released soon! 😀
Some equipment I keep for at-home workouts: I try to avoid the gym during flu month as much as possible! Using my equipment is much safer. Plus, it saves time, and you get to do it all in the privacy of your own home. If you don’t want a gym membership, and you want to get fit at home, you can do it! You can wake up thirty minutes earlier and get in a workout without having to drive all the way to the gym and go to a class or deal with a ton of people. It’s great! I’ll be using the equipment below in my videos!

My morning routine starts with tea 🙂 (extra ginger and lemon for cramps!)
For breakfast, I had two eggs and sweet potatoes on the side. I also had a banana while cooking! Bananas and sweet potatoes are great for cramping because of the potassium.
After shooting some food photos for the blog, I made a turmeric and ginger latte to sip on while Kyle went to the gym. I have been getting so many questions about my milk frother! I have a discontinued model, but their new version is cheaper and SO MUCH COOLER! Here is the link to that one!
Kyle and I decided to go see a movie later in the afternoon. We both wanted to see The 15:17 to Paris! It was a pretty good movie, and I loved that those boys got so much recognition for all the lives they saved that day on the train. Incredible heroes! They weren’t the best of actors, but I loved hearing their story 🙂
I made honey mustard roasted chicken (recipe at the end of this blog post) for dinner, heated up some sweet potatoes and had some avocado on the side. After dinner, Kyle and I took the dogs for a long walk! We finally had a break in the rain.
I woke up so sick on Sunday! The whole works.
I finally felt better around noon and forced myself to get up and clean. I wanted to feel like I did at least something. I spent most of the day laying down and working on the computer.
I think watching Fixer Upper all day inspired me to do something.
In the afternoon, I had a protein shake to get something in me. It had banana, almond milk, chocolate orgain, and ice.
I made a giant lunch salad around 2 pm. It had avocado, pecans, roasted butternut squash with cinnamon, arugula, pears, strawberries, blueberries, and honey balsamic.
This dressing is life.
I love all of the Tessemae’s dressings! 🙂 This honey balsamic makes a great marinade as well.
This salad is vegan and gluten-free without your choice of protein. If you want, you can add eggs to make it vegetarian, tofu to keep it vegan, or grilled chicken! I added my leftover honey mustard chicken from Saturday night.

What’s the longest you’ve ever slept?
– After I have surgeries (that makes it sound like I have them all the time, I’ve only had 4) I sleep FOREVER. The pain medication knocks me out hard so I sleep for like 14+ hours.
Night owl or morning bird?
– Neither? I hate mornings, so much. I wish I loved them and I’ve tried, truly but I’m just angry in the mornings regardless of what’s happening. Night owl, I have such a hard time staying awake unless I’m out on the town. I guess I’d lean more towards night owl, because usually once it’s evening time I get a weird burst of energy and motivation.
Do you prefer home workouts or gym workouts?
– I like the convenience of home workouts, but they’re hard for me to stick to. I’ve recently learned that in order for me to truly get results from my workouts I have to participate in classes…which I dread. I find that if I plan on a home workout there is always something that comes up that makes it so I end up putting it off completely.

We do not. I don’t mind having sips of wine with dinner, but we don’t drink just to drink. I’ll usually have like ten sips of something and I’m over it. Just not something we’re really interested in. There is nothing wrong with it! just not for us.

I can count the number of times I’ve had drinks or gone out (which most have been on the blog) and it’s not a lot. It really isn’t my thing, and never has been. I don’t mind having some wine with dinner but that’s pretty much the extent of it. I find more joy in drinking tea, watching movies, walks, and calming things. Without getting into details, I see what alcohol does to people and I made the decision to never let that be me.

I’d probably put chickpeas on top, my mom always did that growing up 🙂 It’s hard to decide between at-home and gym workouts– I like gym workouts because they help me stay consistent (and now the people at the front desk know my name, lol), but I love running outdoors like this morning, since it was so nice out here! I think the longest I ever slept was either 14 or 15 hours, but it was when I was sick a loooong time ago!

This might sound weird but have you done it without cooking the zucchini noodles? I usually leave them cold and just pour the hot spaghetti sauce on top – it warms up the zucchini but it still keeps that ‘al dente’ bite. I totally agree that they have a weird texture when cooked as zoodles.

Taralynn, have you tried consuming bone broth for your endometriosis? There’s lots of research on it. I like to make my own bone broth, then I grate fresh turmeric and fresh ginger into it. I sometimes add half a lemon or homemade fire cider to it as well. I drink this every morning. I realize not everyone is lucky enough to have access to fresh turmeric (San Diegan over hear–it’s easy for me to find) but the powdered stuff is fine. In fact, I have the Anthony’s brand turmeric powder right now. You should look into bone broth if you haven’t already! Sooooo many benefits and it’s one of the most nourishing things you can put in your body. Great for your skin, too!

Longest I’ve gone without sleeping was while in labor in the hospital both times. It was impossible to sleep in the hospital with contractions. Overnight, and then I didn’t have my babies until like mid afternoon.
I honestly like mid morning. I have a rhythm and a flow to things, and the mornings are so rushed with two kids. Once I’m at work and can focus on my day, that’s what I really enjoy.
I love taking yoga and cycling classes, but time and funds have made me work out at home. I find a lack of motivation, because there are so many others things I could or should be doing. I am learning to make small pockets of time for me, because my boys deserve a healthy and strong mom 🙂

1. The longest I’ve ever slept was something like 18 hours — it was nuts! I was in middle school and it was after one of the midnight Harry Potter premiers. I was awake for 2 days straight leading up to the party and once the shenanigans ended, I was OUT.
2. I’m definitely a night owl! Some of my best work takes place after midnight. I used to work the night shift so it was perfect. I’ve been back to working days for 6 months and I still struggle to wake up on time!
3. I prefer the gym! When I try to work out at home, I lose motivation so easily or get distracted. Once I walk in the gym I’m already in the workout mindset and it’s so much easier for me to kill it!

To answer our questions I am definitely a Night Owl, and I have slept a crazy amount before… I think the longest was 18 hours, only because I worked a bunch or extra night shift at the hospital and had stuff going on during the day so when I finally got a day off to sleep I slept! I’m glad you’re feeling better! I think the longest I ever slept was 12 hours on several occasions. But I’m usually good with 7 hours. Sleep seems to really do the trick when you’re feeling sick! As I’ve gotten older, I’m much more of a morning bird. Although it’s still hard for me to wake up before 7:30am (lol!), I enjoy it when I do. I like the feeling of being awake before the rest of the world (in my mind haha). It’s like the calm before the storm with the storm being a day at work! I prefer working out at home just because I get super self conscious at the gym. But it’s harder to work out at home where I currently live because someone lives below me and I don’t want to be jumping all around and making them angry lol. I’m ready for the warmer weather to hit because exercising outside is my all time favorite! Hiking especially 🙂

I agree. Sleep seemed to be the best medication out there. I felt instantly better when I woke up. I wish I could sleep past 7, but my body won’t let me! Lol I used to live above someone and I always felt bad about my workouts. That always pushed me to go to the gym, or do workouts that didn’t involved jumping around.

I am a total night owl! I have such a hard time going to sleep and I always seem to get a second wind later at night. If I don’t have to get up in the morning, or even sometimes when I do, I’ll stay up way past midnight. I am not a morning person at all! I need at least a good hour to myself to wake up and get going. I do like getting up in the morning and getting things done, but I’ve always liked to stay up late. I have no idea what the longest I’ve slept is. But, I would guess somewhere around 12 hours. That was when I younger. Now I can’t hardly sleep in, even if I do stay up late. I’m usually wide awake by 5:30 am. I guess I am a night owl and a morning person…just not a happy morning person. LOL

Sometimes the low key uneventful weekends are exactly what you need. I’m much more of a morning person if I try to do things late at night I just get loopy so I prefer early mornings to conquer important tasks. I actually prefer gym workouts to at home workouts. Mostly because when I work out at home I usually end up distracted. (like any ab exercises on the ground I suddenly realize how badly I need to sweep and end up proscrasticleaning instead). Also, I love that you helped your dad with meal ideas! Idk what it is, but I always feel so happy and proud when my parents enjoy a recipe I made. My dad just tried the avocado smoothie we came up with and it literally made my day when they sent us pics with the strawberry garnish and all :).
I SUCK at sleeping in or getting loads of sleep. 8 hours is usually my mad. And I’m not a night owl OR a morning bird haha. I love to be in bed by 9 but I hate getting up super early. My solution is I just do a lot of work IN bed haha. It works!
Currently I love my home workouts. It helps cut down on back and forth time, and I also feel like I can go HAM and not have anyone judging me haha. And I also love just blasting my own music and not worrying about headphones!

On another note, I love that you take Grumples and Leo for such long walks (I’m sure they love it, too!), and I really struggle with doing that. I live in a neighborhood that’s almost like a NYC grid with the streets, except they stop connecting after about 4 in each direction. I mapped it out and that’s only about half a mile to do the loop. How do you create a loop that doesn’t get you totally lost and sent in a crazy direction, but that’s still nice and long?

I love walking them as my workouts! Luckily, you can’t get lost where I live! I think you should map out a route that is familiar to you so you can get used to it! Actually create several routes that are familiar. You don’t want to do the same route every day! Keep your phone and maps out if you get lost.

Do you ever cook down the spinach before adding to the egg cups? You could get way more spinach in each egg cup by just throwing it in with the peppers and onions at the end so it gets a little wilty. Also, cooked spinach is easier to digest!

I don’t eat any of those prepped meals. Kyle eats those throughout the week! I’ve been helping him out to save him time on the weekends! I’m much faster at it lol and then we get to spend more time together on the weekends instead of him spending half of saturday meal prepping.
