Happy Thursday! Where the heck did the week go? I’ve been spending the past couple days working on the back patio. I cannot wait to show you how the furniture build turned out 🙂 Some of you have seen previews of it on Snapchat and my Instagram story, but now that it’s stained, it’s amazing! I am going to hang the lights and add some plants to the patio over the weekend. I also need a new grill, so if you have any recommendations, I’d love to hear them!
Another thing on the agenda today is meal prepping. I am going to the store to pick up some ingredients, so I can have some things around the house to eat. My brother is coming to town on Saturday, so things will be pretty busy. One of my favorite recipes to make for meal preps is this spinach & goat cheese egg bake! The recipe was inspired by my trip to Florida, with Kyle, to visit his mom. She made a delicious breakfast dish that had spinach, feta, eggs, and sweet potatoes!
Spinach & Goat Cheese Egg Bake with a Sweet Potato Crust
Ingredients
- 6 Large Whole Eggs
- 6 Large Egg Whites
- 2 Cups Fresh Spinach (Chopped)
- 1/2 Cup Crumbled Goat Cheese
- 1 Large Sweet Potato
- 1/2 Cup Milk (Your Choice Type)
- 1/2 Tbsp Garlic Powder
- 1/2 Tbsp Onion Powder
- 1/2 Tbsp Italian Seasoning
- 1 Tsp Black Pepper
- 1 Tbsp Olive Oil (Or Cooking Spray)
Instructions
- Heat the oven to 400 degrees
- Spray a baking dish with cooking spray, or coat it with olive oil
- Microwave sweet potato for 3-4 minutes, or until easy to cut.
- Slice sweet potatoes into circles, line the baking dish with the potatoes and bake for fifteen minutes.
- While the potatoes are roasting, add eggs, milk, and seasoning to a large mixing bowl and whisk together.
- Remove sweet potatoes from the oven. Pour the egg mixture on top of the sweet potatoes.
- Top with spinach and goat cheese. Press down on the spinach and goat cheese lightly to get a little egg on the top. Do not stir.
- Bake for 18-20 Minutes. (All ovens cook differently, so just keep an eye on the dish. It should be brown around the edges and firm in the center)
- To store, Keep in containers in the fridge!
Notes
If you want to get fancy, you can add bell peppers, bacon, or any other fun fillers!
I’ll be posting the buffalo chicken frittata next!
Questions for you!
1. What is one dish you love to meal prep?
2. Do you have any fun plans for the 4th?
3. Two ingredients you must have in your omelets?
This looks delicious – anything with spinach is always so good!

Thanks, Charmaine!
Do you usually buy fresh or frozen?
For the nutritional information, how big/ small of a piece is that for? Excited to try this for this weekend at the cabin!
It’s about 2 1/2in x 2 1/2. Just divide the bake into 12 pieces. You could also use a muffin pan!:)
Mmm I love big bakes like this. Leaves room for leftovers!
Yess!!:)
This looks so delicious. I’m a vegetarian, so this is right up my alley and I will definitely be making this! I really love to meal prep chili. I make a huge batch of black bean chili and put it over sweet potatoes. so yummy. I have no plans right now for the 4th, so we’ll see what happens! My favorite things to put in omelettes (besides eggs obviously) are tomatoes and cheese!

Thanks you!! Chili is a great meal prep. I made a vegan version on the blog years ago and it’s still one of my favorites. MMMM cheese & omelettes are the best!
I HAVE to have mushrooms and cubed ham in my omelets. I also have a certain hot sauce that I HAVE to put on it and it’s just amazing. Although I can’t make omelets so I basically just make scrambled eggs with all the fixins! My husband will be working all through the holiday (he’s a paramedic so he’s gone 48-72 hours straight when he has to work) so I’ll probably spend the 4th with my baby and my family. 🙂
EWWW I hate mushrooms lol
Kyle likes hot sauce on his eggs. I can’t do it! Awwww, at least he is out there doing a VERY important job! Have a wonderful forth with your family!!
Looks amazing! I make a version that’s sweet potato on the bottom, turkey sausage and eggs topped with Spinach. Amazing!
Yummy!! I do a quiche like that!
Do you peel the potato
Yes! I’ll add that in there! xo
I made your chicken enchilada stuffed peppers last week. They were SO good! Even my teenagers ate them!
YAY!! SO HAPPY TO HEAR THAT!!
This looks delicious – I love anything with goat cheese and sweet potato, so I definitely will be trying this out! I’m headed to see Dancing With the Stars live show this weekend as part of my 4th celebration. I hope you have a great weekend!
Thanks, Jaclyn!

PLUS i have a purple sweet potato on the counter that i have been wondering what to do with…problem solved 🙂 have you ever tried purple sweet potatoes?
Thank you! The sweet potatoes add that extra carb-energy! I haven’t! Didn’t even know it was a thing!
YUM! going to have to try this. ps i really love how you laid the recipe out on the blog, wayyy easier to follow!!
Thanks Kelly, I am going to start doing that from now on!

Ahhhh the Des Moines River! I really need to get back to Iowa soon!
This looks so delicious! I cannot wait to try it. I think bacon would be the perfect addition. and maybe even chorizo sometimes. Also I saw your patio furniture on snapchat and it looks amazing! I cannot wait to see your post to get more details.
Oh, yum! I think so too!
Thanks so much!!!
That is my kind of breakfast! I get made fun of by my friends because I put goat cheese on everything.
HAHAHAME TOO!
Love the printable addition. I printed this out and followed it from my counter!:) Very good recipe.

I love a vegetarian & gluten free recipe!
Glad you love it! xo
This looks like fluffy, delicious, YUM!
And I love that I could make it on Sunday, and then have breakfast to take with me to work for the rest of the week!
I’m adding this to my list of school year breakfasts, because my goal is to switch it up this year. I WAY over did it on green smoothies last year and I never want to put spinach and kale in a blender again haha.
It’s great for meal prep!
HAHAHAHA I go through those phases as well!
Delicious! Fits my macros.
Great!:)
This looks DELICIOUS! I think I will try to make these in mini egg cup form for easier grab and go and storage! I can’t wait to make them!
I think egg cups/muffins are actually my favorite thing to meal prep! I also love to do veggies chicken and quinoa… then I add my own sauce to change it up a bit during the week!
I’ve been making them too!!! Meal prep is so great.
Do you heat it up when you serve it as leftovers?
You can put it back in the oven to warm up!
Yum!!
