Good Morning & Happy Halloween!
I’m a bit excited over here. I am having coffee with the fireplace turned on for the first time since last winter. It’s officially cozy weather🤗. It’s 37 degrees, so I plan on walking the dogs later in the morning when the sun comes up, and the temps rise a little. I’m still in a bit of a weekend coma. If any of you follow me on Instagram, then you know I was on a press trip in Jackson County. I can’t believe this gem of a place was only two and a half hours away from Charlotte. I had the most amazing time, and I am already planning on taking my entire family back up there soon. We went horseback riding, hiking, flyfishing, brewery tours, ate at delicious restaurants, visited coffee shops, pottery shops, stayed at a beautiful and history-rich inn, and so much more! I took over 1600 photos from the weekend, so going through them has been a blast. I’m excited for you all to see the post! It makes me wonder how many places there are out there just waiting to be discovered. I had so much fun.
This weekly recap post will be a bit shorter than what you’re used to! I spent a lot of downtime writing, so more time stuck inside, which isn’t that great for photo ops. I contemplated even writing a recap post this week, but I’ve had a recap post each week for the past two years, and there is no breaking that streak now! I guess a small and not-so-exciting recap is better than no recap at all. 🙂
On Monday morning, I packed up all of the boxes for Coffee Giveaway, and don’t worry; they weren’t in the box like that. Bubble wrap and tissue paper made its appearance. Kyle enjoyed my morning singing and rap enough to snap the entire experience. If anyone ever got ahold of his snap library…
Speaking of giveaway…shall I do a Christmas one?….
I spent the rest of Monday blogging last week’s recap and hiding out from the rainy weather. Around four, I headed out to a massage appointment in hopes that it would help my pulled muscle in my back, and it most certainly helped. After the massage, I ran over to the mall to buy the Adrianna Papell dress I was talking about weeks ago. I said I wasn’t going to buy it until it went on sale, and it finally did. I left the mall around six and headed uptown to celebrate our friend, Steve’s, birthday.
The rain was nonstop all day! I’m kind of glad it was because I ended up getting a lot done.
We headed to Aria in Uptown for Steve’s birthday (last year’s birthday) dinner. I ordered the wild caught salmon alla Plancha, and Kyle and I split some of their grilled meatballs. The meatballs were the best part. The salmon was good, but I’ve definitely had better for cheaper (too honest? sorry.) I mean, it was served upside down, so maybe the chef was in a hurry. They made up for it by having incredible tasting espresso. I know a shot of espresso at 9 PM sounds crazy, but it doesn’t keep me up.
Kyle found out some amazing news late Tuesday night before we went to bed, so we were up talking late and just filled with too much joy to go to sleep.
I wanted to get Kyle a congrats gift, so I headed out on Tuesday morning to one of his favorite stores to pick out a new briefcase. I was shocked that he didn’t have one, so I wanted to get one he’d love! You can never go wrong with gifts for your boyfriend at The Frye Company.
I ended up going with the Logan Top Handle bag in the Cognac color. He LOVED it! He had to fly to California for work yesterday, and he kept sending me pictures of the bag at the airport, on the airplane, at the hotel, and in random places all day long. It made me laugh, but I’m happy he loves it! He deserved it with his accomplishment! I wish I could brag on him and tell you guys more, but I do love keeping his personal life as personal as I can.
I headed to the gym with him later in the evening, and then we stopped at Panera to pick up dinner. I always order the Fuji Apple salad and customize it by adding kale, cucumber, blueberries, grapes, pumpkin seeds, extra chicken, avocado, egg, and no cheese. I usually add two cups of kale from home and half the salad into a large bowl and then having the same thing the next day. The Panera salads are always so big!
Kyle and I started a new show, and then headed to bed!
On Wednesday morning, I got up early and took the boys for their walk. When I got back, Kyle set up my coffee for me before heading out to work. He left the sweetest note, and it made my heart flutter. I don’t know how I got so lucky.
For breakfast, I had scrambled eggs and a blueberry waffle. The waffle was still toasting while I took this photo.
I got ready for a fun night on Wednesday!

On Wednesday night, Kyle and I were invited to an amazing dinner prepared for us by Chef Luca! I am going to have exciting details about this dinner on my Instagram tomorrow! Look out for that post!
Goat cheese Dolce Creme Brule…omg…
There was lemon juice in this espresso. I would never have thought about mixing the two, but it was surprisingly enjoyable.
Thursday morning breakfast: Eggs filled with sauteed kale, pineapple. blackberries, banana, and a waffle with peanut butter. Unfortunately, Leo enjoyed my waffle while I was putting the camera away. Note to self *never leave your plate on the coffee table.
I was all over the place running errands on Thursday. I decided to go through all of my winter clothes and get rid of what I won’t wear. The cool thing about the ThredUp clean out bags is that they donate the leftovers to charity.
I picked up salmon from Earthfare while I was out and about for dinner.
I also bought prepared zoodles to go with the salmon. I’ve been obsessed with these lately! I have a veggie spiraler, but the convenience of these already-prepared zoodles makes it so easy and mess free.
I sprayed the pan with cooking spray and sauteed the zoodles until they were fully cooked.
I flavored the zoodles with pepper, red chili pepper flakes, garlic, onion powder, and paprika.
I seasoned the salmon with garlic powder, black pepper, onion powder, dill weed, paprika, red chili flakes, and gluten-free teriyaki sauce.
I baked the salmon at 400 for 23 minutes, but the baking time will depend on the size of your salmon. Mine was pretty thick, and I like salmon to be cooked medium.
Thirty-minutes meals for the win! Steve and Kyle enjoyed it too 🙂
I was up bright and early on Friday morning! Becca and I were heading out at 7 AM for a weekend in Jackson County. We were so excited 🙂 Before I took of, I wrote a post about fitnes & how I’ve been feeling lately..hope you read it!
Easy on-the-go breakfast: RX BAR & a Honeycrisp apple. I found Honeycrisp apples for $1.99 a pound at Earthfare! WIN.
About an hour into the drive, we stopped at Dunkin for much-needed road trip coffees. I always order the medium roast at Dunkin and it’s sooooooo yummy. No cream necessary!

My weekend was INCREDIBLE!!!! I can’t wait to share it with you! Post coming very very very soon. A big THANKS to Jackson County for showing Becca and I an amazing time.
Some of you were asking who takes care of the dogs, but Kyle was home all weekend, so he had so much fun with them. He took them on his own little trips! I had lots of snaps sent to me 🙂
Also, Kyle sent me this text while I was out flyfishing and it made my heart melt. He knows I’m obsessed with Charleston and also with coffee, so he picked up this coffee blend for me 🙂 Again, how in the world did I get so lucky! I love him to pieces.
I was really sad to leave but happy to be home with the boys! We stopped for road trip coffee and took off for Charlotte.
The drive back was beautiful. Fall foilage in the mountains and fields of Sunflowers near Charlotte 🙂
When I got home, I walked to B.Good with Meighan for some food to-go!
I ordered their lettuce wrap turkey burger and a kale side salad. My salad had kale, butternut squash, sunflower seeds, chickpeas, brussels sprouts, and a vinaigrette.
I was happy to be back and head out for a walk with my boys! Missed them so much 🙂
Early morning Monday stroll.
Grumple’s road back with his head on my shoulder the entire car ride. I think he missed me 🙂 I spent all day doing laundry, writing, grocery shopping, walking the dogs, cleaning the house, and getting everything in order again. Today, I’m painting the office with my dad! We are also going to rip out the carpet and add new flooring.
For dinner, I sauteed some butternut squash and zucchini noodles, kale, brussels sprouts, and ground chicken. I added one tablespoon of gluten free teriyaki sauce, and done! Easy fifteen-minute dinner.

This question might be a bit out of the ordinary but when you moved to Charlotte how did you find your “place” so to speak with your friends and Kyle? I just started my career in a new city and am still working on finding that place. You seem to have found something in Charlotte that I wish to find in my life in a new city!

I think moving is always going to be tough. I know one day I’ll leave Charlotte and have to make new friends all over again. I’m pretty introverted, so it doesn’t bother me that much, but it is nice to have a group for sure. I think in the early stages of living somewhere new, you have to be 10x more outgoing than you normally would. Try to find groups and meetups for the things that you enjoy. Walking groups, church groups, fitness classes, running groups, sports, or anything you’re interested in. It only takes meeting one person that will eventually connect you to more and more and more people. I’ve been here for 3 1/2 years now, so I’ve had some time to fall into place. You’ll meet people you like, some you don’t, but just put yourself out there! 🙂

Hi Taralynn! So cool that you went to Jackson County, I grew up about 45 min west of Sylva in a place called Robbinsville. If you ever go back to Jackson County I highly recommend the trip to Robbinsville and a stop along the way in Bryson City for the Great Smoky Mountain Railroad. They’re both much smaller mountain towns but so beautiful. My hometown has the Cherohala Skyway which takes you from NC to TN with elevations of 6000 feet, the views of the mountains are AMAZING–especially this time of year! And a visit to Tapoco Lodge and a ride on a road called the Dragon (it has 318 curves in 11 miles) is also a must if you visit. 🙂 Always love reading about your travels!

Scary movies I’m okay with… but not very often! I’m one of those people that always has to watch a not scary show/movie afterwards! If you’re in the mood for a scary movie… watch Hush on Netflix. It was SOOOO good!! And I’m not a huge fan of scary movies, but I will admit, that one was super good. And yes, I did end up watching the Great British Bake Off afterwards.

As always… Kyle and you are the CUTEST. It’s those little notes and sweet gestures that make it SO GOOD. Ben and I have been together for 9 years (HOLY MOLY), and we still leave each other silly notes and stuff. It keeps the spark alive! We forget that those tiny things make the biggest impact.
I also love how you always use spices in your cooking. I KNOW spices add so much flavor, but I always forget to use them. I’ve gotta get better at it, so I vote for cooking videos!
NO on scary movies. I will literally be up all night waiting for something terrifying to happen!

Fantastic recap!! Your pups are definitely the cutest. Your press trip looks amazing, can’t wait to read about it. Yes! Kyle should do a recap post would be amazing to read. Yes to scary movies on Halloween 👻 but I always end up double checking the locks before going to bed. Both of those tutorials would be great. A tutorial on how you warm up pre run and workout classes, would be amazing , I am doing my first 1/2 marathon on Sunday and warming up has been one of them hardest things for me to make sure I warm up the right mussels etc. Hope you have a great weekend!

I WAS THE EXACT WAY!
But, you have to try them cooked different ways. I slowly started adding them into my diet. I started topping sandwiches with peppers, eating stir fry, and sneaking in vegetables in every way possible! Eventually, I just grew to love them! Salmon is amazing, but only when cooked properly! Just keep trying! You’ll eventually like it!
